Title: another version of cauliflower mashed potatoes?

i really love mashed potatoes so i like the idea of a substitute version with cauliflower. but is there another way to make them? i just can't eat any kind of mayo, i never liked it.

You can put sour cream in it. I haven't tried it with cream cheese, but it seems that it would be good...Has anyone else tried it with cream cheese?

I know this will sound weird to you but the mayo disappears...you don't taste it. at least I don't. Of course you can simply use butter but it won't be as smooth...maybe add a little heavy cream and salt  :-\

Know what's funny? I made it twice and my kids ate it both times but they hate mayo. The only reason they stopped eating it is because they walked in on me making it one time and it's all in their head now. I was being very careful and sneaky, but not sneaky enough apparently!

krystlestar00 Welcome! I am umpa, dougs wife.If I can help you please ask. You can make them with sour cream and butter.I do that when I make twice baked cauli mash. potatoes. Play with adding shredded cheeses and cream cheese(heated in the microwave so it will mix.) I have a column on the homepage called ask umpa where I can convert your favorite foods to fat to skinny friendly.  ;)

I'm kind of late finding this and responding, but when I make mashed cauliflower, I use vegan butter (zero carbs) and veggie broth (a few carbs) but you could use chicken broth...and that's it, it comes out creamy and great! The broth adds great flavor :) the only thing, after it sits a day or so you have to mix it with a spoon or fork cuz the broth runs a little but then it's great again :)

Hey Umpa! I'm doing well, thanks for asking! My weight loss (http://www.fattoskinny.com/) picked up again when I stopped being so strict on myself and I'm down to 215 :) my first weight loss (http://www.fattoskinny.com/) goal is under 200, then 185, then 165. I've been at 215 for maybe a week or so? Now I'm just struggling to find new food ideas. I went through all the recipes I could last night on here and on the net and nothing really jumped at me. I'm having a hard time coming up with new meals :\ thinking about taking the mashed cauliflower, and making little patties and frying them like you would do mashed potato patties, or how we do in the deep south ;)

I don't know of any that are low carb...I can make tons of great vegan casseroles, but none are low carb :( and I don't know how to divide the portions, although, if I had some ideas or recipes, I'm sure I could figure that part out ;) and thanks Umpa!!

What happens if you don't really like cauliflower?
Do you taste the cauliflower itself?

It doesn't really taste like traditional cauliflower, but there's no guarantee that you will like it if you don't already like cauliflower...BUT it's very cheap as a whole head, and if you ended up not liking it, it would hardly be a wasted time and money, because it's not too hard to make nor costly. You could hide the flavor (which is very light) by adding seasoning like tony chachere's or sour cream or cream cheese and butter or chives and cheese...you would probably not notice at all the cauli taste then :)

jbonaiuto I had never tasted Cauliflower in my live until 7 months ago and it is my favorite veggie , I have used it in everyway possible .
 Make it like Dougs book tells you ,by butting butter salt & pepper and Mayo and it is very good !!!!

I think our tastebuds have changed now that sugar is not the main ingredient in our daily diet.  I am eating things I never thought I would and enjoying them.  Be open to new ideas, everything about you is changing so your tastes will change too.

Welcome jbonaiuto to the forum.

Umpa is right, this cauliflower mashed potatoes is awesome.  I rarely ate cauliflower before and now it is one of my favorite veggies.  It just tastes so good and so much like real potatoes. I fix mine in the food processor after cooking till tender, then just add some Smart Balance margarine and some low fat sour cream for a yummy dish.

I work and take my food with me for lunch and the other gal keeps asking me what I brought today.  Sometimes she asks for a taste and really likes a lot of the foods.  She is diabetic and I keep telling her how much better she would be to try it the FTS way.  I tell her how Doug changed his life eating this way and how the cravings go away. I think that is the best part, just not to be craving all the time.

I cleared out all of my leaves from the garden since my pereniels are beginning to raise their little heads from the ground and by picking up the leaves, managed to pick up a nice case of poison ivy/oak/sumac, one of he above.  I've tried for a week to get it under control, but finally had to go to the doctors today as the arm was getting red and swelling.  He said I managed to pick up poison "something" and now I am on predesone for 8 days.  I don't usually like to take any meds but didn't have a chance on this one. One of the side effects is to make you eat more and tomorrow night we are supposed to get snow!  So much for Spring hanging around.

Hi owensmath! :)

Low or lower fat "anything" is almost always higher in carbs.
That's because sugar is traded for fat in an attempt to "preserve" flavor.

There is a vegan sour cream that has little to almost no carbs and it looks and tastes the same, I know because I hate sour cream and I hated the vegan one too ;) AND it's VERY VERY low fat and NO cholesterol :D

On Easter I made cauli mash then added sour cream, cream cheese, bacon and chives and put it in the oven for awhile.  It was GREAT!!!!!

I made cauliflower mashed potatoes tonight for the first time.  I just steamed the cauliflower and used a stick blender to mash it.  Added a little butter, almond milk, salt and pepper.  Used it a s a substitute for the spaghetti my family was eating with meatballs.  Put some red sauce (low carb of course) on it and it was delicious and satisfying.

I found that the recipe with Cream Cheese tasted the best.  It really had the closest consistency to Mashed Potatoes that I have made.  I added a little minced garlic to my melted butter, then also stirred in Shredded Cheddar cheese, so it tastes a lot like Cheesy Potatoes!  ;D

Umpa and I have added Feta cheese to the original recipe and have been delighted with the result. We've also loaded it up with Cheddar cheese and baked it in individual baking dishes for twice baked "potatoes"....excellent!!

Moral to the story? Get creative to create your passed on family recipes :)

I wanted to try this caulimash since I first saw it but it wasn't until I noticed that mdanziger used a stick blender to prepare his that I finally decided to give it a try.  Right now the cauliflower is steaming away nicely and I am patiently waiting to get started! Will post taste and results later.

Hello Phoenix welcome to the family! I love all the caulimash recipes, real comfort food. Buy a jar of Heinz beef gravy in a jar, fry up a nice thick burger and coat it well with the gravy, serve over caulimash with a bit more gravy........Yummy :)

I make them wth cream cheese and butter all the time. I like mayo but the cali mash as I call it just taste better in it.
