Sides and Snacks / Baked Brie on Apple Slices

Baked Brie on Apple slices

INGREDIENTS
Sliced apples
Brie cheese

This is one of the few times I’ll use apples in a recipe; however, you can control the portions very easily. Choose a nice crisp apple like a Rome, Mac or a Granny Smith, and cut the slices very thin. Cut a big X in the top of a 4 oz wheel of brie cheese and place into a buttered baking dish. Bake in 350-degree oven until brown and bubbly, around six minutes. Serve on dinner plate surrounded with apple slices. Limit yourself to 1/4 apple (4 carbs
***Brie is also very good on strawberries ,gg brancrisp, toasted tortillas, jicama celery,or anything (low sugar)you like to dip into cheesedip! The strawberries are my favorite! ;D

Maple Sausage Egg Muffins

INGREDIENTS
Raw Breakfast Sausage
2 Whole Eggs
4 Egg Whites
2 teaspoons Rubbed Sage
4 packages of  Stevia or splenda
1 teaspoon sugar free Maple Extract
1 teaspoon sugar free Vanilla Extract
12  one inch cubes  Sharp Cheddar Cheese
Sea Salt
Cracked Pepper
Paprika

Pre heat oven to 400 degrees. Spray a 12 count muffin pan with non stick cooking spray. In a medium bowl whisk together 2 whole eggs, 4 egg whites, 2tsp rubbed sage, 2tsp Stevia Blend bake-able, 1tsp vanilla extract, 1tsp maple extract, some fresh cracked black pepper, a pinch of sea salt and set aside. Spoon out heaping tablespoons of raw breakfast sausage into the bottom of each muffin hole and press down to make a nice crust. Cut up cheese into twelve one inch cubes. Place a cube in the center of each muffin hole. Ladle the egg mixture equally into muffin holes and bake for 20 minutes. Dust with Paprika
TIP –This muffin browns slightly and has a nice bread-like consistency. The eggs aren’t as dense because of the higher egg white count. The sweetness and extracts make it taste like a maple syrup sausage egg and cheese biscuit. They freeze great too!

Sides and Snacks / My favorite soup french onion
« on: July 08, 2010, 10:04:15 AM »

INGREDIENTS
Beef bouillon
Worcestershire sauce
Sweet onions
Butter
Slices of Swiss cheese (long slices)

Figure ½ large onion per person. Slice your nice sweet onions into ¼ inch slices then cut them in half. Melt a quarter stick of butter in medium size saucepan over medium high heat and sauté your onions until they begin to caramelize. The process of caramelizing is simply bringing out the natural sugars in the onions. They will be wilted and a nice brown color. Now pour in enough beef bouillon to fill each of your crocks ¾ full. Avoid the little cubes, they are full of salt and not very flavorful. You can buy higher quality products including bouillon in a carton. Add one tablespoon of Worcestershire sauce per serving, taste for necessary salt and pepper and bring to a boil. Remove from heat.

Using a ladle place equal amounts of broth into each crock.  Reserve the onion distribution until last. Once your broth is distributed ladle equal amounts of onions into each crock.

Using a stick of butter grease the inside lip and outside lip of your crocks to make for easy cleaning. Lay two pieces of Swiss cheese over the top of your crock in a cross + and place on a cookie sheet in your oven on a high rack. Turn your broiler on and melt your cheese. Remove immediately from the oven and serve.
