Wonderful Easy Low Carb Swedish Meatballs...........YUMMY!


Want a quick easy delicious filling satisfying snack tray for the fridge? Try making this recipe  8)

Ingredients

1 pound ground beef
1/2 pound ground pork
2 tablespoons finely chopped onion
2 tablespoons Italian Seasoning
salt and pepper to taste
1/2 jar Heinz Home Style Gravy, your choice of flavors...Chicken, Turkey or Beef...I like Chicken :)
toothpicks
Olive oil for frying
2 tablespoons fresh chopped parsley

Directions

1- Mix all your ingredients except the gravy, olive oil and fresh parsley
2- Roll the meat into 1 inch round balls (Bite size)
3- In a large skillet over medium high heat brown all sides of the meat balls,
4- Remove the balls and drain the fat.
5- Place the balls back into the skillet over medium low heat, pour in the gravy, add more if needed and gently move the balls around to cover well.
6- Cover the pan and simmer for 8 more minutes
7- Spread the balls out onto a serving platter and stick a toothpick into each one. Sprinkle the tops with fresh chopped parsley. Re- season with salt and pepper to taste and serve at room temperature :)

               I am not sure how I missed the Swedish Meatballs. One of my all time favorites. Another

Hanging in there - some days just by my toenails!!!  ::)  Seem to be plateauing, so need to do some thing to kick start it again. Thank goodness the cravings are not an issue anymore. Thanks so much for all your help!

Anjelhands take your measurements.With women our weight fluctuates so when you are not losing pounds you will see you are losing inches. ;)

Doug, If you use venison for the meatballs, do you have to add fat? I made meatloaf with 2 pounds venison and 1 pound of ground beef. It turned out pretty good. Before FTS I used bread crumbs in it, but now used crushed pork rinds - hubby didn't even notice. I'll have to give these meatballs a whirl.

I add veggies :) Mushrooms are a wonderful edition, as is bell pepper.........brings moisture  8)

When doug makes his ground venison he adds one cube of boston butt to 4 cubes of venison in the grinder.When I make meatloaf I like to use 1 pound ground venison and 1 pound sow . ;)

Umpa, Do you mean sow like pork? Sorry to be so dense! Our son-in-law gave us some ground venison which is very, very dry. I marinated some venison loin meat and beef pieces on Wednesday to make jerky  (with the FTS recipe) so today I am dehydrating it. I'm putting 1/2 in my fake NuWave (it's called a Big Boss) and 1/2 in my dehydrator to see which comes out the best. I got the Big Boss at a yard sale for $4 - it had never even been opened! I love roasting veggies in it! I'll let you know which dehydrating method we like best.

Yes, we are hunters. The pork adds moisture.So does mushrooms,peppers and onions ;)

We call pork 'sow' in my neck of the woods too. I'll have to try adding pork and/or veggies to the venison for moisture because the beef hamburger still left the meatloaf a little dryer than I prefer.
