Title: October Recipe Contest with a great prize- 3 bottles of Zero and a new book!!!

Ok gang here's the contest. I'd like to see hundreds of new recipes posted on the forum during October. The contest is simple.... whoever posts the most FTS friendly recipes wins the grand prize... 3 bottles of FTS Zero and an autographed book, second prize..... 2 bottles of Zero....third prize.... 1 bottle of Zero.

Post all the recipes here on this topic and after the contest we'll move them to the appropriate boards.

All recipes count!!!

So go out there on the web, in your cookbooks, in your recipe box, or just out of your imagination and find all the low carb FTS friendly recipes you can, review them and make changes if required and get em posted.

I'm not much in the way of a chef, but I do love food.  I want to see what the FTS family will come up with.  This should be a lot of fun.  I'll be checking back often on this thread!  Yum! :o :o :o

Hi, Doug! :)

I would like to add that ALL recipes should have been prepared and eaten by the contest entrant.
This avoids propagating bad recipes... Some recipes look good until they hit the palate. ::)

I made Cinnamon Green Tea & Low Carb Spiced Pancakes for breakfast this morning. I wrote down the recipes and took photos. Will they be okay to add?

Okie Dokie - I could use some zero, I'm almost out  :)  I was waiting for someone to be first, but guess it's going to be me.

This is a recipe I found in a magazine and I've converted it -

Spanish (http://www.shop.fattoskinny.com/product.sc?productId=9&categoryId=1) CHICKEN PIE (makes about 4 generous serves) or Spanish (http://www.shop.fattoskinny.com/product.sc?productId=9&categoryId=1) CHICKEN CASSEROLE (without pastry)

2 tblspn olive oil
chicken thigh fillets (thinly sliced) 750g
chorizo sausages (sliced) x 2
50g red onion (sliced/diced/wedge - your choice)
140g red capsicum (diced/sliced)
pitted olives (as many or little as you want)
fresh oregano leaves - optional
chicken stock  3/4 cup (or 1 cube + water)
glucomannan powder (or your choice of thickener) to thicken

Heat oil.  Fry chicken. Remove.
Add chorizo, onion, capsicum - cook 5 minutes.
Add stock and chicken.  Heat.
Sprinkle glucomannan in and thicken.
Add olives (and oregano).

The pastry I've had to amend as it called for white flour and as we all know is a NO NO.
I use this 'pastry' as a base for quiche as well.  I originally used it as a base then wondered if it wouldn't be better as a pie top instead, but haven't got around to it as I enjoy the filling with side vegies.  It has a great flavour.

Pastry -
25g soy flour
75g almond flour
75g golden flax meal
100g margarine softened
1/2 tspn papricka (optional - I don't use when doing quiche)
Opt - parmesan cheese which is sprinkled on top of the decoration pastry

Mix all together, flatten between 2 sheets baking paper
(can put in fridge to firm up).
Place in dish.  (Save a few pieces, place on tray to cook - doesn't need to be blind baked).
Bake blind for 10 mins at 200oC.  Then further 10-15 mins.
Pop in filling.  Decorate with the cooked extra pieces.
Bake till hot through.  Serve.

By my calculation (and ingredients) - Pie filling = 13 carbs/ Pastry = 8.22 (the .22 is the papricka)
Total 21.22/4 = 5.2c

You don't have to follow the filling recipe exactly - you can add more or less of any ingredient (just adjust carbs).

Here are what I made up/ adapted yesterday. Not sure if my carb calculations are correct. Mary loves it when I make up recipes!


Cinnamon Green Tea
by Susie Owens

I love my Yerba Mate green tea. In the summer I make it into lemon iced tea, but in fall it's a wonderful cinnamon tea!

Green tea
1 Cinnomon Stick
Sweetner to taste (I use 6 drops liquid Stevia and 2 drops FTS Zero Sweet)

Brew your green tea as usual. When you steep it, steep for 5 minutes with the cinnomon stick in it.
After seeping 5 minutes, swirl around about 30 seconds, and taste the wonderful cinnamon!
Save your cinnamon stick to use again & again. Let it dry out in a cup on the counter.
You can even get more creative & use mulled spices in a cheese cloth bag.
Isn't fall wonderful?

