This is NOT your mothers green bean casserole :) Sherri and I got a ton of pole beans this year so I developed this wonderful recipe. It's LOW CARB delish and savory. Hope you like it :)
Not Your Mothers Green Bean Casserole

Ingredients
2 cups green beans, cut stringed and blanched
1/3rd cup black olives drained and rinsed
1/3rd cup artichoke hearts drained and rinsed
1/2 cup Bertolli garlic Alfredo sauce
1/2 cup shredded cheddar cheese
1/3rd cup diced onion
1/2 cup ground pork rinds
1 egg beaten
salt to taste
cayenne pepper to taste
Fresh parsley and a slice of red bell pepper
1/2 stick melted butter
Fresh cracked black pepper
Directions
1- In a mixing bowl combine all the ingredients except the salt, cayenne, black pepper, parsley, butter, bell pepper and pork rinds.
2- Taste the mixture and spice to your taste
3- Melt the butter in a pie dish in the microwave
4- Swish the melted butter around the dish to fully coat then pour the remaining butter in a cup (do not discard)
5- Pour your green bean mixture into the pie plate
6- Generously coat the entire top with the pork rinds
7- Arrange the parsley and pepper garnish per the photo
8- Crack black pepper over the top to your taste
9- Bake in a preheated 350 degree oven for 30 minutes
