Hi Gang! :)
Here's a great Shrimp Scampi recipe that I modified from its original to be low carb and really good!
The entire recipe has 3 net grams carbs! ;D
Ingredients:
1 lb raw shrimp, peeled and deveined
3/4 cup white wine
1/8 cup light olive oil
1/4 cup unsalted butter
3 tablespoons minced garlic (3g)
1/4 teaspoon paprika
1/2 tablespoon parsley flakes
1/8 tsp Guar Gum (or favorite thickener)
grated Parmesan cheese, for garnish
Directions:
1) Heat wine, olive oil, butter, and garlic in a large skillet on medium heat until it just starts to boil.
2) Add guar gum and stir gently until completely dissolved and sauces just starts to thicken after a few minutes.
By now the alcohol in the wine has evaporated with the carbs in it.
3) Add paprika and parsley flakes, stir in and immediately add shrimp.
4) Cook for about 4 or 5 minutes or until shrimp turns pink. Don't overcook!
5) Spoon shrimp onto plate with some of the cooking sauce and top liberally with Parmesan cheese.
Serve over tofu or konjac root shiratake noodles, if desired.

Although the recipe is very good, my spelling of it for this topic was not so good.
"Sampi" should be "Scampi"

Those will be alright after I pass 80 years old.
A couple of years ago, making 80 did not seem likely.
But thanks to FTS, I see making at least 90! ;D ;D ;D
