Title: Pumpkins! Any recipe ideas?

Hey guys!
I'm buying a "Farm to Work" basket of produce each week from a local farmer and it's been fun trying to find ways to use up some of the more obscure (to me) items! So far, I've learned to cook and enjoy okra and squash blossoms! Now, I've got a little pumpkin to use up and I'm looking for a recipe to use it in. What would you do with a little pumpkin if you were me? :)  I would love to use it in a low carb baked goodie or as a veggie side dish. Ideas???

PS - Here's a pic of my super awesome low carb squash blossoms! Pretty awesome. They're stuffed with a teaspoon of cream cheese and herbs (I used basil and sage) and then dipped in a batter of egg, parmesan and ground flax seed and then fried in a saute pan with canola oil. YUM! My younger children were not fans but my oldest and my hubby loved them!

If you go to the home page and search from there..... you will see posts about what you may be looking for.  There are several yummy pumpkin recipes that you will love.  Also Doug did a video http://www.fattoskinny.net/index.php?topic=1216.90 (http://www.fattoskinny.net/index.php?topic=1216.90)   If it is one of the really small ones....they are so good baked with butter and cinnamon or even sugar free maple syrup... yummy

I use pumpkin as a sweet potatoe replacement. I also love pumpkin cheesecake!

Thanks for the tips, guys! Turns out, that little pumpkin was actually a squash! I'll be fixing it like acorn squash tonight with dinner. :)

Hm....I wonder what the carb count in that little squash would be. The outside is a dark green and it's shaped like a pumpkin, just smaller. Any idea what it is?

Hi Alicia! :)

Kabocha squash is about 4 net carbs per 1/2 cup.
The average veggie serving is 1/2 cup.
So if you watch the portion sizes, it should be just fine.

Golden flax seed meal should be good in that recipe.

BTW... Butternut squash is quite high in carbs. I wouldn't use it.

I have a loaf of Pumpkin Nut Bread in the oven - I'll let you know if it turns out yummy. It sounds a lot like the Pumpkin Spice Bars from Joagain. I think you could use golden flax meal instead of almond flour, but I don't care for flax meal so I'm not going to try it...

Pumpkin Nut Bread

Ingredients
 cooking spray
1/2 cup unsalted butter, softened
48 drops ZERO (or 1 cup xylitol)
2 eggs
1 (15 ounce) can pumpkin puree (not pie filling)
1/2 teaspoon ground cinnamon
1/8 teaspoon Chinese five-spice powder (I used a mixture of ginger, cardamom, cloves, ground fennel, cayenne pepper - and didn't measure - prob 1/8 t ea. I'll put a recipe for Chinese 5-spice powder below)
1/8 teaspoon ground allspice
2 cups almond flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
3/4 cup chopped toasted walnuts

Instructions
1.Preheat the oven to 325 degrees F (165 degrees C).
2.Spray a 9x5-inch loaf pan with cooking spray.
3.Mix butter and sugar in a large bowl until light and fluffy.
4.Whisk in eggs one at a time until combined.
5.Whisk in the pumpkin puree, cinnamon, Chinese five-spice powder, and allspice until combined.
6.Stir flour, salt, baking powder, and baking soda into the pumpkin mixture and mix until just combined. Stir in chopped walnuts.
7.Pour batter into the prepared loaf pan.
8.Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour.

Chinese Five-Spice Powder
•1 tsp. ground Szechwan pepper
•1 tsp. ground star anise
•1-1/4 tsp. ground fennel seeds
•1/2 tsp. ground cloves
•1/2 tsp. ground cinnamon

Oh wow....just in time for the holidays  :)  I would have never thought to put the Chinese five-spice in a pumpkin bread....I bet that gives it a wonderful flavor    yumm!!

For quite some time I have been making pumpkin bread for the holidays.  Mostly giving them out as gifts.  Of course I have stopped most of that holiday baking when I cut out the sugar.  I just didn't feel right pushing something I felt was unhealthy to the family and friends.  That is like saying " sorry I can't eat that because it is full of junk and isn't healthy to eat besides it will make me sick.....but you go ahead"   Haha
Thanks so much for the recipe for the 5 spice too!!  It's great to have this on hand when cooking Chinese dishes for sure.  

Looks like a great recipe Sarah...thanks for sharing.  :)  I think I'll give it a go tomorrow.  I'll let you know how mine comes out  ;D

I made my loaf in a toaster oven and it took an extra half-hour. The flavor is delightful, but the texture is kind of soft. I had a piece right out of the oven - I'll try another when it has had time to cool. The smell will drive you crazy! I think I'll put some sour cream in the next batch and bake it in little loaves in the regular oven. I used to put sour cream in my corn bread and it made it less crumbly and more cake-like. I wonder if a person could make sour cream frosting... Maybe I'll try it!

Oh, YUM!!! Thank you for sharing, Sarah! I bet we could put it in mini muffin tins for easy single servings, too. I'm going to try this! Did you use the zero or the xylitol? I'm thinking of trying a combo of the two.

I used ZERO - it's the best tasting sweetener! I thought about using xylitol because the crystals cut the butter when you cream butter and sugar, but opted for taste - it worked just fine with ZERO.

I had a piece of this bread for breakfast - it was perfect! Fennel and cardamom are two of my favorite spices so I'm in heaven with this recipe!

Check out the video section Alicia .Doug and I did a pumpkin recipe video.I also use pumpkins for my baked sweet potatos and sweet potato pie ;)
