1/2 cup now almond meal 2 carb
1/2 cup flax meal 0 carb
2 egg (mine are )1 carb
2Tbls heavy cream 1 carb
1/4 cup butter melted
1tsp baking powder
sweetner if desired

heat oil in iron skillet
preheat oven to 350
 Pour batter in hot skillet until brown on bottom ,dont take long then put in oven for 15-20 min. This is pretty thick but if you like it super thick ,double recipe We like thin so I  cut the recipe in half  . Put some butter on while hot MMMMMMMM .
 You know us people from the south have to have our cornbread .

Oh Boy!!!   :D   Another yummy low-carb treat to eat!!!

I love cornbread.
But it never loved me (we all know why ;)).

Having some deep fried catfish (pork rind coated) the other night got me really thinking about it.

In a couple of days, I'm gonna cook up some baked halibut with a sour cream, lemon, and green onion sauce (aka Halibut Royale). Some "cornbread" on the side would be fantastic!!!

Oh wow that looks good! Simple to and I just had a crazy idea. what if you mixed sugar free honey with your butter and made honey butter!!

A few months ago, I posted a recipe similar to this that I baked. I added peppers and onions and it was like Mexican cornbread. I will combine the two recipes to try this. Thanks for posting it, my mouth is watering! : )

Just made the corn bread ymmm, Next time I will use a smaller frypan.I think the one I used was to big but it still taste good.I used some hungry Jack breakfast syrup I bought  in  Watertown USA.It had 8 carbs but 8 sugar Alc  which = to 0 carbs. I just put about 2 Tb over top when it was still hot.Thanks so much Jo I love this FTS way of life.  :) :)  :) :) :) :) :)

I am glad you liked it I cooked some last night it was real crunchy on the bottom but some butter on it when it was hot MMMMMMMMMMMMMMMMMM. I cook it  in a small 8-9 inch iron skillet I get the grease hot then pour it in let it sizzle a min get crunchy then put it in the oven .  I wanted it tonight too but decided on cauli mashed potatoes .

Joagain I made your cornbread tonight!! I reduced the flax by 1/4 and increased almond meal (husband not much on flax). It is wonderful and reminds me a little of the 1 minute muffin!! :)

Rena if you make it like the recipe with now almond flour it is 4 carbs for a 6 inch iron skill.  You can get 4,6,or 8 servings  I split the recipe and make ours thin and crunchy

So if we replace the Flax seed with Almond Flour do we use a cup total?

Oh wow thanks for the cornbread recipe, Fall is coming in our neck of the woods and I had thought about cornbread just today.   I made the macafoney and cheese today it was good, hubby liked too.
It has rained and stormed all day here, makes a person want chili and soups for sure, so this week got to get me some recipes for fts ones.

Although our Western Washington daytime temperatures are in the 80's, the day's are getting much shorter and the nights are getting cooler.
The trees are beginning to show Fall color change.

Your not dumb! Sometimes the manufacturers call them meals,sometimes flours! Yes they are the same :)

Mouseissue we are in Ohio and temps dipping in the 50's at night now and in the high 60's and 70's this week...with rain rain and more rain... always rain.... Lord knows I sure wish I could send some of this rain to our friends in Texas. Most likely it will warm up again, you never know around here, as on Saturday Sept. 3 we broke a record it got to 100 degrees here... crazy.
Just noticed last few days getting dark before 8:30 now.  Love fall, but not winter, how I wish we could head way south for Winter, but hubby cannot retire for several more years. I find that weather can affect my eating, so have to be careful with winter coming and be sure have the FTS comfort foods ready to make.

I know what you mean about Winter and rain, rain, and more rain... Ugggghhh! :(
The last couple of weeks, our lows have dipped to the mid 40's.
But the daytime highs have been in the 80's sometimes near 90. Kind of strange, to say the least. :-\

We live about 65 miles south of Seattle.
It seems to rain 10 out of 12 months a year... The gray, wet, and cold, can be depressing sometimes.
Oh, to be a snowbird.

Of late, Texas is in my prayers for rain and relief from the fires.

