I saw a recipe for Chili Colorado that you cook in the crockpot.  I can't find it anywhere.  Does anyone have this recipe?

CHILE COLORADO / PORK BARBEQUE


2 cans (28 oz. each) Las Palmas Red Chile Sauce

1 small can diced jalapeno peppers

1 Tbs. Cayenne Pepper

1 tsp ground peppercorns

3 lb pork roast

Mix chile sauce, peppers and spices into crock pot, add pork roast.  Cook on HIGH overnight or about 10 hours, until pork is tender enough to shred.


I love cooking in the crock pot.....dump it in and forget it.  My kind of recipe  ;D

Sounds yummy - I wonder if I can find low carb chile sauce and canned jalapeno pepper here.  Will give me something to do.  I too love my crock pot - wherever it might be.  Will have to rummage in the garage.  Probably one of those things I haven't unpacked yet.

Great recipe, just a side note the Las Palmas Red Chile Sauce is only 1 net carb per 1/4 cup!  8)

I know!!! Isn't that awesome!!  I checked before I posted the recipe just to be sure...I was so surprised.....Haha  I'm so excited about this recipe  ;D ;D

I never had chili like this before... Don't know if the family will eat it, and I don't really care.  I am going to make it for myself this weekend.

Mark I'm thinking this will present itself much like a pulled pork with a spicy sauce....I bet it is delish.   I'm thinking my cole slaw recipe will go great with this...hmmmm  http://www.fattoskinny.net/index.php?topic=4614.0 (http://www.fattoskinny.net/index.php?topic=4614.0)  It would cool the spiciness off a bit.  I suppose the carbivores could eat it on a bun  ;)

I've had something like this before but made pork tacos out of it.  You could use a slotted spoon to take the meat out of the sauce and skip the tortilla to reduce the carbs.  Make then "naked" in a bowl with your favorite toppings.

Could not find the Red Chili Sauce but have this in the crock pot for tonight with the Green Chili Enchalida sauce.  Hoping it will be like Chili Verde?  ;)

I haven't been able to find the chili sauce either  :'(  I'm thinking I will have to order it online....let us know how yours comes out Amber.....I bet it's delish  ;D

I've made this with green enchilada sauce and it is fantastic.  Works with beef, too, when rump roast (bottom round roast) is on sale.  A little sauce goes a long way, too.

It's was very good with the green chili sauce. It wasn't as spicy as I was expecting. Had black soybeans and cole slaw that TooSweet recommended. Yummy

Try this recipe ;) Hot sauce like tabasco added will give it a bite

    1 cup tomato sauce

    1/4 cup sugarfree maple syrup

    2 tablespoons vinegar

    1/4 teaspoon allspice

Thanks Umpa!!  Here is what I came up with because what I had on hand

1 can Rotel -10 net carbs for the can
 
1/4 cup sugar free maple syrup - 1 net carbs (Hungry Jack brand)

2 tablespoons vinegar

1/4 teaspoon allspice

I put all in my ninja and whizzed it up and poured it over the pork.  It's in the crock pot and the cole slaw is marinating in the fridge as we speak.   Oh man I can't wait!!   ;D ;D

The sauce tasted amazing....It had a bite to it but I'm betting the pork will calm that down.  I'll let you all know how it turns out  8)

Another good substitute for the Red Sauce, if your wanting that "Chili" flavor, is the Texas Pete Chili Sauce.  1g carb per servings.  I could eat it out of the can,lol!  Very good!  I use it in making my Low Carb Chili.  ;D
