So, after a lot of talking with my doctor and his nurse, I've decided to go back vegan. I was vegetarian for the last 9 months because during the pregnancy I craved cheese...before that I had been vegan for almost 3 years, and before that vegetarian for 13 years. Being a vegetarian is tolling on my health and kidneys. Turns out, like tea, tofu, dairy products (milk and cheese namely) are high oxalate foods and is stressing out my kidney. When I donated my kidney I was a vegan. Tofu is also a high oxalate food...with all that at mind, this means going low carb is extremely difficult, but doable. I'll have to use every creative bone in my body to make it work LOL but I can make it work. I've been vegan two days so far and already starting to see a difference in my digestive issues and health in general. Please keep me in your prayers and I'll keep everyone updated! I've dropped a few more pounds and am down to 231 right now...can't wait to hit the 220s!!! :D

I had planned to tweak it a bit.  I'm a pretty decent cook and baker myself...I do community cooking. I cook for people in our community and it's not unusual for me to be feeding 8-12 people on any given night :) When I was baking the other cakes, I just was distracted by my child. It doesn't matter now though, because after speaking with my nurse and doctor, and because of recent digestive issues, I'm going back as a vegan again and I am SO excited! I feel SO much better as a vegan than vegetarian, so no more dairy or eggs for me ;) so I'll be tweaking the cakes to be low carb and vegan ;) it's not easy but I'm pretty darn good at it. The only thing I'm not "good" with persay, is the sugar subs like erythritol...I've not baked with it much, although when I have I find it provides enough sweetness for me :D I don't need to combine any other sweeteners, I'm just not good with converting the right amount of almond or coconut flour and the right amount of erythritol because I haven't done it a ton...that's where the weakness comes in...but it doesn't really matter a lot now because as I said being vegan again, there is no frosting that is vegan and low carb...so I'll just stick to muffins :)

WOW I didn't know all that :) I was going to omit the filling :) pudding isn't vegetarian ;) and yes because I hate cream cheese I was going to just make the cake and skip the filling! The other two I tried was Doug and umpa's chocolate cake with the chocolate cream cheese frosting...I made a different frosting, but the cake came out bitter and floury...I think I know why, the recipe called for only 1/2 tsp or tsp of sweetener...yeah not enough for me...everyone that tried it here hated it :( so I just need to add some erythritol next time. I actually had to throw the whole thing away :( the other was a recipe I got from Pinterest...it was vanilla, it called for 8 eggs and 3/4 cup of almond flour....as you can guess, it tasted like a sweet quiche :\ soooo frustrating. So I'm going to try one more cake recipe and then I'm giving up if it doesn't work right :\

Umpa, I want to try this cake, because the other two I tried are awful, the chocolate cake came out bitter and floury tasting, and another one I tried came out eggy :\ so now, because of the two nasty cakes I made, I'm low on ingredients and can't afford to get more right now, can I sub the almond flour for coconut flour? And how much would I use if I do? Also, can I sub the zero for erythritol? And if so, how much would I use? I don't have Zero and my ez sweetz is gone, and I don't have enough almond to make 2 cups, all I have is coconut flour...thanks in advance! I'm excited to try it :)

Thanks everyone :D this morning, I tried the cake again...the cake itself tastes like there's sour cream in it, but there's not :\ the frosting was still disgusting to me, after adding a buttload of other crap...so I'll have to try this one you gave TooSweet...thanks a lot :D

Soooo I haven't posted an update in a while, but I fell off for a couple days and had to get back on...but I brought a newbie with me who has lost 10.8 pounds in a week, and I've lost 12 pounds since Wednesday ;) I'm at the smallest I've been all year and before my pregnancy! I think I've recruited two more ladies too...one has bought the book, I think the other two are working on it :D So today I made Doug's chocolate cake...it came out a slight bitter to me, I think I'll have to add more sweetener next time, but overall it was good....then I made the cream cheese frosting...mind you I HATE cream cheese, it makes me sick and tastes terrible to me...yeah, it was a definite no go. I kept adding chocolate and sweetener...but it still had that cream cheese tang. BLAH if you hate cream cheese you'll know what I mean. So now I've got cake and no frosting :'( and I still have a heavy whipping cream handicap and can't seem to find the canned anywhere. Bah humbug. Will keep trying tomorrow...but anyways, the weight loss is great! Dinner tonight is Cacio e Pepe!!! In English, and low carb, that's basically spaghetti squash with butter and pepper and parmesan-asiago :) MUAH.

Hey girl, sorry to hear you are still having problems. The NSAIDs shouldn't make you swell more, quite the opposite, they should keep you from swelling. I am supposed to live on them for my swelling, but I can't because of only having one kidney, which by the way my doctor confirmed I am in some degree of kidney failure :( anyhow thanks for the update and keep posting them! If NSAIDS cause you to swell it has to be an allergic reaction because NSAID stands for Non-Steroidal Anti-Inflammatory Drugs, I'm sure you know that though, but it's used to treat inflammation. Hope all goes well girl! Oh, also, you don't have kidney problems do you? NSAIDS are killer on the kidneys.

Thank you for sharing! We are a family of 4 living off of 24K a year (I'm the only low-carber)...sigh. I'm trying to come up with yummy, low carb, vegetarian meals and it's a challenge for sure, I won't lie. I'm excited to try your blueberry muffin :) that excites me the most! Michelle...I will tag you in my album and you can see my food :) tonight I had squash and zucchini sliced with red wine vinegar, lemon juice, minced organic garlic, Promise lite butter, and Rao's Vodka sauce :) I let it sautee with a lid in the pan and then just enjoy it :) sometimes I'll have a Joseph's pita with it, now that I found them! I make stuffed pitas with baby spinach, tomatoes, olives, and thin slices of fresh cheese, sometimes Parmesan, Gruyere, Mozzarella, whatever I hanker for :P I carefully slice open the top of the Joseph's pita and stuff it! I'll use olive oil and red wine or lemon juice as a dressing. I'll tag you on my album on FB and you can see pics of my food :)

If your kidneys are in good shape, then you are probably okay to consume those friend! My kidney isn't in good shape and I eat quite a bit of spinach and they've told me that's okay because stones is not my risk. Something you can do that may help though if you are still worrysome about eating those foods is to drink 8 oz of water with a half tsp to a tsp full of baking soda :) it lowers the amount of uric acid in the urine and helps prevent and dissolve stones :)

Sorry...I never got the notification that there was a response on here...yes Tony is right, especially beans and spinach...it's a bit higher than the others like tea. When the ladies I donated for were on dialysis, those foods are strictly off limits! They now very much enjoy chocolate :D Keep us updated okay?
