1 1/2 cups unsweetened flaked coconut
3 tablespoons butter
3 (8 ounce) packages 1/3 less fat Philadelphia brand cream cheese
48 drops FAT TO SKINNY Zero Sweetener
3 large eggs, at room temperature
2 teaspoons vanilla extract
1/4 cup heavy cream
1/4 cup sour cream
Crust:
1. Adjust oven rack to middle position and preheat oven to 325 degrees F (165 degrees C)
1. Mix coconut and butter or margarine together. Grease pie pan (I used baking Pam). Press mixture into an 8 or 9 inch pie pan.
2. Bake for 10-15 minutes, or until golden.
Filling:
1. Set pie pan in a roasting pan large enough to hold it and set aside.
2. Beat cream cheese and sweetener with an electric mixer until smooth. Scrape down bowl sides and beat again until smooth. Add eggs, one at a time, scraping down bowl after each addition to ensure a creamy batter. Slowly beat in vanilla, then cream and sour cream. (Meanwhile, bring tea kettle of water to a boil, then turn off heat.)
3. Pour batter into prepared pan. Set the roasting pan on oven rack and pour in enough boiling water to come halfway up the side of the pie pan. Bake until cake perimeter is set but center still jiggles, about 40 minutes. Turn off heat and leave oven door ajar; let cheesecake sit in oven so the residual heat continues to cook it, about 30 minutes.
4. Remove pan from water; set on a wire rack. Let cool to room temperature. Cover and refrigerate until well-chilled, about 3 hours (can be refrigerated up to 4 days).
5. Slice into 8 pieces. Top with whipped cream and enjoy!

Beautiful Recipe! My son is very lucky to have you! ;)
-
I am definitely going to try this one! Am I reading it correctly? The coconut gets baked as a crust? What a great idea! I could still add my key lime flavoring to the cheesecake too! oh mannnnnnnnnnnnnnnnnnnnnnnnnnnnn
-
If i have the right pans i am making this today! ;D
-

Beebs wants cheesecakes....... :'(
-
Cheesecakes are the easiest desserts to make beebs ;)
-
Not when you're a beeble....... :'(
-
Yeah the coconut crust is awesome and can be used with any pies as long as you cook it long enough. If it is still white after you bake it then the coconut will be chewy.
I promise to cook for you the next time I'm there Doug!
-
Be careful what you promise he has a memory like an elephant! :D
Besides i like to spoil you! ;)
-
I made this today for my family. I have two kids that are very hard to please in the food department but they absolutely loved this! It is an ingenious recipe, looks as terrific as it tastes and I thank you for it.

What is the carb count per slice?
Anyone?
-
Where do you find unsweetened coconut? I haven't been able to find it in any of my grocery stores, not even frozen.
-
health food stores
-
I found unsweetened coconut at the health food store in town and also at Whole Foods. I used liquid stevia instead of xylitol but no other substitutions from the recipe and when I added it all up, I got 3570 calories and 42.6 carbs, divide that by 8 slices and you have 446 per slice and 5.3 carbs.
-
OMG lucky we aren't counting calories eh?
Linda
-
yes I'd say so....and i dont think I'd be willing to commit over 5 carbs for a slice of cheesecake either:( most days i dont think i even use 5 carbs:)
-
I was thinking the same Gary, I can do without sweets anyway, and would rather use the carbs for protein and vegies, but everyone is different I guess.
I can't believe you only use 5 for the day!!!!!!!!!!!!!!!!!!!

Gary
can you please give us all some examples of what you eat in a typical day?
Thanks
-
katary What is your typical breakfast lunch & supper ? To be able to stay under 5 carbs a day , thanks new here just trying to get ideas .
-
OK 1st off i dont subscribe to the breakfast, lunch, dinner thing:) i only eat when i am hungry:) today i just had coffee(i am arguing Doug's 1 carb per cup) then i worked out for 1 1/2 hrs on the boflex, walked for a bit, and for "lunch" i had some salami & cheese roll-ups:) and we are headed out for a nite on the town, which i anticipate will lead to a salad topped with blackened chicken:) i just am so into FTS that i consider a challenge from the time i get up,till the time i go to bed, i refuse to be defeated in my quest for good health:) and i will never let sugar back into my life....... i have noticed that FAT people keep trying to get me to "cheat" but i am never going to let that happen!!!!!!!!! i am forever committed to this:)
-
I see you are almost at your goal so you are doing something right . Congrats !
-
Gary you should be so proud of your achievements.
I had my first challenge last night as it was my stepdaughter's birthday and we went out for supper.
I chose a salmon fillet and a caesar salad with no croutons. A couple of weeks ago, I would have thought it would not have filled me up, but it did, absolutely.
I feel I have conquered another obstacle, eating out!
Yay me!

Oceanblue walk away from calorie counts they will only confuse you.Stay under 20 carbs a day and you will do great! This recipe is meant as a treat when you have the extra carbs to spend.Cheesecakes are great to make , slice and freeze. That way when you want it you have it.There are other cheesecakes on the recipe board that may be more to your liking. ;)
-
I simply was responding to the question asked as to how many carbs were in it. I should not have posted the calories. Mea Culpa
-
Oceanblue you do just fine! ;)
