Title: What did you eat today?

Hi All,
I purchased the book about a month ago, but I have not yet gone full speed ahead with following it completely.
i have lost 5.5 lbs since the beginning of March and hope to lose about 40 more.My husband would like to lose about 25 lbs.
I have been eating egg beaters with onions, peppers, spinach and mushrooms most mornings, salads for lunch with chicken that I bake with salt and pepper,using oil and balsamic vinegar as the dressing for the salad.I just found the La tortilla factory tortillas, and am planning to order  gg crispbread this week. Dinners and late night snacks have been my downfall!
I was hoping that some of you would share your daily menu to help me and everyone else on here to succeed.

It is a small world! My cousin Steve, aunt Barbara's son has lost 75 pounds in the last 10 months. You mention snacks, what kind of snacks?

Baked tortilla chips, salsa, sour cream
baby carrots, hummus
chobani yogurt was a daily fav until I read your book and figured out the net carbs!

tortilla chips turn to sugar, salsa turns to sugar, humus turns to sugar, carrots turn to sugar. All your snacks are turning to sugar. Time to get back into the book. Make up some snack trays from the recipe section  ;)

Hi Joanne,

I just started the diet last week so I am real newbie at it. I too am a late night snacker.  I enjoy a snack at night so what I did was substitute my sugary snacks with peanuts. I went even further and bought a bag of raw peanuts and roast them myself. They taste amazing right out of the oven. Then I bag them up into little baggies and stick them in the pantry so it's easy to grab a bag when you feel snackish and not overindulge. I also pack them in my son's lunches instead of chips to save on his sugar intake.

 I was never really a big peanut person but I love peanut butter cookies and when they are roasting they smell just the same. Give it a try!

Breakfast -

3 eggs
2 jalapenos
4 slices of turkey bacon
2 slices of Sargento pepper jack
Glass of water

= 3 carbs

Lunch -

2 cups Spinach salad w/ broccoli
3 TBSP of Hidden Valley Ranch
Glass of water

= 3 carbs

Dinner -
Plan on having:

Tortilla wrap with
2 Nathan skinless hot dogs
2 slices Sargento pepper jack
leaf of Romaine lettuce
2 Jalapenos
1 TBSP of mustard

= 7 carbs

The Sargento and Nathan's claim 0 total carbs.
I am hoping my count of a total of 13 correct.

Yobdab, you did a good job counting the carbs, easy isn't it :) The only thing I would have done differently is wrap my dogs in romaine lettuce leaves. I like the leaves for a wrapper more than anything for dogs, burgers, sandwiches etc... The frosting on the cake is I eliminate the carbs from the tortilla as well.

This is a good menu....you're going to shrink :)

this is a piece of my bread(.22 carbs) a slice of muenster cheese and 2 slices of salami after toasting it in a toaster oven..it was very tastey!!! the salami says 1 carb for 5 slices,cheese 0 carbs>>total carbs is less than 1  !!!!!!!!!!!!!!!!!

yes beebs that all i did...i used a 5oz bag of pork rinds,ground them up in my food processor and replaced the almond meal in the recipe with that........ i used bbq flavored for a little zip. as we speak i have something in the oven in which i used regular pork rinds,and i had you in mind when i was making it....don't ask why cuz i don't know..lol i am so hoping it turns out as i envision.I'll let ya know later tonite!!!

i used the wheat gluten & yeast and got just a little bit more lift but not as much as i had hoped total carbs 3 for eggs + 2 for wheat gluten= 5 >>>> 18 slices per loaf====.357 carbs per slice!!!!
             bread is very flavorful,and taste great just toasted with nothing else on it!!!!!! :D ;D ;) ::) :-* :)

Okay Katary, I went to the store today when i dropped dougie off at  the airport and bought pork rinds.I am gonna try your recipes tommorow.Will get back to ya with a review.I make a pizza bread (with mozzerella,pepporoni,garlic and onions)so its gonna be real interesting to try your and see how similar it is. By the way you can only vote once every 24 hours on the upromise !I am off to vote again!And i want everyone else to go vote too!!!! His daughter(not the 4 legged one) is very cute!When you see the video of Katary  you will want to vote for her too!!

