Hmm  I suspect I was just wanting it to taste like the old version  LOL  It wasn't bad just different  :-\   I'll wait and try again down the road...seems my taste buds do some changing  :)

My fav fry coating still remains finely ground pork rinds. We made onion rings for a dinner party last week and they were delish, Here's the recipe

FAT TO SKINNY Onion Rings, serves 4

Ingredients

1 large onion sliced into 1/4 inch rings
1 teaspoon of Glucomannan Powder
2 eggs well beaten
2 cups ground pork rinds
2 cups frying oil of your choice, I prefer Peanut oil


Directions

1- In a deep skillet heat the oil to about 385 degrees
2- While the oil is heating separate the rings into 4 batches
3- Place a 1/4 teaspoon of Glucomannan In a tupperware container along with 1 batch of rings, cover and shake around to put a light coating on each ring.
4- Coat the rings with beaten egg and dredge in pork rinds
5- Fry to golden brown, repeat the same steps above for each batch

 Pancakes Downunder (had to name them something)

125g almond flour/meal (5c)
4 eggs (0.7 x 4 = 2.8)
pinch salt (0)
1/4 cup xylitol (I use powdered)  (0)
16 drops zero (0)
Total = 7.8c entire recipe

Separate eggs - yolks in one bowl with xylitol and zero, whites in another with pinch salt
Beat whites till stiff/fluffy
Beat yolks till thick (takes about 3-5 minutes)
Fold 1/3 almond meal and 1/3 whites into yolks, repeat till all blended
Pour preferred amounts into hot pan greased with butter (or oil - your preference)
Cook till done
(yum - tasted great cold with pb and jam for breakfast next morning)

Here is something fast I threw together for a snack.  I was really craving something crunchy gooey and sweet (of course) but feeling lazy so I didn't want to bake anything.   :-\  I took plain pork rinds and tossed them with melted butter (the real thing  ;D) cinnamon and a few drops of zero to taste.  Threw them in the micro just to heat for a couple of seconds.  Yummy  Reminded me of cinnamon toast   ;D 

FYI  cinnamon has trace carbs in it (just over 1/2 carb per tsp), so if you use a lot you should measure so you can count it...otherwise I count it as a 1/2 carb snack.  Of course it would also depend on your sweetener of choice and the pork rinds you use  ;) I like the Baken-ets from Frito Lay.  They have a very mild pork rindy flavor, but you could use any brand that you like  ;)

One of my all time favorite quick and easy breakfasts...

Heavy cream and cinnamon are GREAT on top of an OMM (made with 6 drops FTS Zero and 1/2 tsp cinnamon)!
It's like cinnamon bread pudding (less the raisins). Cranberries work if you like a tart zing! ;)

Had to make another pumpkin recipe. Made these today, forgot to add the FTS zeros weet, and the tops sunk in. They actually taste very good and very moist.

Pumpkin Muffins
19 net carbs for entire recipe

Blend together the dry ingredients:
2/3 cup soy protein
2 Tablespoon flax meal
1 Tablespoon baking powder
dash salt
1 Tablespoon pumpkin pie spice
1 teaspoon cinnamon
1/2 cup Xylitol
12 drops FTS ZeroSweet

Blend together wet ingredients:
1 cup canned pumpkin or pumpkin puree
3 eggs  3 net carbs
1 teaspoon vanilla
1/4 cup heavy cream
2 Tablespoons coconut oil

Mix wet and dry ingredients. Spoon into sprayed muffin cups and bake at 350 for 15-20 minutes. (15 for mini-muffins, 20 plus for full sized muffins) Sprinkle nuts on top if desired. Makes 12 regular muffins or 24 mini muffins.

Before breakfast, I went through my pantry and pulled everything out & wrote them down and the net carbs in them. Most items are from a food bank. I had to get rid of few that were too high in carbs. This made me pretty hungry, so I looked in my fridge & saw diced celery left over. It looked good so I grabbed that & decided I wanted it in some eggs. Was too hungry to add a lot of ingredients.

Here's what I made-

Leftovers Eggs

2 eggs (2 net carbs)
1/2 cup Diced veggies (mine was diced celery and diced red bell pepper 1/2 cup totaL= 1 NET CARB)
2 tbsp oil (I used extra virgin olive oil)
1/4 cup finely shredded cheese (I used sharp cheddar 1/4 cup = 1 net carb)
2 tbsp salsa (I used La Victoria Salsa 1 tbsp= 1 net carb)

I sauteed the veggies in the oil until bell pepper started to brown. scrambled eggs. Added to veggies, stirring constantly. Removed from heat, added cheese. Covered pan. After couple minutes, uncovered pan, slid eggs onto a plate then topped with Salsa. Easy peasy and filling from eggs & oil.

This is a very tasty use of leftover celery. ;)
I find the simplest dishes are often the best!
