Hi, I'm totally new here and am reading the book as fast as I can... In the meantime, I wondered if anyone has some breakfast ideas that you don't have to cook but are basic and simple. My husband has been making me eggs and bacon all week since I got out of the hospital, but he'll be going back to work on Monday and I need to fix things that require very little effort since I'm still really tired and weak...

Hi Jacki, welcome to the family :) This can be very simple. Start with a dozen eggs hard boiled and left in the fridge. Have the deli slice off a couple 1/2 inch thick slabs of ham and cut them into fingers. Pick up strawberries and heavy whipping cream for a nice fruit cup coated in cream. Buy some "Smaps" cereal made from soy and some unsweetened almond milk...very filling cereal- http://www26.netrition.com/cgi/advanced_search.cgi (http://www26.netrition.com/cgi/advanced_search.cgi)
Have hubby cook you off a pile of these pancakes, they can stay in the fridge for a week and heat up quickly in the toaster oven;
Ingredients
2 cups Golden Flaxseed flour
2 eggs (2 net carbs)
24 drops FAT TO SKINNY Zero Sweetener
¼ cup heavy whipping cream
2 tablespoons of vanilla
2 teaspoons Baking powder
½ to ¾ cup of water(depending on how thick you want them)
1/4 cup Blackberries (4 net carbs)
1/8th cup Blueberries (2.5 net carbs)
4 slices Spam Lite (4 net carbs)
2 tablespoons butter
1/4 cup sugar free blueberry syrup
Directions
1. Beat eggs till frothy.
2. Add rest of ingredients to bowl EXCEPT water and berries and beat well.
3. Slowly add water while mixer is going until you get desired thickness. (I like ¾ cup.)
4. Heat up griddle over medium high heat and grease with 2 tablespoons butter.
5. Gently fold in the berries reserving some for garnish.
6. Use ¼ cup of batter per pancake on your griddle.
7. Cook until edges are brown and center is bubbly then FLIP! Cook other side until golden brown.
8. Find room on the griddle to brown both sides of the SPAM Lite while the pancakes are cooking.
9. Plate the cakes and spam and serve with sugar free maple syrup
Here's another good recipe that can be made days in advance and left in the fridge for a quick microwave heat up;
Spinach Pepperoni Egg Muffins
Servings- 4
Ingredients
8 eggs (8 net carbs)
1/2 cup shredded cheddar cheese
1/2 cup chopped previously frozen spinach thawed to room temp and drained well (2 net carbs)
1/2 cup chopped pepperoni
Butter flavored non stick cooking spray
Directions
1. Preheat your oven to 350 degrees.
2. Beat your eggs with a stand or hand mixer.
3. Squeeze all the water you can out of the spinach by placing it in a clean dish towel and twisting.
4. Using a fork mix all the ingredients into the egg mixture.
5. Spray your large muffin, muffin pan well with cooking spray.
6. Give the mixture a good stir and put equal amounts of batter into 8 muffin compartments.
7. Bake for 35 minutes or until the muffins are puffy in the middle and firm to the touch.
8. Remove from oven, wait 3 or 4 minutes then scoop out with a spoon, serve immediately.

I second the OMM! It is SO quick and easy and you can play around with different variations so you're not stuck with the same thing every morning! :) Best of luck! This is SUCH a great way of eating and you'll feel SO much better!

I hard boil a dozen eggs at a time so that I have them around for a super quick breakfast (or recipes).
I'll have a few slices of cheese with 2 hard boiled eggs some mornings.
Doesn't get much faster or easier than that! ;)

Okay, I'm realizing that for now, I'm just physically unable to cook much at all... I know it's best to not use prepackaged foods, but as a temporary measure...!
Are there any brands of crackers or other things to put peanut butter on? Is pb ok?! It's one of my staples when I need something quick but that has protein.
Any other pre-ready breakfast foods that maybe aren't eggs?! I'm starting to get tired of eggs already and need to switch things up.
I'm going to try the strawberry idea but the others that require baking I just can't do yet :(

