Cauliflower (“mashed”) potatoes Prepare “mashed potatoes” by steaming a head of cauliflower in a couple of inches of water until fork tender. Drain cauliflower and place into food processor with a chopping blade. Add two tablespoons of your favorite mayonnaise, one tablespoon of Benacol spread or butter, and salt & pepper.