 :o...oh wow!!! my new fav comes in at .65 carbs per slice!!!!!!!

i am calling it bbq chicken,bacon,ranch pizza...and man was it good!!!

my wife wasnt too crazy about the pizza i made last week with the almond flour/meal>>> but she was GAGA over this one!!!!

and she ended the meal with a .58 carb cupcake..... ;)

Wasn't hungry when I first got up today so just had my cup of coffee as I got ready.
Took 2 of my daughters out for lunch at a nice restaurant.  Special of the day was buy one burger get one free for $8.99 -

I ordered my burger with onion, tomato slice, lettuce and cheese melted over the top...no bun of course.
These were not pressed burgers but homemade big burgers...NUM! Had broccoli, pea pods and green bean mixture on the side, kids ate the carrots that came with that.  I was so satisfied after that meal...wasn't hungry again til about 6.  Had leftover Macafoney and Cheese (a house favorite for all now :) and strawberries with a few toasted walnuts on the side...delish!!

Did a 3 mile Walk Away The Pounds workout with daughter #2 and now not hungry for a snack...just a tall glass of cool water...what a satisfying day!  8)  Today marks 3 weeks for me  :) Not weighing til Monday...

You are so on top of it! Well done, I'm sure you'll smile at weigh in if this has been your practice for last two weeks. In the meantime I think all 450+ forum members should rent busses and go to Katary's house for dinner!

Yesterday, I took my middle son to the doctor and then had to wait and wait and wait at SLOW-mart for his antibiotic prescription to be ready. I was planning to eat lunch at home. BUT....my 30 minute wait turned into an hour and twenty minutes, so I got hungry. My friend is the manager of the Blimpies inside the slowmart, so I asked her if I could just get the meatballs that they WOULD use for a meatball sub  instead of the sub. She did it - no problem! I put them inside my 1/2 of a low carb pita which I have been carrying in my purse for just such an occasion. It was a yummy lunch, quick, cheap, and worked great in the little emergency that I was caught in. By the way, she only charged me $1.00 for the meatballs - BONUS!!!

You gave me the idea to carry the tortillas, so I put a 1/2 pita in there, too! It's fun thinking of all the ways to be like a boy scout and "always be prepared!"

i just finished peeling,slicing and cleaning a big fat jicama...anyone that has yet to try this is missing the boat,it's wonderful...so whatever i eat the rest of the week will have some version of jicama in it!!! also the spaghetti squash..highly reccommend it,i told my mother about the meal i made the other day & she roped me into cooking them dinner, spaghetti squash/alfredo w/blackened shrimp...so i guess i'll be doing that very soon:)

I had a BAD NAD night last night. I had a really really low sugar (40's) and totally fell off the wagon because I havent had  time to keep prepared stuff in the fridge and no money to buy ANYTHING.  I had 1/2 bag of cookies 2 bowls of regular cereal with REAL milk a spoonful of Jiff(gross) 2 handfuls of buttermints...I could go on but it's making me sick just talking about it.......

 :) ;) :D ;D ::) i only made enough for 1 person..or i should say for me!!!!!!!!!!!!!!!!!

                      1/4 ground chuck(0 carbs)
                       4 slices of bacon(0 carbs)>>precooked
                      1/2 cup diced jicama(2.5 carbs)
                      handful of shredded hot pepper cheese(0 carbs)
                      olive oil(0 carbs)
                      i used salt,pepper,garlic salt,and cayenne pepper also!
pour enough olive oil to cover bottom of your pan,place diced jicama into pan and cook until browned,while cooking sprinkle with the spices,after jicama is browned,place ground chuck into pan to brown also,mixing in with jicama as you do so,then toss the bacon into the mix,breaking it into pieces as you go...once the whole thing is cooked & looks delicious,throw your handful of cheese on top to melt....then EAT!!!!!>>>>>>>>>>so 2.5 grams beebs,and i ate it all,maybe enough for 2 normal people ;D

