Can it be true that you can get your black licorice fix and your veggies in one dish AND it's low sugar? :o YES ::)
If you love the flavor of black licorice give Fennel Root a try. At only 2 grams of net carbs per 1/2 serving Fennel Root is a unique tasting crunchy veggie that's sure to surprise your tastebuds with a "BAM" of anise flavor.
I love Fennel Root raw in salads or roasted with other veggies. When you find this funny looking veggie at the store the first step is to cut off the the fibrous tops (picture below) next , cut off the bottom rinse the bulb under tap water then enjoy the veggie. Here's a simple recipe you'll find in my kitchen :)
Roasted Fennel Bulb Garden Mix (4 servings, 3 carbs each)
1 large fennel bulb cleaned of tops and bottom
1 large yellow crookneck (summer squash)
1/1/2 cups fresh green beans
1/4 cup melted butter
1 tsp tarragon
1 tsp salt
pepper to taste
1- preheat the oven to 400 degrees
2-rough chop the fennel and squash
3-cut the ends off the green beans
4-place all the veggies, melted butter, tarragon and salt&pepper into a bowl and mix well
5-spread out all the ingredients onto a cookie sheet in a single layer and bake for 30 minutes
Serve as a side dish for any entree or add a pound of cleaned de-viened shrimp into the mix for a great seafood dinner ;)

Wow!!! I would never have thought of having licorice in my veggies.
In my imagination, the two are a strange combination. :-\
But if I can find fennel root in the store, I'll give it a shot.
Regarding the shrimp in the seafood salad you mentioned, are they raw or cooked?
If cooked, which method?

Add raw shrimp into the mixing bowl prior to spreading out on the cookie sheet.
