Desserts and Sweets / FOURTH OF JULY CHOCOLATE ICE CREAM!!!!

Chocolate Ice Cream *Ice Cream Maker Needed*

Ingredients

1 ½ cups  unsweetened vanilla almond milk
2/3 cup xylitol
4 squares unsweetened bakers chocolate
3 cups heavy whipping cream
2 teaspoons vanilla extract


Chop or grate bakers chocolate in food processor.
Add xylitol to food processor with chocolate. Mix well.
Put almond milk in a microwave safe container uncovered in microwave for 4 minutes until hot.(*has to be hot enough to melt chocolate.)
Turn on food processor with chocolate and xylitol and slowly pour in hot almond milk. Blend until chocolate and xylitol is melted.
Pour in medium size bowl and let cool completely.
Once cool pour in heavy whipping cream and vanilla and chill 2 hours.
Once chilled pour in ice cream maker and  process.
HAPPY FOURTH OF JULY!!

This time of year at the stores(dollar tree,target,kmart,walmart,etc) they have popscicle tray forms.They are about $1 and make 4.
Have your kids pick their favorite sugar free soda and fill them up and freeze them.Kids of all ages love these!
My grandson was just here and he is one so he was teething so these really helped!
Also in the stores is sugar free snowcone flavor syrups.they are wonderful and 0 carb!You don't need a snowcone machine just crushed ice.i bought strawberry,watermelon, pina colada,and cherry.(Don't store them in a sunny window though or they lose the color.) Great summertime treats kids can make themselves 0 sugar and 0 carb! ;D

These are sooooo good :)

Low Carb Fried Green Tomatoes



2 large firm green tomatoes
2 eggs
1 cup ground pork rind flour
1/4 cup crisco or peanut oil

sour cream mixed with chopped chives for a dip  


Slice tomatoes to quarter inch slices.
Beat eggs in bowl.
Dip tomato slices in egg, then in flour set on platter, continue till all coated.
Melt 1/4 cup crisco in frypan (yes crisco I am from south carolina)
place tomatoes in pan and fry till light brown and crisp.
drain on paper towels.

Serve

Beanit Butter Cookies
Ingredients

2 cups Beanit Butter (Your peanut butter)
  1 cup xylitol
2 eggs
2 teaspoons baking powder

Preheat oven to 350.
Beat eggs in a medium size bowl.
Add xylitol to eggs. Mix well.
Add Beanit butter and baking powder. Mix until all ingredients combined well.
Grease cookie sheet.
Roll dough into balls and place on cookie sheet.
Flatten balls twice with fork.(crisscross)
Cook for 8 minutes. Cool on rack. Refriderate to firm after they cool.Store in Fridge.

Carbohydrate count is: 2 carbohydrates for ENTIRE RECIPE!

This is a wonderful side dish for many meals. BBQ compliments this recipe wonderfully!  


Low Carb Wasabi Cole Slaw!



INGREDIENTS

1 ½ cups  shredded Green cabbage
1  cup  Purple cabbage
½ cup finely julienned Jicama
1 tablespoon Wasabi mustard (mixed from powder or in tube)
3 tablespoons Kraft Green Goddess Dressing
1 tablespoon Sour cream
1 tablespoon Mayonnaise
3 drops FAT TO SKINNY Zero Sweetener
1 tablespoon mixed black and white sesame seeds

Slice ½ green cabbage and ¼ red cabbage into thin slices. Rough chop and place in mixing bowl.  Peel and slice ½ medium jicama into thin slices, then julienne and rough chop, place in mixing bowl. Salt and pepper vegetables. In a separate bowl, mix one tablespoon wasabi mustard (mixed from powder or in tube), three tablespoons Kraft Green Goddess dressing, one tablespoon sour cream, one tablespoon mayonnaise, and sweetener. Add dressing to cabbage and jicama and mix well, sprinkle the sesame seeds on top let stand.
Let chill.

