Title: What a GREAT Low Carb Lunch...you won't believe it!

This is soooo easy to make and so delicious!

Cucumber Sub

Ingredients

1 large cuke partially peeled, cut in half and seeded
3 slices of lean ham or your fav deli meat
2 slices of your fav cheese
1 green onion
mayo
salt and pepper

Directions

Lay out you deli meat, top with cheese, stick in the green onion, mayo salt and pepper. Roll it all up like a sleeping bag and nesstle it into one half of the cuke, top with the other half and Bingo! One really cool summertime Cucumber Sub!

What a great sandwich for hot weather! :) :) :)

Just be sure to leave some of the skin on the cucumbers, as in the picture!!!
If you're like me, you could gas up the Good Year blimp eating them skinless. :D

Looks delish!!  Leaving some green on actually prevents cuke gas??!!  Really??!!

YAY!!!  When you post a photo AND the recipe, I can save it to my Pinterest LOW CARB boards for my use and everyone to see - thank you - not so w/just the recipe, tho'!  Everyone here has such great ideas/recipes, I wanted to share FTS with those newbies just starting out on low carb.

Ummmm, just had a second thought...  Doug/Umpa ~ perhaps you would prefer that I DO NOT post your recipes/pics on Pinterest??  Not a problem, just let me (and others here) know your thoughts.

Looks great. Would not have thought to use the cucumber whole. I usually chop it up and do salad.  My preference  would be to pop tuna mixed with mayo in it.  Would think this would be so cool to eat on a hot day. Be good little finger foods when people over in summer.

Yes Morgan ~ I think the possibilities could be endless!  Fill it with different goodies and slice it for parties, etc  :)

The folks at work are always amazed at what I bring in to each for lunch.  They say, there goes Ellie again...  Thanks for FTS, I can live a great lifestyle and not worry about putting on weight.  Also, the foods sustain me throughout the day - I am never hungry.  I guess we all know the reason why...as we have all read Doug's book(s)... Thanks Doug and thanks Umpa for being such a great support in his life.

How do you keep tuna from squirting out of the cucumber when you bite it?
I made this once before and it was like eating an ice cream cone on a scorching hot day.
Had to attack it from all angles. :)

I'll give that a try.
I prefer my tuna moist. But moisture of the cuc will probably offset the dryer fish.
