Has anyone tried the Instant Mashers from the Dixie Diners' site? New to forum! Hubby and I both are changing our lifestyle! I tried the cauliflower mashed potatoes and my husband did not care for them. Thought about ordering and trying these.

I haven't tried the Dixie Diner mashed potatoes yet either.
They do sound like their worth a try.
My wife and I occasionally enjoy their low carb Bistro Breads as toast with over-easy eggs.
They are good for dipping in the yolks... YUM! ;D ;D ;D

I have the Jicama on my grocery list. I have ordered the mashers, I will let you know how they are.

Don't give up on the cauliflower yet, try adding a good melty (not stringy) type cheese into the food processor when you make them. American is a good choice. Also don't forget the Mayo, it makes all the difference in the world to taste and texture.

Hey Amber!! ;D Welcome to the forum! It's so neat to see you on here!! Looks like you have already seen how friendly and helpful everyone is. I love it here.
With the help of another friend on FTS (Owensmath), I kept tweaking my mashed cauliflower until I got it right. For me, a little salt, pepper, cheese and mayo made all the difference. Once I drain the cauliflower, I put it right into my food processor while it's hot so it melts the cheese. After it's mixed up, sometimes I crumble a little crispy bacon on top too! It's my new comfort food!

Tried these last night and they were a hit with my husband! He likes meat and potatoes so this was a great side and very simple and quick.

I just went over to Dixie Diners website and read the nutrition info on this product.

The ingredients on these labels show all ingredients listed in order of amount present.
The second ingredient shown is DEHYDRATED POTATOES! :o
A half cup of dehydrated mashed potatoes (with NOTHING else) has about 45 net carb grams!!! :o :o :o
This makes me VERY wary of their carb count claim of 4 net carbs per 1/2 cup serving.
This demonstrates why it's so very important to read these labels VERY CAREFULLY!!!

Hi Amber -- You can also use jicama and turnips like potatoes. We make fries out of both. They're a little crunchier and sweeter than potatoes, but they're a good alternative.

I emailed the Dixie Diner and got email back from Chairman. But I still am hesitant to fix them again.

That's correct: There are 5g of fiber which are subtracted from the 9g carbs to yield
4 net carbs.

The chairman is being consistant with their "Nutrition Facts" label for this product.
What's troubling is dehydrated potatoes being the #2 ingredient on that label.
That is inconsistent with the carb counts.
I remember seeing this sort of thing before.
I know the FDA is pretty fussy about accurate reporting of packaged food ingredients by volume.
But I don't think the FDA is as fussy about the carb counts.
That is why I've said this many times... Read nutrition labels VERY carefully!
If the ingredient list does not seem to jive with the reported carbs, BEWARE!