If you are going to use peanut butter be sure to look for the natural with the lowest carb count. Many of the groceries are now starting to carry several including Walmart. ;D soy nut butters are great too that are a even lower carb option. http://www.netrition.com/im_healthy_unsweetened_soy_nut_butter.html (http://www.netrition.com/im_healthy_unsweetened_soy_nut_butter.html) I find that I have to mix them half and half with the natural peanut butter though. I just don't like the taste of the soy by itself. :P You might like the GG Scandinavian
Bran Crispbread http://www4.netrition.com/gg_bran_crispbread_page.html (http://www4.netrition.com/gg_bran_crispbread_page.html) they are very filling because of all the fiber. Some folks on here love them and others not so much. I myself just go for the one minute muffins....they are quick, versatile and so very filling. I'm not sure I would call that cooking it takes so little time. ;) but if you really need some prepackaged things and there is not shame in that you can find some here http://www4.netrition.com/low_carb_products_page.html (http://www4.netrition.com/low_carb_products_page.html)
I personally don't buy them so maybe others will chime in on their favorite products. I know many have talked about the smaps and the various granolas. Netrition.com is one of my favorite places to order online because no matter how big the order it's always $4.95 shipping. I hope this helps :)

Does anyone ever use the Jimmy Dean breakfast bowls? Was wondering about that as another option...

That is not a good choice with following FTS. Most if not all contain potatoes or some other high carb item. Even the DELIGHTS TURKEY SAUSAGE BREAKFAST BOWL which is supposed to be healthier for you is 17 net carbs. With a 20 net carb balance for the day that doesn't leave much room for much else. :( I do however on occasion buy the packaged precooked crumbles or patties. It makes it easy to add when I'm in a hurry or don't feel like making a mess :) Also Atkins has come out with some frozen meals and has 2 breakfast bowls. I haven't tried them yet but have a friend that loves these for their convenience. They are both listed as having 5 net carbs each. They are sometimes hard to find buy my Walmart carries them. I hate to say it but it's tough to find prepackaged foods that are going to be satisfying in taste, healthy for you and don't blow the bank. :-\

The best way to determine if a food is FTS-friendly is read the nutrition label and ingredients list.
If the nutrition label shows a carb count of 4 or less net carbs per serving... AND...
the first three ingredients are low carb, it's FTS-friendly! :)
This of course assumes that the serving size is reasonable in size.
The problem with eating 17 carbs for breakfast is that you'll likely get VERY hungry before the day's out.
That opens the door to overeating.
Overeating, even low carb foods, can cause weight gain! :o
This is because of a metabolic mechanism called gluconeogenesis.
And is why portion control is so important.
So to summarize, keep your daily carbs under 20 and watch your portions.

Read labels and ingredient lists.We have had type one diabetics spike using atkins products ;) You could always make your own.I will make a quiche or frittata and we will eat it for days.Really good with french onion soup :)

That's right Umpa...it's always best to make your own. :) If you can't do that then always read those labels to be sure ;) With their breakfast bowls....I believe the worst thing listed is the corn starch. It's crazy easy to make your own where you know what is in them. :D

Hi Jacki and welcome to FTS.
If hubby will fry up bacon (I fry a package at a time and then put it in baggy in the fridge. Then when I'm in a hurry I just scramble up some eggs, and nuke a couple slices of bacon and have a tomato with it sometimes a little shredded cheese on top...
Also the OMM are delicious.
Be sure to order the FTS sweetner.....it's the best for cooking.

Hi Jackibar! If you like peanut butter - it's good in celery. I also like to bake a very large crustless quiche in a rectangular baking pan, cut it into big squares and freeze the squares. Just pop in the microwave and you have breakfast. I also like leftovers for breakfast which is just heat and eat! Hugs ~ Kim

Kim - that quiche sounds like an awesome idea! Do you have a favorite recipe for it? I've ALWAYS loved casserole-type dishes and never mind leftovers if they're GOOD :)