It is awesome Umpa how you can come up with those great recipes, you must be some cook!  I never was much of a cook, so I got lots to learn. My mom was an awesome southern cook, she loved to stay in the kitchen all day cooking, it was how she showed 'love' to everyone.  I love to clean and I guess I always was too busy for cooking, and looked at it as something that made me fat and dirtied up my kitchen haha

I think I am more of a mad scientist than a great cook :D :D :D I think i am just stubborn and refuse to give up foods I love.My husband is an amazing chef! I come from a  large southern family like you and food was love! Problem is that love made me huge! Its not the diabetes that is inherited its recipes.Recipes that make you feel warm,fuzzy and loved :) Just convert the foods and feel the love!

 I had it before we went on vacation I split the recipe in half and it is very thin and crunchy . I made some chicken noodle soup too with the tofu noodles .

I LOVE this recipe Jo!!  I have made it several times.  Depending on how "sweet" I want it it reminds me of a thick pancake as well.  I used this recipe to make dressing on Thanksgiving Day.  I only used half of the cornbread after it was baked.  For me it satisfied my need to eat dressing with Thanksgiving dinner.  Thanks again,

I am glad you like we love it I made the dressing with it too I didnt miss anything yesterday everybody was laid out on the floor or nodding off me & tyler  were like what is wrong with these people LOL.
Suz next time you make the cornbread just for cornbread 1/2 the recipe it is very thin and crunchy and a little soft butter and mam oh man . I dont make it often because I like it too much . LOL

I don't own an iron skillet (yet)... would you recommend using a stainless steel skillet on the stove top, or would it be better to bake in a cake pan or pyrex in the oven?

In the oven you just want get the crunchy bottom from the hot grease in the pan ,MMMMMM that is my favorite part . That is  why I half the recipe  so it will be thin and crunchy

I've still gotta try this. I haven't been cooking much lately and I am ashamed to say not really eating very well this last week or two and some slippage has managed its way in and I am so upset with myself! Trying to get back on track and now its sort of a detox again because my cravings have come back - big time. :( All this after losing 10lbs and now somehow I have justified myself. I don't know why I sabotage myself but I do. I have got to get back on track and I know that its affecting me because every time I eat grains or sugar and come off it I get a little blue or depressed which is not like me so I am trying to get back off of this. I wish I knew why I haven't been as good about resisting the junk like usual this week. Oh I know...school just started and I have my step son living with us now...two new changes and I am a bit off my game. Well time to get back on track.

Sorry to hijack this thread with my own little issues but I had to get it down somewhere!

Never be hesitant to speak up when you're experiencing challenges in your FTS journey.
Communicating those things, and getting added support, is why we're here!

It's very easy to slip up and bring on sugar detox.
Thinking of high carb foods as poison which was killing me, helped me stave off MANY slips (still does).

And I've found (and observed) that it seems harder the 2nd, 3rd, etc. times restarting.
That's probably because our bodies (and minds) are geared to maintain stasis.
And when we upset the balance, our systems tend to react a bit more intensely each time.

The most important thing to remember is that we are all human and are bound to slip along the way.
It's what we do afterword that makes all the difference.

And what your doing is EXACTLY what anyone should do after a slip!
So, kudos to you, Michelle! :) :) :)

Thank you so much for the encouragement, Tony! I'm trying hard to get back in the groove. I just made next week's breakfasts and now I'm trying to decide what to make for my lunches. I'm thinking two small casseroles will give me options and I can freeze anything left. Dinners are always a challenge with the family but hubby has conceded that we need to reduce the sugar in our diet so that says a lot! He still won't eat my "weird food" but he'll eat part of what I make for myself. He likes most of what I make so that's good. I do make side dishes and sometimes he'll have some too and sometimes he won't and that's his choice. :) I haven't been cooking as much as I usually do so it's time to get back to it. That helps me stay the course.

Thank you! I made shrimp and red pepper Alfredo tonight for dinner and everyone loved it and oh my it was sooo good!!! I even finally felt good enough to run a couple miles tonight on the treadmill. We have been inundated with smoke here from the Yosemite fire so no one is going outside much. I felt surprisingly great considering the last time I ran was about 4 weeks ago. I didn't have to stop and walk once and I could've run more but I figured I'd ease back into it lol. I walk a lot more now at work - each trip between buildings is a quarter mile round trip and I walk about 1-1.5 mi per work day just because of that which is a new thing for me. I'm crediting the walking with not losing fitness. Yay! Everyone else is catching a cold in my house. Crossing my fingers I don't get it!