I just fixed jicama hash browns for the first time this morning for breakfast.  I used them as a topping over a square of breakfast egg casserole that had eggs, pepper jack cheese and very lean hot pork sausage that we buy at the Farmer's Mkt.  I threw in a large handful of a variety of herbs freshly picked from my herb garden.  Can I just say "GOURMET FEAST".  I love reading what everyone else is doing.  You are all such an inspiration.  I am spending today researching and menu planning.  Goal  is to have a 4 week rotating weekly menu plan for every meal complete with grocery list to simplify my life and use time efficiently.  Once that is done, adding new recipes will be the icing on the ca, oh never mind.

I just had jicama hash browns sauteed in chorizo (chorizo was about two table spoons for flavor) two eggs soft scrambled and four slices of bacon. I over did it, I'm so full, I fill like I could pop ;D

today i feel like i went out to a great place to eat..but i didn't :D we marinated jicama in olive oil,cilantro and mesquite>>> then marinated our mouthwatering shrimp in olive oil,garlic salt and blackened seasoning :o and off to the grill i went with both.... i wish i could say i saved some for my FTS friends...but that would be a BIG FAT LIE  :'(  >>>>>> possibilities are endless here for great meals and i am completely satisfied>>>>>BuRp....lol

Please enlighten me...what is Jicama and is that diet Barqs pop...on CarbSmart Ice Cream?
That looks yummy!  I must get some sweets in this house. 4 weeks with SF jello and whipped topping or strawberries. That is all I have had for treats.  I could use something different.
Weigh in day is tomorrow! It has been 2 weeks.... 8)

yes its diet barqs and carb smart ice cream and it was yummy!!!!

jicama is a mexican potato that is as big as my head,looks like a brown pumpkin on the outside and has the consistency of an apple on the inside...it has a hint of sweetness & is very crunchy...you have to peel it before cooking or eating it,it doesnt have seeds in it,and i thought i would not like it..but i really kinda love it :)

PS its pronounced hee-cah-mah....boy did i look like an idiot asking if kroger had ja-ca-ma...lol

this was great...i got the idea from the spanakopita post in "ask umpa",doesnt have the flakiness factor,and i didnt use the onions or garlic,but the reason i made it was to see if i could make a "dough" that i could layer,and i did achieve that ::),i had a piece for lunch,yummy,but didnt want to post it till i got my wifes opinion,with her mouth full,she gave me 2 thumbs up!!!!!! i think you can use any combination of fillings that you choose!!! i used eggs,feta-provelone-cream & parmesean cheeses,spinach,mushrooms & pepperoni :D
   it came in at 1.33333 carbs per piece & for those who are not aware of it if you click on the pictures in any post,you will get a better view ;)

man i NEED to shave...lol    after our evening walk>>> i hit the freezer for a popcicle made from sugarfree jello...i even got a little crazy and dipped the stick in marshmello cream before sticking into the jello and freezing it;)

We have the same popsicle molds that you have, but we never thought about using the sugar free jello! Cool idea.... I'm hoping you'll post YOUR recipe for that Greek looking stuff soon.... hint hint...

 ;D  ok dough : 4 oz pork rinds-0 carbs(ground)
                       4 oz bbq pork rinds-0 carbs(ground)
                       4 tbsp egg whites-0 carbs
                       2 tbsp flax seed-0 carbs
                       4 tsp wheat gluten-2 carbs
                       1/2 tsp baking powder-0 carbs
                       1/2 tsp cream of tartar-0 carbs
                       1 packet of fast rise yeast- 0 carbs
                       1 1/2 cup of h2o-0 carbs
                       1/4 cup olive oil-0 carbs
mix all dry ingredients in a large mixing bowl- add h2o and mix till you get a dough consistency-cover and let stand in warm place for 10 minutes>>drizzle dough with olive oil,then divide dough into 3 equal sized balls>>>we are making 3 layers of dough for this,but you have to bake each one separately or they just fall apart>>on a greased cookie sheet spread each dough ball out into 8 by 8 square(i did this 3 times,once for each layer)and place in a pre-heated 375 degree oven for about 10 minutes per sheet,after they are done you will have 3 8 by 8 sheets of baked dough,and they will be very thin,but mine just slid right off the cookie sheet all in one piece,set aside while you prepare filling.

