Banana Bread 14 net carbs for entire recipe
Ingredients

   ¾ cup chopped walnuts (optional)
   ½ cup softened butter
   ¾ cup Xylitol
   2 beaten eggs
   1½  cups almond flour
   2 teaspoons baking powder
   1 teaspoon cream of tartar
   4 tablespoons flaxseed flour
   2 teaspoons vanilla
   2 teaspoons banana extract

Directions

1.   Preheat oven to 350 degrees.
2.   Grease loaf pan.
3.   Cream butter and Xylitol.
4.   Add 2 beaten eggs.
5.   In a separate bowl mix cream of tartar, baking powder, almond flour, and flaxseed flour.
6.   Add to butter, Xylitol and egg mixture.
7.   Add extracts and (optional chopped walnuts if desired) and mix for 2-3 minutes.
8.   Bake at 350 for 40 minutes until firm.
9.   Cool in baking pan on counter for ten minutes before removing bread.
10.   Remove the bread from the pan and cool on rack completely before slicing.
11.   Store in fridge to preserve freshness.

I was a banana freak growing up and out, and out and out :) I asked Umpa to come up with a recipe to solve the problem for me. She also makes a wonderful banana custard!

I was a freak for banana bread too, Doug!

In fact I loved bananas!
To chase my morning vitamins and meds, I would start each day with a large banana and three vanilla sandwich cookies.
This was about 75 net carbs BEFORE breakfast with it's toast, oatmeal, cereal, etc..
It was ironic I was taking Metformin blood sugar medication just before eating all this SUGAR!

Thinking back, I must have been eating anywhere from 300 to 400 net carbs a day (on some days, even MORE)!!! :o :o :o
It's no wonder I too was growing out, and out, and out. ;D

Thank you Umpa for coming up with something delish to fill the "banana void" in my journey! ;D

Umpa or anyone else.....help!  I made this early this morning and I flopped it somehow.  After baking and cooling mine was totally crumbles!!  I even checked to make sure I didn't leave out any of the ingredients.  The best part is, it tasted simply delish!!!  My husband thought it was great and added milk to his bowl of crumbles...suggested we replace his oatmeal with this for breakfast!!  He said it makes a great cereal!  LOL

Anyway, I either didn't mix it long enough, bake it long enough, or allow it to cool long enough.  Hmmmm?  Or maybe all 3  ;D

Blinky make sure you use a large loaf pan I made a mistake the first time and the pan was to small and I had to throw it all away .

The next time I made it I cut the recipe in half and made it into 6 cupcakes and they were so very good !!!

 Just wanted to let you know cause the ingriedents to make these goodies are too expensive to mess with  ;D

Okay :)  I'll have to see if I can find some on-line.  I haven't been able to find any at the grocery stores that I frequent.

Hi Binky   Have you looked in Walmart?  You can find it in the spice section where they have the vanilla extract.   Ours runs out sometimes so keep looking...LOL

Suz..... what happened??  LOL  That is a good idea to replace it with the oatmeal... ;)

I buy my extracts at the grocery store or amazon,which ever is cheaper.My emulsions i buy at Ross Department store with the coffees and stuff.
Suzilyn if it is dry you probably cooked it too long or your oven is hotter than mine.All low carb flours have to cool completely and go in fridge to firm back up.I think its the fat content.The beanit butter cookies will do the same thing if not refrigerated.Once they come out of fridge they are perfect ;)

Many FTS baked (breads) get crumbly because they do not contain starch (the thing that has the carbs).

Like Umpa said, allowing them to cool completely before handling is a very good idea.
Sometimes, simply adding 1 or 2 whole eggs to a recipe will help too.

It sounds delish.  I will try it.  Could I trouble you for the banana custard recipe?  I love pudding and custard, yet it is all too high in carbs made in the standard way.  Thank you.

Xylitol is xylitol... Both sources are natural and provide the same thing, xylitol.

I made the banana nut muffins today and Sam absolutely loved them!  These replaced the normal birthday cake  ;) :) I really appreciate all of the recipes on this forum!

Page 398 in the FAT TO SKINNY Sugar Free Bakery book;

Banana Custard
Ingredients
   2 eggs
   1 cup unsweetened almond milk
   1 teaspoon Banana extract
   1 teaspoon Stevia
   1 teaspoon ground nutmeg
Makes 4 small or 3 medium custards.

Directions
1.   Preheat your oven to 325 degrees.
2.   Put on a kettle of water to boil.
3.   Place all ingredients in your blender except for the nutmeg and process for one full minute.
4.   Pour your custard mixture into custard cups.
5.   Open your oven door and pull out a center rack ¾ quarters of the way out.
6.   Choose an oven safe baking dish with sides at least as high as the custard cups and place it on the oven rack.
7.   Place the custard cups into the baking dish.
8.   Pour hot water from your kettle into the baking dish high enough to come within ¼ inch from the top of your custard level in your custard cups.
9.   Gently slide your oven rack back into the oven being careful not to slosh water into your custard cups.
10.   Bake your custards for 45-50 minutes or until fully set. (toothpick comes out clean when inserted in the middle)
11.   Remove your baking dish from the oven and using a large slotted spoon or spatula remove your custard cups and set on a rack to cool.
12.   Serve cold or at room temp.
13.   Top with a dollop of whip cream and a sprinkle of nutmeg when serving.
  TIP- Drop 3-4 drops of yellow food coloring into the blender for a more festive color.

Hi Umpa! :)

That's how I was with cigarettes... Couldn't drive a mile without lighting up.
But habits can be dropped or changed.

So if you find you eat too much while on the road, make the food more inconvenient.
Try putting the food in the trunk, or back seat, or somewhere tougher to reach.

Thats a good idea.i only do it when doug is driving.My mom and dad bought me a dvd player and headphones and that helps.I think its just boredom because I have a short attention span like a 2 year old! :D :D

His mother is gonna kill him me thinks if he keeps teasing her! ;) Everything has been mailed to cook the first batch in Kentucky for testers for the grocery stores.Won't be long now :)