Low Carb Autumn Spice Pancakes

8 net carbs for entire recipe

2 tablespoons plus 1 tsp Coconut Flour
2 tsp Flax Meal
3 medium Eggs, beaten  
3 tablespoons Cooking Oil
3 tablespoons Unsweetened Vanilla Almond milk
3 drops FTS Zero Sweet
1/2 tsp. Baking Powder  
1/2 tsp Pumpkin Pie Spice
1 tsp Ground Cinnamon
Pinch of Salt

1. Preheat non stick pan, spray or add oil.
2. Mix all together very thoroughly.
3. Pour 1/4 cup batter for each pancake.
4. Cook on Medium flame until browned.
5. Flip, cook other side until brown.
6. Butter
7. Add low carb syrup

Fall Low Carb Chili

Made this recipe from my mother's "Best Chili" recipe. I changed  it  to be low carb and added a fall spice.
My daughter Mary loves fall food and she asked for seconds of this chili. You can put in less tomatoes to make it lower carb. I'm going to sneak in some flaxmeal to make it healthier next time.
32 net carbs for entire recipe

2- cloves garlic, minced
2- lbs ground beef
1- large green bell pepper, diced  
1- large onions  
3- cups diced tomatoes  
2- 15 oz cans black soy beans
2 tbsp chili powder
1/2 tsp white vinegar
1 tsp allspice
1 tbsp oil
2 dashes cayenne pepper
1 bay leaf
salt & pepper to taste

Saute garlic in oil until golden. Crumble the ground beefin pieves & cook 10 minutes, breaking up the meat to brown.. Pour off fat into another pan and cook the diced onion green bell peppers in it until tender. Add to cooked ground beef and tomatoes, black soy beans & other ingredients. Cook covered on low heat for 1 hour. If dry, add water. Serves 6 (made about 8 servings for us though)

Chicken Zoodle Soup

I love chicken noodle soup, so I made this up with my zucchini I had in my fridge.
7 carbs for entire recipe
Serves 4

1 cup zucchini noodles (cut the zucchini in thin strips)
1 tbsp olive oil
4 cups chicken broth
1  teaspoon parsley
1/2 teaspoon poultry seasoning
1/2 cup chopped celery
1/2 cup chopped onion
1 tsp of guar gum or other thickener
1 cups diced, cooked chicken meat

1. Saute zucchini, celery and onion in olive oil.
2. In a pot, combine broth and poultry seasoning. Bring to a boil.Reduce heat, cover, and simmer 15 minutes.
3. Gradually add guar gum to soup, stirring constantly. Stir in zucchini, parsley, celery, onion and chicken, and heat through.

Got creative this morning. Not sure what the carb count is.

Pancake Pumpkins
I wanted make something with pumpkin in it for my daughter for breakfast. She loved these!
Serves 4 (Mary & I ate whole thing, lol)
(net 14 carb for entire recipe )

1/2 cup coconut flour (12 net carbs)
1 cup soy protein   (0 net carbs)
1 tbsp flax meal
1/2 tsp Celtic sea salt
1 TBS baking powder (0 net carbs- Clabber Girl Baking Powder Double Acting, Gluten Free)
36 drops FTS Zero Sweet
2 tbsp Pumpkin Pie Spice (no sugar added or homemade)
1 tbsp pureed pumpkin  ( .5 net carb)
1 1/2 cup unsweetened Vanilla almond milk ( 1.5 net carb)
4 eggs (4 net carb)
4 TBS butter or coconut oil, melted
orange food coloring

Preheat pan or pancake puff on low. In pancake puff pan, add 2 tsp. oil in each well. Heat oil until drop of water sizzles, add batter to wells. Fill 3/4 full. Cook 3-5 minutes. Then use pointed stick to flip it over. Cook 3-4 minutes more.
To make pancakes, just drop in pan as usual. Make small pancakes. Sides will become dry, check if it can be flipped.
My syrup is to watery so it made my puffs fall apart. Might be best to use thick syrup or whipped cream & fruit.  Powdered Xylitol would be a nice touch too. I'll make them again this month for my grandson & paint a jack-o-lantern face on them.

