Bacon Wrap Fish Fry
Servings- 2
Ingredients
8 ounce thick white fish filet
4 slices of thick bacon
8 toothpicks
3 tablespoons bacon grease
3 tablespoons Ranch dressing
1/2 teaspoon Cayenne pepper
Directions
1. Cut your fish filet into 8 one ounce cubes.
2. Cut your bacon slices in half and wrap each cube, secure bacon with a toothpick.
3. Heat up the bacon grease over medium heat.
4. Pan Fry the cubes until the bacon wrapper is golden brown and crispy.
5. Mix the pepper with the ranch dressing and spread on serving plate.
6. Arrange the cubes on the plate and serve
TIP- Pictured is a side of stir fried purple cabbage. Simply shred and toss around in ht butter in a skillet until cabbage is wilted. Add 1 carb per cup of cabbage. You can use chunks of chicken breast or shrimp to replace the fish if you wish :)

Well, for pity's sake! I need a keeper! Heated up the pan and got the bacon-wrapped fish cooking, and the smoke alarms all started going off! I had to turn on all the fans, open all the windows and leave the house! Everyone in the neighborhood knew I was cooking!
But, the fish turned out delightful! Fantastic recipe, Doug! I can see this as a company dish if I can figure out how to cook it without setting off the alarms! Next time I'll put the skillet out on the barbecue. Or maybe make skewers and cook them over the coals without a skillet!

I know! Honest to Pete! Not only were my smoke alarms going bonkers, when I was outside, I suddenly smelled wood smoke and thought maybe they were going off for a real reason, so I was running around looking for the smoke - then looked over towards the neighbor's and saw someone was burning something there and a big smoke cloud was coming my way. So I shut the doors so the smoke wouldn't be pulled into the house and keep the smoke alarms going! Now the alarms are all flashing and I have to figure out how to reset them. Brother! I have a fear of heights and am not looking forward to climbing to the top of my ladder to try to take them apart and see what's going on. Ricky, where are you when I need you?

Smoke detectors have a button on their faces that is used to test them and (sometimes) to reset them after going off.
If the smoke has cleared, just press their buttons and they should stop.

Have I brought this up already? I made this tonight - opened the windows and door and turned on all the fans first, so there was no smoke alarm issues! This is SOOOO GOOD! Anyone who hasn't tried it should do so immediately!

Last night, we had chicken and apple sausages wrapped in bacon.
The sausages are sold at Costco, are precooked, and only about 2 carbs each!
I simply took a slice a bacon, wrapped it around each link with a toothpick,
and put under the broiler for 12 minutes (6 on each side) until the bacon browned.
They were SOOOO YUMMY!
The chicken, apple, and bacon flavors are fabulous together!
Next time you're at Costco, look for them!
Look for "Aidells Chicken & Apple Smoked Chicken Sausage". ;)

Just read Doug's recipe - Sounds amazing and will have to try this weekend. I sure hope the alarms in my house don't go off -- Boy, in SE Wisconsin we are getting so much rain - flooding conditions. I am sick of this wet stuff. This weekend it is supposed to be around 44 and I'm sure I heard that the sun may be out. You take care you all.

We are escaping from the scorching heat in the Keys and heading to North Carolina. 44 sounds so good!! Right now we are in Georgia .We blew a tire on our trailer last night so we are waiting for it to be fixed.Looks like its gonna be raining here too.When its rainy and cold in North Carolina I make a soup or stew. I am ready for a good clam chowder :)
