For dinner tonight I made

Chicken Wings with White BBQ sauce (Yummy)
Baked 'Potato' Cauliflower Mash

I am eating this even as I type and liking my lips.


White BBQ sauce was a 'Down Home With the Neely's' Recipe

1/2 cup mayo (0 carb)
1/2 tsp salt, pepper, garlic powder, onion powder each (0 carb)
1/8 tsp cayenne, paprika each (0 carb)


Blend together and refrigerate for 2 hours (sucks I know)

I cooked four whole wings (0 carb) in a toaster oven at 400 degrees for 30 - 40 mins. Baste wings after the 30 mins for an additional 90 mins ( I like my chicken done-done). I flipped the wings a total of 3 times and basted a total of 3 times.


Baked 'Potato' Cauliflower Mash
Microwaved 1 1/2 cups of frozen cauliflower (6 carbs per my bag) for 5 mins with chive, garlic power and a quick splash of cream.

Put microwave cauliflower in a food processor with 1 1/2 TBS of mayo (0 carb) salt & pepper pinches and 1 TBS LOL Butter and Olive Oil Spread (0 carb).  Slice of American Cheese (< 1 carb). Blitz it to death in the processor. Put it in a bake proof ramekin and bake until golden crispy on top.

I have got to go finish this delicious meal.

Forgot to mention. Save some sauce for dipping BEFORE you baste with is.

How could I forget to mention the BACON in the cauliflower.  I used the Real Bacon Bits about 1 TBS.

But instead of regular paprika, I used smoked paprika.

It gave the sauce a "smoky" taste like you'd expect at a BBQ.

Thanks mouseissue I will try that next time.  I used  Hungarian.  I also have a Spanish (http://www.shop.fattoskinny.com/product.sc?productId=9&categoryId=1) style.

Just curious on the time and temp for the white BBQ chicken.
400 degrees for 30 minutes, baste with white sauce, then cook an additional 90 minutes???  :o
I cook smothered breasts at 375 for 30 minutes...I can't think little old wings could survive at 400 for all that time?  
I just don't want to go to all the trouble and end up with crispy garbage...?

fresh or frozen.Once they are browned an extra 10 minutes with sauce is plenty. ;)

jbonaiuto  I like my wings very very crispy.  Cook time is to your liking as long as they are done.  I do not like fat on my wings.  I like the fat carmalized.
