Title: Broccoli Cheese Soup

Hey Umpa!!

I'm really craving broccoli cheese soup and have searched all over and can't find a recipe on the forum for this! I'm sure there is one, but I can't find it with the search! I found one on foodnetwork's website and am posting here for your help in converting it! (I know what some of the conversions will be, but don't want to mess it up, so HELP!!!)   ::)

Ingredients
1 stick butter
1 whole onion, diced
1/3 cup all-purpose flour
4 cups whole milk
2 cups half-and-half
1 pinch nutmeg
4 heads broccoli, cut into florets
Salt and freshly ground black pepper
3 cups grated cheese (mild Cheddar, sharp Cheddar, Jack, etc.)
Chicken broth, if needed

Directions
Melt the butter in a pot over medium heat, and then add the onions. Cook the onions for 3 to 4 minutes, and then sprinkle the flour over the top. Stir to combine and cook for 1 minute or so, then pour in the milk and half-and-half. Add the nutmeg, and then the broccoli, a small dash of salt and plenty of black pepper.

Cover and reduce the heat to low. Simmer until the broccoli is tender, 20 to 30 minutes. Stir in the cheese and allow to melt.

Taste the seasonings and adjust if needed. Then either serve as is, or mash with a potato masher to break up the broccoli a bit, or transfer to a blender in two batches and puree completely. (If you puree in a blender, return the soup to the heat and allow to heat back up. Splash in some chicken broth if needed for thinning.)

Made it tonight :)  My recipe

2 cups cooked soft broccoli
2 cups unsweetened almond milk
2 cups Dougs Rich and Creamy Alfredo sauce
Salt and pepper to taste


Puree the broccoli in a food processor
add the almond milk into the food processor and process for a minute
pour the mixture into a sauce pot and add the Alfredo sauce
stir well and taste, adjust salt and pepper
bring to a boil, reduce to simmer for 15 minutes
serve :)

How cool Doug, I had made your alfredo sauce the other day and when I read this question I was just thinking the alfredo sauce would be a perfect base for several "creamy" soups.  Ummmm Goood.  Love FTS.  Thanks

MommaB you can add the cheddar on top before serving. ;)

Great idea!!!
Maybe putting the soup in an oven safe bowl and placing it under the broiler long enough to melt the cheese!... YUM! ;D

Thank you so much!! I'm making this for dinner tomorrow night and taking some to a friend who just had surgery!!! Yummy!!! Can't wait, may have to double it so I have leftovers!!!  ::)

I made this the other night and loved it. Even my kids ate it. Husband not so sure but he licked the plate anyway!!. FTS recipe so eazy peazey. Yummity Yum will be making again.
