Taco Bake YUMMY : )
« on: June 22, 2011, 05:09:34 PM »
Crust:
4 ounces cream cheese, softened
3 eggs
1/3 cup heavy cream
1 teaspoon chili powder
3/4 teaspoon paprika
3/4 teaspoon cumin
1/2 teaspoon onion powder
1/2 teaspoon salt
3/8 teaspoon garlic powder
Pinch cayenne
8 ounces cheddar cheese, shredded, 2 cups

Beat the cream cheese and eggs until smooth. Add the cream and seasoning. Grease a 9 x 13" baking dish; spread the cheese over the bottom. Pour in the egg mixture as evenly as possible. Bake at 375º, 25-30 minutes. Let stand 5 minutes before adding the topping.

Topping:
1 pound ground beef
1/4 cup tomato sauce /Pizza sauce (This is what I used )3carbs per 1/4 cup same as tomatoe sauce
4 ounce can chopped green chiles
8 ounces cheddar cheese, shredded, 2 cups

Brown the hamburger; drain the fat. Stir in the tomato sauce and chiles. Spread over the crust. Top with the cheese. Reduce the oven to 350º and bake another 15-20 minutes or so until hot and bubbly. Serve with the toppings of your choice (add additional carbs).

Makes 8- servings at 2.6 each I counted mine as 3 . I then added a little lettuce ,sour cream and dripple of taco sauce this is a keeper for sure . I found this on a low carb site I think Lindas was the name of it. Yall will like this

Jo those are cuban beans. For refried beans just take your soy beans(toosweet these are on sale at food lion for 99 cents  a can),drain them put them in the frying pan with 1/4 cup onion and cook them down until soft. You can also add alittle bacon grease.Take them out of the pan and cool.Put them in a food processor with a little cream and butter(omit butter if you use bacon grease.)And process until smooth :)

I was going to make your hamburger casserole tonight Jo but I think I may go Mexican instead.  I think my whole family will enjoy this one.  Your recipes are great!  Thanks. :)