1st layer of filling : 5 oz baby spinach- 1 carb-? not sure of that
                            olive oil-0 carbs
                           6 oz cream cheese- 6 carbs
                           1 cup of feta cheese-0 carbs
                           1/2 cup shredded provelone-0 carbs
                           2 eggs-2 carbs
pour olive oil into saute pan on medium heat,add baby spinach and let saute till spinach is limp,mixing with olive oil as it sautes,when done remove from heat.

put cream cheese,feta cheese,provelone cheese & eggs into mixing bowl and beat with a fork until mixed together well, then add the spinach to it and continue mixing.

ok now i used a 8 by 8 baking pan,place 1 of your dough sheets in the bottom of the pan,pour in the 1st layer of filling that you just made,then place your 2nd dough sheet on top of that.

2nd layer of filling :  5 slices of provelone cheese-0 carbs
                              pepperoni>> i just used enough to cover the 8 by 8 area.- 0 carbs    4 large sliced mushrooms- 1 carb

place the 5 slices of provelone on top of the 2nd layer of dough,then spread your pepperoni on top of the cheese and then your sliced mushrooms,now place your 3rd layer of dough over the mushrooms,and tuck it in all the way around the pan,and brush the top of it with olive oil.place in 300 degree pre-heated oven for 35-40 minutes,then i sprinkled fresh grated Parmesan cheese on the top,and let sit in the oven till it melted.

sounds like alot of work but it only took me about 40 minutes to get it to the putting it in the oven stage,and it is soooo good. so i came up with 12 carbs for the whole pan/ 9 servings = 1.333 carbs per serving 8)

i didnt use ricotta cheese because i couldnt find anything with less that 6 carbs per serving,i didnt use the onions because i despise them,i didnt use the garlic because i didnt have any:(

when you are messing with the dough,make sure you put some kind of oil on your hands so the dough doesnt stick to your fingers or you will never get it spread out thin enough. :o

An Atkins bar for a snack..

A turkey burger with swiss cheese melted on top (no bun)

LOL.....doug the recipe is floating around in my head ::)....i'll have to write it down,and post it later,whenever i cook,i do most of it on the fly,just grabbing this & that,throwing it in.....tasteing it as i go,adding more if needed.....you know what i am talking about,right?? but i have a good memory,i will get it posted after we take our evening stroll in the 100 degree temps......lots of sweating ahead of me tonite,i also made a batch of the beanit butter cookies,havent tried 1 yet,but they look very......mmmmmmmmmmmm delisch!!!!!!!!!!!!!!!!

I just started the plan today, and am very excited!  Here's what I've eaten:

Breakfast - 3 HB eggs with 3 slices extra crispy cooked bacon

Snack-  2 salami sticks

Lunch - chicken salad (made with canned chicken, 1/2 baby bell pepper and mayo), 1 GG crispbread, and a small salad of lettuce, cukes and 2 Tbsp Ranch dressing

Dinner - 3 parmesan encrusted chicken strips with 1.5 oz baby bellas sauteed in garlic, crushed red pepper and fresh cracked pepper

Snack - 1 cup puerh chocolate flavored tea with a splash of heavy cream and 1 packet Sweetleaf

According to CalorieKing, I've had 23g carbs and 8g fiber, which brings my net to 15.  I absolutely loved everything I ate today and didn't feel deprived at all.  I think I'm gonna like this WOE!

Sherripie - The chicken was fantastic! Tender, juicy and so flavorful. You will absolutely love it!

PaulaChappell - I read a review of the tea on a blog. Couldn't find it locally so I got it at Amazon. It was pricey for 1 box .. about $12 but its good.