"Chicken Fried" Steak in Disguise

Serves: 2  (9 net carbs for entire recipe)
I was looking at old recipes I found one that Mary & I would both like & voila, this gave me a low carb idea! It's from my my mom's recipes for our large family fugal meals. I low carbed it & Mary & I devoured this  ;D

1/2 pound ground beef
1/4 cup coconut flour  (6 net carbs Bob's Red Mill)
salt and ground black pepper to taste
2 eggs (2 carbs)
3 tablespoons vegetable oil, or as needed

Gravy:
1 tablespoon butter
1 tsp coconut flour, or more if needed (1 net carb)
1/2 cup cream

1. Divide the meat into 4 pieces, and flatten into thin beef patties. Heat a heavy skillet over medium heat until almost smoking, and cook the beef patties until browned on both sides, about 4 minutes per side; set the cooked burgers aside.

2. In a shallow bowl, mix together 1/2 cup of flour with salt and black pepper. In a separate shallow bowl, beat the eggs until smooth, mixing in a half teaspoon of water if needed.

3. Heat the oil in the skillet over medium heat. Dip both sides of cooked burgers into the eggs, then dredge in the seasoned flour; repeat 3 times to build up a thick coating on the burgers. Place the burgers into the hot oil, and pan-fry until golden brown on both sides, about 5 minutes per side. Set burgers aside.

4. Now for the gravy. Here's the old fashioned way my mother did it: Melt butter in the skillet over medium heat, and stir to loosen any brown flavor bits left in the bottom of the skillet. Whisk in 1 tablespoon of flour until smooth. Gradually whisk in cream, cooking until the gravy is thick. Season to taste with salt and black pepper, and serve the  gravy over the chicken-fried beef patties.

I have not had chicken fried steak since my old "life" before FTS.
I can tell the gravy is going to be good!... Scraping the frying pan for stuck-on bits is the secret! ;)

Made up another one today. Searched mole recipes then put my own together. Was a great hit with Mary. She devoured her taco. Mine had cheese and a little fresh tomatoes. She just added salsa instead.

Ole Mole Tacos !!

(14 net carbs for entire recipe with tortillas, 6 net carbs wrapped in lettuce)

3 tbsp oil
1/4 cup finely chopped onion (3 net carbs)
1 tsp minced garlic
2 tbsp mexican seasoning ( 0 carbs Perfect Pinch® Mexican Seasoning)
1 tsp baking cocoa (.3 net carb)
1 tsp cumin
1/4 tsp cayenne pepper
1 tbsp chopped fresh cilantro
1/4 cup salsa ( I used La Victoria Salsa 1 carb per tbsp)
6 oz diced chicken, beef or pork ( 0 net carb- I used Foster Farms chicken strips & diced them)
1/2 cup chopped lettuce
2 tbsp diced tomato ( 2 net carbs)
1/4 avocado, diced  (.5 net carbs)
1/4 cup cheese (I used sharp cheddar)
2 low carb tortillas or large lettuce wraps (8 net carb for my 2 Mission Carb Count Tortillas)

Heat oil, then add seasonings, cocoa, onion. heat couple minutes, then add garlic & cilantro.
Heat couple minutes more then add salsa & meat. Cook a few minutes until meat is thoroughly cooked.
Meanwhile prepare your tortillas. I like to fry them.
Fill tortillas with meat mixture, then avocado, then lettuce, cheese & tomato. I topped mine with fresh cilantro pieces.
Serves 2

Be careful of the coconut flour Susie ;) Mine is 3 carbs for 2 tablespoons a cup is a lot of carbs. Please post carb counts with recipes.What is a puff pan? :)

Another good looking recipe!

Umpa's right!... That's why I usually substitute almond flour for coconut.
It's much lower in carbs, and most recipes are every bit as good. ;)

I made a meal using coconut flour to coat my southern fried steak not too long ago.  It may have been my flour but I thought it tasted kind of sweet.  :P  Not what I was expecting at all  LOL   Did you notice a sweetness in yours Susie?

I didn't taste a sweetness in mine.
I think some foods bring out the sweetness, I've read online that it will have a coconut flavor if sweet added to it.

