Title: Yummy LOW CARB Pork Rind Garlic Biscuits

Low Carb Pork Rind Garlic Biscuits

Ingredients

   3 cups pork rinds ground into flour
   1 tablespoon garlic powder
   1 tablespoon onion powder
   2 teaspoons Italian seasoning
   8 eggs
   4 teaspoons baking powder
   1 cup shredded Parmesan cheese
   ½ cup shredded mozzarella  

Directions

1.   Preheat oven to 350 degrees
2.   Grease a cookie sheet.
3.   Put pork rinds in food processor and grind into flour.
4.   Put all dry ingredients in a medium size bowl and mix well.
5.   Beat eggs in a separate bowl.
6.   Add eggs and cheeses to dry Roll batter into balls about the size of a golf ball.
7.   Place on cookie sheet.
8.   Bake at 350 degrees for 20 minutes. Take off cookie sheet and cool

That sounds a LOT better than a McDonald's Sausage McMuffin. :) :) :)

Umpa made these yesterday and changed up the recipe a bit, She omitted the onion powder, decreased the Parmesan to 1/2 cup and replacing the mozzarella with 1 cup of shredded sharp cheddar.

The cheddar biscuits turned out terrific!

I just bought a bag of pork rinds to use as breading for chicken... this sounds like a much better use for them.

Hey Mark, I buy my PR from the Dollar Tree store 20 bags at a time for a buck a bag. I grind em all up and keep them in the freezer in a big plastic container. I use them for all fried coated foods and anything else I used bread crumbs on in my prior high carb life. I sprinkle them on top of baked fish, macafoni and cheese, green bean casserole.....etc... We even have a cookie recipe here on the forum from Katary!

Enjoy those pork rinds on southern fried pork chops, it's like putting the skin back on the pig!  8)

I like to eat them when the rest of the family is eating potato chips.  My eight year old likes them too.  I use them as a breadcrumb replacement.  I just never thought of using them in place of flour for making biscuits and such.  I will look at Dollar Tree.  Thanks.