It has a subtle cocoa with a nutmeg/cinnamon-like flavor. So its not something that would be the best replacement for the taste of chocolate. My son had a cup with me and he said it reminds him of pumpkin pie.

On today's menu:

I'm back in town and Umpa just went out of town for 8 days  :'( She left me a fridge full of great stuff including banana coconut cheesecake, Carma potato salad and her dark chocolate brownies. My cousin Steve who's dropped 75 pounds in the last 6 months flew in and we're batching it. Tonight I cooked Pork Chops Marsala (recipe in book) and we had Carma potato salad on top of garden greens on the side.......guess whats for dessert at movie time  ::)  Thanks honey   :-*

Today was hectic, and I didn't plan my menu, just sorta took things as they came along.  Here is what I ate:

I am not following your carb count. Do you mean that in the whole day's menu, you only had 5 grams of fiber? I figure out the net carbs of each food item for my day and then add the net carbs for the day. It's easier for me to figure it out that way.

Owensmath - I log my menu's into Calorie King and let it do the figuring for me.

I was busy again today and didn't get to slow down to eat anything until late morning.  The kids and I stopped into McDonald's and I had 2 double cheeseburgers, without the bun and ketchup.  Not sure exactly how many carbs that ended up being considering I did not have ketchup, but according to what I could find on the internet, 1 burger is 6gm carbs and 1g fiber.

Late Breakfast/Early Lunch - 2 double cheeseburgers

Snack - 2 Claussen pickles

Early Dinner - pork chop and turnip greens

Total for the day: 29gm carbs - 14gm fiber =  15 net carbs!

Beebs - one burger without the bun is suposedly 5 net carbs

Cyndi - the only carb count I could find for the burger without bun included ketchup so I'm sure that's where most of the carbs come from in the count. I did not have ketchup and I don't know how much is normally used so I just went with that amount.

The burgers are far less than 5 carbs each, 0 for the meat, 0 for the cheese, 1/2 for the lettuce, 1 for the onion, 1 for a big slice of tomato....maybe 2.5 in total each.

You guys are probably right about the burger.  About the cheese, I was reading on another forum today from a woman whose boyfriend works for McD's and he told her that the cheese has 2 carbs per slice!  I wish they had a nutritional menu or database that listed each component to a sandwich.  That would be awesome.

Well here is an awkward situation. My husband was the guest speaker today at a national marriage conference in Gatlinburg, TN. Everyone has been very kind and genuine. When they told me that lunch was a potato bar, I nearly fell on the floor. I politely said, "I'm sorry, but I can't have that." They had to ask the chef to make me a salad. I felt special until I looked at the pack of salad dressing they gave me. It had 10 carbs per serving!!!!!!!!!!!!!! I ate a couple bites of lettuce and cucumber that didn't have much dressing on it. After lunch, I excused myself and stopped by our lodge room and grabbed an Atkins bar (3 net carbs). That is another reason to be prepared. You just never know. There were other diabetics here and the lady in charge said, "Well, one diabetic said he would just eat the chilli (for topping) by itself." I replied, "I'm sorry, but there are way too many carbs in the tomato sauce and beans in that for me."  Dang, people just don't know the truth yet, do they?

tonite we grilled a couple of ribeyes:) sauted some mushrooms & made some jicama fries:) after much thought i have decided that jicama is my favorite of all the new foods that i have tried in the past few months... oh and i cant tell the difference between ketchup & the sugarfree version ..... they taste the same:)

then and egg in the center...ggbrand crisp bread w/ cream cheese and couple a strawberries~~yummers! :D
...now i am thinking of what to eat for dinner......
think I will go for a quick salad w/ some crushed pork rind coated chicken tenders fried in peanut oil...yeah, sounds good~ ;)

yep gary, I tossed it around in the hot grape-seed oil a few times with the onions until browning, then added the toms...after a couple minutes of letting it sit while frying, then I made a center for the egg, let it fry a bit, then covered the pan and shut the heat.....it got the perfect crispiness on the bottom like when you fry an egg and the tenderness was pleasing, not mushy~~ it slid nicely onto the dish...
 I also forgot to mention I sprinkled mrs. dash table blend seasoning and a few sprinkles of cayenne pepper ;D! mm mm good~

