Yummy Low Carb Grouper Florentine
INGREDIENTS
Grouper filets(any sturdy white fish will do)
Butter
Frozen chopped spinach
Chopped onion
Diced garlic
Bertolli Alfredo sauce
Cooking sherry
Cheddar cheese
Salt & pepper to taste
Preheat oven to 400 degrees. Squeeze the water out of a box of frozen spinach and place spinach in mixing bowl. Rough chop 1/2 small onion and toss in bowl, add 1/2 jar of Bertolli Alfredo sauce, 1/4 cup of cooking sherry, two cloves of diced garlic, 1/4 cup of shredded cheddar cheese, and mix up the "goop." J Split the goop between two individual baking dishes that have been well buttered. Place a nice filet of grouper into the goop and press down, flip the filet over and salt & pepper, top it with a couple of tabs of butter and bake for 25 to 30 minutes.
for the kids i would add another 1/4 cup of cheese just to make it gooey! Grin

I love that JoAnne!The fact is we live in the Keys ,everybody in the country are yankees!I love to call my mom in Texas and call her a yankee!She gets riled up! :D Have you thawed at the Cape yet? :)
