Zucchinni Boats

I'll start off by saying this is my Moms recipe (ladyluck) but I thought I'd post it while I was on here. Very Tastey!!!

Cut however many zucchini's you are going to use in half length wise. With a spoon scoop a shallow dip in the centre of each zucchini half.

Fry up some hamburger meat. You can add diced onions, mushrooms, peppers is you like, I didn't have time.

Add a generous amount of chili powder and garlic.

Add the lowest carb pasta/tomato sauce you can find. Just enough to wet the meat, dont make it too saucy. I think she used 1 cup for 1 package of hamburger meat. Handful of cheese mixed in to help it stick.

Stuff the zuchinni boats with the hamburger meat, sprinkle cheese on top (I used the pre-shredded nacho mix bag of cheese)

Bake in oven at 365 for 30-40 mins.

Sprinkle with some parm cheese if you'd like. Makes a great lunch or dinner! Leftovers good to. Made them for a family get together yesterday and everyone loved them.

I put cream and a little cheese in mine for the sauce since I don't have lc tom sauce. It was ver tasty.

Have you tried dougs Italian stew with the zucchini?YUMMERS! Your marinara's are usually the lowest.You really don't need more than a few tablespoons for this dish.Alfredo could also be used ;)

Yes they make great left overs! I'm thinking of trying the same idea but using chicken/alfredo sauce and other grilled up veggies. I'll post how it turns out once I try!