We went to Red Lobster tonight and I ordered the broiled seafood platter (shrimp, scallops, flounder). When our server said, "You're not eating bread? It's so delicious!" and then he went on with his cajoling...I put a stop to it by telling him that he didn't have any bread in the restaurant that could taste as good as losing 25 pounds feels. I told him his bread was not even the slightest bit tempting to me. And, truthfully, it wasn't! After we left, I told my husband that I think that was the first time that I didn't have any of Red Lobster's tartar sauce on a visit there. I didn't even miss it. How cool!!! Oh, I had steamed broccoli and a side salad with my broiled seafood.

Went to Chili's for lunch yesterday and had a house salad without croutons(and they actually brought it without the croutons), and a burger with mustard.  Boy, did the waitress' eyes get big when she saw the big pile of poison I left on my plate that they were NOT supposed to bring (french fries and bun). I love the feeling of going out to eat and being satisfied but not feeling bloated and disgusting when you leave.

make sure you boil the jicama for at least 30 minutes to get it to soften up.

yup i boiled them for about 20-25 minutes in salt water,then i just deep fried them in canola oil:) salted to taste & covered them with cheese (mozzarella) and put them in the oven till the cheese melted:)

ps..... make sure that you keep them in the fryer long enough to get crispy:)

oh this is sooooo simple that even the beebenwacker can make it:)
          4 ingredients : 1 cup shelled sunflower seeds
                                1/2 cup Parmesan cheese
                                1/4 cup h2o
                                sprinkle garlic salt
***** the sunflower seeds i found are 1 net carb per 1/4 cup and that's all the carbs in this 4 total carbs**************************

put the sunflower seeds and the Parmesan cheese into your "grindy thingy" some people call them food processors? until they become "flourlike" then add the water and pulse the processor till the mixture becomes dough like:)

preheat oven to 325******* line a cookie sheet with parchment paper>> put the dough mixture on the paper & place another piece of parchment paper on top of the dough,pressing down with your hands & spreading the dough to a very,very thin layer ( just make sure you don't have any holes in the dough)remove the top piece of parchment,sprinkle with garlic salt,and with a pizza cutter,score the dough into squares>> and into the oven for 30 minutes>>> then its done>> break the crackers apart and see if you can eat just one:)

PS you can use different cheese for the same results but different flavor,same with spices instead of the garlic salt:)

Had a wonderfull lunch with the leftover food from the Mexican Fiesta!

Mixed the enchilada filling with the rest of the beans (black soy) and heated it all up in the microwave....made a nice green salad, put a little ranch dressing on the greens then a handful of pork rinds then the hot meat and bean mixture then some grated Jarlsberg cheese which melted nicely :) ABSOLUTLY delish and filling...nil for carb count :) The rinds get soft pretty quick so eat the ones in the salad first then have a few "scooper's" on the side!

Just had a Stir Fry....Aspargus, Brocolli, red & green peppers, red onion, chicken, sesame seeds, ginger and finally found the soy noodles..(sorry Doug cant remember the name just took the trash out..lol)...LOVED IT!!!....Made a batch so have about 3 more servings in the fridge... ;D

Hi Katary,
This looks amazing, in fact all of your dishes look really good. I was wondering if you thought this could be made with almond meal instead of the pork rinds? Or if not almond meal, could you recommend something non-animal based? Did the crusts stay crispy after the final bake? I have another L/C spanakopita recipe that uses egg as the "crust" and a few different spices (dill, mint) yet your recipe looks amazing.  Thanks :)

Does Calorie King add things properly? As in subtotaling carbs and net carbs individually for each item consumed, or does it do it so that you could eat 50 carbs all day, no fiber, then at the end of the day have a health bar with 50 grams of fiber and then call it 0 net carbs for the day (which of course would be inaccurate)? I’m just wondering how it works, and if it’s worth it. It seems easy to count net carbs, so why pay a website to do it? Am I missing something?
