Title: Mexican Meatloaf

Well, doesn't that sound good?! Slightly tweaked from pinterest.

Mexican Meatloaf
 
2 lbs ground beef
 1 egg (1 carb)
 1 cup Rotel Chunky Tomatoes and Green Chilies, drained (6 carbs)
 1 package taco seasoning (check the carbs on the package or make your own, recipe follows) (5 carbs)
 1 cup pork skin crumbs (grind pork skins into crumbs)
 1 cup grated cheddar cheese
 
1. Preheat oven to 350 degrees F.
 2. Mix egg, hamburger, pork skin crumbs, beef and 1/2 container of salsa (about 1 cup) until combined.
 3. Press half of the meat mixture in a standard bread pan. Cover with 1/2 of the cheese.
 5. Press remaining meat mixture over cheese.
 6. Bake for an hour or until meat begins to shrink from pan sides.
 7. Carefully pour out any excess liquids that might be bubbling around the edges of the dish.
 8. Add the rest of the cheese.
 9. Cook for five minutes more, or until cheese is bubbly.
 10. Let rest 10 minutes and serve.
 
Serve with sour cream, guacamole, shredded lettuce, chopped tomatoes and black olives.
 
Makes a 2 pound meatloaf. Serves 8 with 1.5 carbs per serving.

Homemade Taco Seasoning (I believe this is from TooSweet?)
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon onion powder
1/2 teaspoon crushed red pepper

Hi Sarah! :)

I was raised eating traditional Mexican food and this looks really good!
I think all add some cilantro and a little jalapeno for that "authentic" south-of-the-border flavor.

Gonna make this real soon! :) :) :)

You could also use Doug's Alfredo sauce and make a Velveeta cheese sauce.Just use yellow cheddar or a spicy Monterrey jack for the two cups of cheese instead of Romano or Parmesan. ;)

Just frying up some ground beef with taco seasoning is so simple and quick that I would probably do that - except if company is coming and you can't time it well. Then this meatloaf would be the perfect solution. It does look good. I'll have to try it when I'm done with the carb-a-thon. For that, just frying the ground beef would be better (no egg or rotel).

Mmmm this is making me want meatloaf. I use to make something very similar using salsa, taco seasoning packet, onions, peppers and bread crumbs. Gonna have to try this.

I'm gonna try it, too, as soon as the daily high drops to the low 90s and the smoke from all the wildfires clears out. 

Please keep the firefighters all over the country in your prayers.

I spoke to a gal in Colorado today Andrea and she said its been in the 100s for 3 days! She says the fires create their own wind.You are in our prayers. ;)

We set records with 5 days of over 100 degrees and an all time high of 105.  It has been brutal and the latest threat to a very populated area (Colorado Springs) is heart breaking.

Thanks for keeping the firefighters and public officials in your prayers.  Remember the evacuees, too.  It is hard to imagine 32,000 people forced out of their homes with no idea of what the future holds.
