Title: Umpas Peanut Butter Fudge

one jar I.M. Healthy unsweetened SoyNut Butter  (or your favorite  peanut butter)
2 squares unsweetened Bakers chocolate
20 drops FAT TO SKINNY Zero Sweetener
1/2 cup almond milk
nuts optional

Place a saucepan on stove over medium heat .
Pour in almond milk and ZERO.
Put in chocolate squares and melt stirring constantly
Add  I.M. Unsweetened SoyNut Butter and stir until well blended and melted.(should be thick)
Pour into 8x8 pan and put in fridge for 2 hours or until firm.

***STORE IN FRIDGE***

Hi Umpa! Doug has really gone backwards from where he was.....thankfully his eyes are still doing good, he is still getting the injections but spread out farther apart now.  We are back on FTS as of the first of the year with his promise to be FAITHFUL this time.  He is back at the gym too.  Praying he hangs in there this time!!! ;)  BTW, the fudge is wonderful, it will be making a regular appearance in our kitchen!

I entertain frequently and I'm not telling anyone that they're eating FTS anymore! They always tell me how good the dinner is and then I tell them that it's low-carb and they blink a lot. From now on, it's my little secret!  ::) There are so many cross-over foods - they don't know what they're eating!

I did that last Thanksgiving with our fake sweet potato casserole that was made with pumpkin and another secret ingredient! Ha ha, look it up on here!!  Anyway, oneof my son's friend was in the bathroom ****A LOT*** and I realized that it was probably the xylitol.... Oops....

I've wondered about that but don't cook low carb for others unless they are also low carbers so it hasn't come up for me.  Everyone else in my family is long and lanky, a triumph of my husband's genes over my short ones.

Is low carb all or nothing?  

There are so many crossover foods that I stopped worrying about it. If someone doesn't want my low-carb stuff, there's plenty of other dishes that they can eat. My favorite is the guy who doesn't like cooked cauliflower - and I fixed caulirice for paella - he loved it! Didn't know it wasn't rice.

Umpa, besides the carb count, don't forget the measurements for the chocolate and soynut butter - I have chocolate in bulk - not squares. I think I can look at the ad at the bottom of the page and get the size of the soynut butter jar... YEP! 15 oz jars - now for the chocolate, and the carb count... Thanks, Umpa!

here ya go  Sarah ;) 17 1/2 carbs for the whole pan.Less than 1 carb a piece.It is the square of Bakers chocolate Sarah.What do you use?

WinCo has bulk foods - big chunks of chocolate, so I need a volume measurement - they don't come in squares. I got new spices there one day - 25 different spices for $16. Most filled or over-filled the regular sized jars or large jars. Some filled two or three jars. It's a great place to buy spices to replace old ones or to try new ones. Fun stuff.

Next time I go there I'll try to remember to take a picture of the label. The chocolate is in a big bin - irregular chunks of broken-up slab chocolate about an inch thick and maybe 4 or 5 inches in diameter. Not marked in squares. You have to guess or weigh it to get the exact amount needed for a recipe. That's why I asked how much your chocolate 'squares' are in ounces.

Sarah the box for my bakers chocolat reads 1/2 square per serving at 14 grams.  So 28 grams per square  ;)

When you make this recipe you add the Zero with the liquid or it doesn't get incorporated because the peanut butter is so thick.I will do a post tommorow on how to use Zero for baking. ;)

I made this yesterday for doug and I had forgotten how good it is!! It goes together in 5 minutes! i just put the Zero in with the almond milk. Yum!!!

It depends how sweet your peanut butter is.I use IM healthy soybutter which isn't sweet at all. So I use FTS Zero 24 drops which is the same as 1/2 cup sugar. I am sure some one who uses stevia will chime in.This goes together in 5 minutes so have everything ready and if using a liquid sweetener put it in with the almond milk. ;)

We have a vegan market in next town (Loma Linda). The university & hospital are Adventist. I got some freshly made no sugar added peanut butter 14 oz for $2.35 there. Hope that's a good deal.

Cool...that is where my son was born   ;D  He was very very tiny....2 months early.  Couldn't tell it now!  He is over 6 foot and 200 something Lbs   ;)

My brother was 1.5 lbs when he was born. He's 5'8" and 180 lbs now, he will be 56 yrs old April 13th.

The kid's daddy was in the Air Force and we were stationed in Victorville for about 2 years. They weren't equipped to handle such a early delivery. Yes I am very blessed. So are you though... Wow it's amazing what they can do now days to help these early babies but years ago it was more difficult. 1.5 lbs is amazingly small

 :D Good Morning Umpa!! Your fudge has incredible!!! Just thought I would put this out there.....as I was looking through my old recipes to convert I found this one! It is really good!

8 oz. Cream cheese
1 cup splenda (now converted to 48 FTS drops)
1 oz. unsweetened bakers chocolate
1/4 cup heavy cream
4 Tbsps. Soy peanut butter (or your favorite peanut butter)

Melt cream cheese and peanut butter in microwave for two minutes. Stop and stir after one minute.
Melt chocolate in separte bowl until creamy.
Combine chocolate with cream cheese mixture and whisk in FTS and heavy cream.
Pour into pan and chill 4 hours for gooey fudge but if you like more traditional you can put in the freezer 30 minutes before serving!!!
