General Discussion / Cardiologist Appointment

Husband had appointment with cardiologist yesterday.  He had a weight gain and the doctor stressed healthy eating.  The doctor said there are 3 keys to weight loss - 1. eat healthy 2. eat healthy 3. eat healthy and if we needed 4. exercise!   :) Husband had been eating FTS with me for many months and done great but we had both figured out how to maintain!   ;D Anyway the cardiologist said “veggies and meats; stay away from the glue”!  Glue being the pasta, noodle, potato, breads!  Loved it that he approved of the FTS way of life!

Dannon Light & Fit Low-Carb yogurt - I see where several here have tried this but I had never seen in our area.  Found it at Wal Mart last week and it is great.   :)

I had been looking for Cheddar Pork Rinds locally with no luck. TooSweet found this web site http://www.jitaporkrinds.com/apps/webstore/products/show/41147 . I received them yesterday and they are great.  They are in individual bags 2.5 oz great snack!

Suzlyn451 posted this thread http://www.fattoskinny.net/index.php?topic=4528.0  and mentioned the Parmesan Cheese Crisp.  They are great and make a wonderful cracker for tuna/chicken salad.  1/8 of Parmesan cheese, microwave for 45 seconds!  Store in Ziploc in fridge!

Stuffed buffalo chicken breast
I am trying these tonight (changing the Ritz crackers to pork rinds and leaving carrots out).  I get Laughing Cow recipes via email.  I love their cheese wedges! Pictures later!  http://www.skinnytaste.com/2012/07/stuffed-buffalo-chicken-breasts.html

Ingredients:
•   1/4 cup shredded cheddar
•   4 wedges light Laughing Cow blue cheese
•   1/3 cup celery stalk, minced
•   1/4 cup green onion, minced
•   1/4 cup carrot, minced (delete)
•   salt and pepper, to taste
•   5 (3 oz each) thin boneless chicken breasts cutlets
•   15 reduced fat Ritz Crackers, crushed into crumbs (crushed pork rinds)
•   1 tbsp light mayonnaise
•   6 tbsp Franks hot sauce
•   1 tbsp lemon juice
•   2 tsp light butter
•   1/2 tsp garlic powder
•   cooking spray  

Directions:
Preheat the oven to 400°F. Lightly spray a baking dish with oil.
Mix cheddar, laughing cow cheese, celery, green onion, carrot, salt and pepper in a dish.
Lay out the chicken cutlets, placing even amount of mixture in the middle and spread in the center.

In one bowl make a breading station out of crushed ritz crumbs. In another bowl combine mayonnaise, 1 tablespoon of hot sauce, and lemon juice as a dredging mixture.

Roll chicken breasts in the mayonnaise mixture, then into cracker crumbs, and put on a lightly greased pan, seam side down
Lightly spray top of chicken with cooking spray. Bake 30 minutes. While the chicken cooks, melt butter and mix with the remaining hot sauce and garlic powder. Drizzle buffalo sauce over finished chicken breast and serve.

I found this cookie recipe (can't remember the ladies name to give her credit!) when searching for my favorite sugar free chocolate chips Nevada Manna.  These cookies have the texture of a "real cookie" and have become a favorite at our house. 
Chocolate Chip Cookie
½ cup coconut oil (melt)
Ύ cup Splenda, xylitol or Zero (36 drops)
1 Tbsp Splenda brown sugar blend
1 tsp vanilla
1 egg
 ½ cup NOW almond flour
½ cup Bakesquick or Carbquik baking mix
½ tsp baking soda
Ό tsp salt
Fold in ½ cup Nevada Manna sugar free chocolate chips and ½ cup nuts (if desired)
Spoon dough on parchment lined baking sheet and bake 12-13 minutes 350 oven.  Makes about 2 doz small cookies approximately 2 carbs per cookie.

This is a recipe that Maddysmom shared with me from one of her friends  

LOW CARB MU-SHU CHICKEN



Marinade:
•   3 Tablespoons soy sauce
•   1 Tablespoon sesame oil
•   1 clove garlic, crushed
•   1 teaspoon grated fresh ginger (*)
•   1/4 teaspoon cayenne pepper
•   1/4 teaspoon hot sauce - such as Frank's hot sauce

OPTIONAL SWEET, If you want a bit of sweet with the heat add 3 drops FAT TO SKINNY Zero Sweetener

Stir-fry:
•   1 lb. chicken, cut into 1-1/2 inch strips
•   2 medium stalks celery, thinly sliced
•   3 cloves crushed garlic
•   1 Tablespoon grated fresh ginger
•   6 oz. fresh poopake or baby bella mushrooms, sliced into ½-inch strips
•   1 cup sliced green onion  - about 6 onions
•   4 cups sliced cabbage (I used pre-packaged bag slaw mix)
•   8 oz. bean sprouts
•   1 Tablespoon soy sauce
•   1 Tablespoon olive oil
•   1 Tablespoon sesame oil
Mix together marinade ingredients, add chicken and mix to coat.  Set aside while you chop veggies.

Prepare veggies, grate ginger and chop garlic and set aside.

Heat large skillet on medium-high heat with olive oil.  When the oil is hot, add the chicken and stir-fry until just cooked through (probably around 4-5 minutes).  Remove chicken from pan.

Add the sesame oil, then the celery, ginger and garlic.  Saute for 1-2 minutes.  Add the veggies in the following order, stir-frying for 2 minutes after each addition:  mushrooms, onions, cabbage and bean sprouts.  When you put in the bean sprouts - cover the pan for the last 2 minutes.

Add the soy sauce and chicken.  Toss to combine.  Cook about 1-2 minutes longer uncovered and serve immediately.

**I used prepared ginger in a tube from the grocery store and then just squirt out the amount I need.

Chocolate Chip Cheesecake Bars
Filling:
2 8 oz packages cream cheese, softened
2 eggs
½ cup sugar free chocolate chips
Ό cup erythritol + Ό teaspoon stevia extract or 13 drops of FTS ZERO
1 teaspoon vanilla + squirt of lemon juice
I made my crust from crushed Skinny Crisps Cinnamon flavor cracker and butter
Crust:
1 large egg
⅓ cup erythritol
Ό teaspoon stevia extract
Ό cup butter, softened
1 teaspoon vanilla extract
1 cup almond flour
Ύ cup ground pecans
Ό teaspoon xanthan gum
½ teaspoon cinnamon
Ό teaspoon salt

Preheat oven to 350 degrees Fahrenheit.
Mix together ingredients for the crust until dough comes together. Press crust into an 8Χ8 pan.
Beat cream cheese and sweeteners on medium speed with an electric mixer until smooth. Blend in vanilla and eggs. Stir in chocolate chips. Pour cream cheese mixture over crust.
Bake 25 to 30 minutes or until set. Cool.

Skinny Crisps - low carb gluten free cracker. Plain Jane, White Sesame, Toasty Onion, Say Cheese, Cinnamon & Brownie.  Net carb varies depending on flavor! My favorite is the Cinnamon.  www.SkinnyCrisps.com  I used the Cinnamon to make a crust for chocolate chip cheesecake!  :)

Found this on Pintrest and it is yummy and easy.   :)

Crock pot
Chicken (I used boneless chicken tenders)
1 bottle of Frank's Red Hot Wing Sauce (0 carbs!)
1 package of Ranch Dressing

Let it cook until done, pulled apart with fork and we ate wrapped in low carb tortilla with salad.  The Frank's does have a "kick" but very good.
