I LOVE these cookies!  8)

Icy Hot Ginger Snaps

Ingredients

   ¼ cup shortening
   ½ cup butter
   ½ teaspoon salt
   1 egg
   ¼ cup sugar free maple syrup
   2 cups “NOW” brand unblanched almond flour
   24 drops FAT TO SKINNY ZERO sweetener  
   2 tablespoons ground cinnamon
   1 ½ tablespoons ground ginger
   ½ teaspoon cayenne
   ½ cup soy protein powder
   1 tablespoon Xylitol

Makes 83 cookies

Directions

1.   Preheat oven to 350 degrees.
2.   Grease cookie sheets.
3.   In a large bowl, cream the shortening, butter and ZERO.
4.   Add the egg and beat until light and fluffy.
5.   Add syrup, mix well.
6.   In a separate bowl, mix together the flour, soy protein powder, salt, ginger, cayenne and cinnamon.
7.   Add to the egg mixture and stir until well blended.
8.   Roll bits of dough into 3/4 inch balls.
9.   Place on cookie sheet about 2 inches apart and flatten to 1/8 inch thick.
10.   Sprinkle tops lightly with Xylitol.
11.   Bake for 15 to 18 minutes, until firm.
12.   Let cool on wire rack.


   TIP- Store your ginger snaps in the freezer inside plastic ware. The combination of hot and cold along with the “snap” is wonderful.

Doug must have been reading my mind.  I was wondering about ginger snaps.  I have to wait for a break in our heat wave.  Since high 90s and triple digit temps are not normal, our air conditioning is not really up to the challenge.  I haven't turned on the oven in weeks.  We have another week of this and then the mid-80s are in the forecast.  My fingers and toes are like little sausages and that's after drinking more than a gallon of water a day.

I have ginger snaps to look forward to.

There aren't any cities threatened at this time.  Over 600 homes destroyed in June is a terrible number.  There are weather patterns that should help soon.  We can smell the smoke when the breezes blow in the afternoon and evening.   When the humidity is below 10%, the forests are so vulnerable.

Here, it's been in the mid 70s.
Our Summer has been "on break" for about a week now.

Today, it's expected to reach about 69 around here with showers expected this evening.
It would be wonderful if the rest of the country would get such relief!

I LOVE living in Western Washington state!
We live without extreme heat, extreme cold, tornadoes, hurricanes, etc..
Even though we get our share of rain, I wouldn't move anywhere else!

I pray the Lord grant you all relief soon!

My husband did some work in the Seattle area a couple years ago and I flew out to see him while he was there.  I found it amazingly beautiful there!  Right now the mid-70s sounds like a dream!!!  I wish I could handle the rain and gloomy days there (although I hear that Washington folk spread that around so we don't overrun them lol  ;) ). 
  Question about the cookies - is there somethiing I can substitute for the soy protein powder? I try not to use soy very often and don't have any in the house.  I have whey protein although they are flavored and I have some egg white protein; would either of those work?  Thanks!
