Earth Balance Peanut Butter

Looking for a LC Peanut Butter that actually tasted good, I ventured to try Earth Balance (found in the Vegan/Gluten Free section of local grocery store). Kinda pricey, but well worth it.

It is Gluten and Lactose free, as well as Vegan, with only 2 Net Carbs per TBSP. It's also "Stir Free", so no nasty layer of oil on the top. It is sweetened with Agave and contains Flaxseed.

SURPRISE, SURPRISE, it is YUMMY! Even my picky 15yr old daughter and hubby love it. That alone says a lot, as they are both Comfort Food Carboholics and can discern any food that is sweetened with anything but sugar or contains anything "good for you" (as they call it)!!!

So far, we have just been enjoying it on celery as a snack, but I can't wait to bake with it!

I like the I.M healthy the best to cook with and eat. My husband doesn't like peanut butter as sweet as I do so I just add Zero to mine. He likes to mix I.M Healthy 50-50 with Smuckers all natural . You should try my peanut butter fudge recipe ;) Yummers!

I just may try the fudge recipe, as hubby doesn't really care for PB cookies too much...

Keep them in the freezer. ;) Try the snickerdoodles.(Umpadoodles) recipe is on the homepage.Whats his favorite cookie? :)

We tried the fudge on Friday. While I liked it, hubby wasn't wild about it, but he did eat 2 pieces since Friday.

He loves chocolate chip cookies, with oatmeal being second. He also loves dark chocolate and pecan pie, so I just need to find a cookie/bar/treat containing any of these tastes!

I picked up some coconut flour and am thinking of making some type of coconut bread. I could always drizzle that with a teeny bit of melted dark chocolate...