This is an excellent recipe.Everyone that comes to dinner at my house requests this recipe! ;)

Cinnamon Coffee Cake Swirls


Ingredients
1 cup soy protein powder
1 ½ cups hazelnut flour
1 1/2  cups almond flour
¼ cup Crisco
¾ cup of water
1 teaspoon salt
8 tablespoons of xylitol
3 eggs
1 package yeast(1/4 hot water to dissolve yeast in)
For cutting board
*1/8 cup almond flour mixed with 1/8 cup protein powder to roll out dough on cutting board
Wax paper
1 egg

Filling
¼ cup butter softened
3 tablespoons of cinnamon
3 tablespoons xylitol


Preheat oven to 350.
Grease cookie sheet.
Dissolve yeast in ¼ cup hot water (110 degrees)
Melt Crisco in a measuring cup.
Add 8 tablespoons of   xylitol and salt to measuring cup with Crisco.
In a medium size bowl put soy protein powder, hazelnut flour, and almond flour. Add ingredients in measuring cup(Crisco, xylitol and salt) to flours.
Beat 3 eggs and add to flour mixture.
Add ¾ cup water to mixture and mix well.
Once yeast is foamy add to bowl. Mix well.

Mix 1/8 cup of almond flour and 1/8 cup protein powder. Put wax paper on cutting board. Spread out flours on wax paper on large cutting board.
Take dough ball out of bowl and place on board.
Cover in flour and roll out   to ¼ inch thick with rolling pin.
Mix filling ingredients (butter, cinnamon ,and xylitol)and spread out over dough. See picture.
Now take edge of waxpaper and roll dough on to itself  into a jellyroll.
Cover with one beaten egg and sprinkle with cinnamon .Slice into one inch slices and place on cookie sheet.
Bake at 375 degrees for 20 minutes. Cool. Store in refrigerator in Tupperware.

Carbohydrate Count: 1.5 per serving(20 servings) (30 carbohydrates for total recipe )

FAT TO SKINNY Low Carb potato salad, no potatoes required! Surprise!



Jicama Potato Salad( this was only 4 servings because i didnt know if we would like it,BUT WE LOVED IT)
1 1/2 cups Jicama
1/4 cup chopped onion
1/4 cup chopped celery
2 boiled eggs chopped
3 large tablespoons mayo
couple squirts of yellow mustard
salt and pepper to taste
CARB COUNT 11 1/2 ENTIRE RECIPE(2.87 PER SERVING)

Peel Jicama and cut into 1/2 inch cubes.Put in frying pan with 1/2 cup of water and cook until water burns out, now here is the trick, have a kettle or pot with boiling water in it to add keep adding it and cooking it out till jicama gets soft.Remove from heat ( or have a grown up do it beebs)Rinse with cold water and pat dry.Pour it in a bowl add rest of ingrediants to bowl and stir well.Refriderate.Then enjoy!



***For Cauliflower Potato Salad***6 SERVINGS



One Head cauliflower
1/2 cup chopped onions
1/2 cup  chopped celery
4 boiled eggs chopped
6 tablespoons mayo(or to taste)
3 squirts mustard(or to taste)
salt and pepper
CARB COUNT 16.5 ENTIRE RECIPE(2.75 CARBS PER SERVING)
Break up  one head of cauliflower into bitesize pieces Steam cauliflower for 9 minutes.Rinse with cold water.Pat dry.put in bowl.Add rest of ingrediants .***GENTLY*** mix well.Refridgerate. Enjoy!

Product Reviews / DIXIE DINER BISTRO BREADS

I have to admit I was very skeptical when I saw these breads come out. Several other bread companies have sent us samples of their low carb breads and in every case they have not been able to account for their net carbs. Usually all it takes is a look at the ingredient list and you know its untrue. At Fat to Skinny we are very particular about recommending products because not only do we work with type2 diabetics we also work with type 1 diabetics. The problem with alot of these companies that they don't understand, is when products are mislabeled a person that is a type 1 diabetic is not able to take the correct amount of insulin and that can cause problems. Below is my review for Bistro Breads by Dixie Diner.

I was contacted by a couple of ladies here on the forum asking me about these breads.So Doug called Dixie Diner and had some samples sent over. I have to admit i was VERY SKEPTICAL! They arrived and the first thing I noticed was the smell when I opened the box.It smelled so good.We are in the Florida Keys were it is very hot so i was shocked they were not moldy because i knew there were no preservatives. I also noticed how heavy they were.
I immediately put them in the fridge per instructions.The first bread i tried was the Flax and Millet.(one net carb per serving)It had a very nice taste.Very sweet.

The second bread I tried was the old fashioned white bread this was also very good.(2 net carbs per serving)I toasted a piece and it reminded me of homemade bread.

The third and my absolute favorite is the RYE bread.(2 net carbs per serving)i also toasted this bread and the smell and consistency reminded me of my homemade rye bread, very fragrant! It made me want a corned beef sandwich!(after i write this review i am going to the grocery store for the corned beef)
I think all 3 of these breads will be a nice addition to your Fat to Skinny Plan. I think however next time I order these breads i will slice them when they arrive and freeze them in their bags and take them out when I need them, they are very filling. That way you also have a consistant carb count because you are not picking on them throughout the day.I also think for you readers that don't want to bake bread or don't have the time, this is a good solution.Very Good Product!

Snicker doodles Cookies( Umpadoodles)
Preheat oven to 350.
Ingredients
1 cup xylitol + 3 tablespoons for topping
½ cup soft butter
2 eggs
1 ¼ cups soy flour
1 ½ cups almond flour
2 teaspoons cream of tartar
2 teaspoons baking powder
¼ teaspoon salt
3 teaspoons cinnamon

In first bowl. Mix 1 cup xylitol, 1/2  cup soft butter, and 2 eggs.

In a separate bowl mix 1 1/4 cup soy  flour, 1 ½ cups almond flour,2 teaspoons cream of tartar,  2 teaspoons of baking powder, and ¼ teaspoon salt. Once mixed add to butter mixture in first bowl. Mix well until dough consistency is reached.

 Chill dough and a cookie sheet in fridge for 45 minutes.

In a bowl mix 3 tablespoons of xylitol with 3 teaspoons of cinnamon.

Take cookie dough and make 1 inch balls. Roll them in the cinnamon mixture and put on chilled cookie sheet 1 ½ inches apart. (leave room because they spread)

Bake for 13 minutes .Cool on racks. Makes 37  cookies.

*Carb count is 1.08 carbs per cookie*

Breads and Crackers / ROSEMARY BREAD!!!!!!

Rosemary bread
4 eggs- (4 carbs)
1 ½  cups almond flour- (16 carbs)
1 head smoked or roasted garlic, (optional) ( 2 carbs)
2 tsp baking powder
2 tablespoons fresh rosemary( dried ok)
 1/2 cup Parmesan cheese
Beat eggs.add almond flour. chop garlic ,add to mix.chop rosemary in food processor. Add to mix add rest of ingredients and pour into a well greased loaf pan and bake 350 in preheated oven for 35 minutes.

22 carbs including garlic for the entire loaf! Individual slice sizes will determine carbs per serving

These are a great product! I went to Atkins.com and checked the nutritional information and they are only two carbs each.I have not posted a chocolate cake recipe yet.I have posted a coconut cake.If you like I can post a chocolate cheesecake or chocolate cake this week ,YOU CHOOSE??? ::)

Line a mini muffin pan with mini muffin liners.Melt 4 squares of unsweetened bakers chocolate ( *this is beebs idea*)in a double boiler.add 3/4 cup xylitol.mix well.add 1/2 cup heavy whipping cream. mix well.fill liners 1/3 full add 1/2 teaspoon peanut butter to each one.Then top with chocolate.add peanuts on top. Refridgerate 2 hours.