My fav fry coating still remains finely ground pork rinds. We made onion rings for a dinner party last week and they were delish, Here's the recipe

FAT TO SKINNY Onion Rings, serves 4

Ingredients

1 large onion sliced into 1/4 inch rings
1 teaspoon of Glucomannan Powder
2 eggs well beaten
2 cups ground pork rinds
2 cups frying oil of your choice, I prefer Peanut oil


Directions

1- In a deep skillet heat the oil to about 385 degrees
2- While the oil is heating separate the rings into 4 batches
3- Place a 1/4 teaspoon of Glucomannan In a tupperware container along with 1 batch of rings, cover and shake around to put a light coating on each ring.
4- Coat the rings with beaten egg and dredge in pork rinds
5- Fry to golden brown, repeat the same steps above for each batch

 Pancakes Downunder (had to name them something)

125g almond flour/meal (5c)
4 eggs (0.7 x 4 = 2.8)
pinch salt (0)
1/4 cup xylitol (I use powdered)  (0)
16 drops zero (0)
Total = 7.8c entire recipe

Separate eggs - yolks in one bowl with xylitol and zero, whites in another with pinch salt
Beat whites till stiff/fluffy
Beat yolks till thick (takes about 3-5 minutes)
Fold 1/3 almond meal and 1/3 whites into yolks, repeat till all blended
Pour preferred amounts into hot pan greased with butter (or oil - your preference)
Cook till done
(yum - tasted great cold with pb and jam for breakfast next morning)

Here is something fast I threw together for a snack.  I was really craving something crunchy gooey and sweet (of course) but feeling lazy so I didn't want to bake anything.   :-\  I took plain pork rinds and tossed them with melted butter (the real thing  ;D) cinnamon and a few drops of zero to taste.  Threw them in the micro just to heat for a couple of seconds.  Yummy  Reminded me of cinnamon toast   ;D 

FYI  cinnamon has trace carbs in it (just over 1/2 carb per tsp), so if you use a lot you should measure so you can count it...otherwise I count it as a 1/2 carb snack.  Of course it would also depend on your sweetener of choice and the pork rinds you use  ;) I like the Baken-ets from Frito Lay.  They have a very mild pork rindy flavor, but you could use any brand that you like  ;)

Heavy cream and cinnamon are GREAT on top of an OMM (made with 6 drops FTS Zero and 1/2 tsp cinnamon)!
It's like cinnamon bread pudding (less the raisins). Cranberries work if you like a tart zing! ;)

Had to make another pumpkin recipe. Made these today, forgot to add the FTS zeros weet, and the tops sunk in. They actually taste very good and very moist.

Pumpkin Muffins
19 net carbs for entire recipe

Blend together the dry ingredients:
2/3 cup soy protein
2 Tablespoon flax meal
1 Tablespoon baking powder
dash salt
1 Tablespoon pumpkin pie spice
1 teaspoon cinnamon
1/2 cup Xylitol
12 drops FTS ZeroSweet

Blend together wet ingredients:
1 cup canned pumpkin or pumpkin puree
3 eggs  3 net carbs
1 teaspoon vanilla
1/4 cup heavy cream
2 Tablespoons coconut oil

Mix wet and dry ingredients. Spoon into sprayed muffin cups and bake at 350 for 15-20 minutes. (15 for mini-muffins, 20 plus for full sized muffins) Sprinkle nuts on top if desired. Makes 12 regular muffins or 24 mini muffins.

Before breakfast, I went through my pantry and pulled everything out & wrote them down and the net carbs in them. Most items are from a food bank. I had to get rid of few that were too high in carbs. This made me pretty hungry, so I looked in my fridge & saw diced celery left over. It looked good so I grabbed that & decided I wanted it in some eggs. Was too hungry to add a lot of ingredients.

Here's what I made-

Leftovers Eggs

2 eggs (2 net carbs)
1/2 cup Diced veggies (mine was diced celery and diced red bell pepper 1/2 cup totaL= 1 NET CARB)
2 tbsp oil (I used extra virgin olive oil)
1/4 cup finely shredded cheese (I used sharp cheddar 1/4 cup = 1 net carb)
2 tbsp salsa (I used La Victoria Salsa 1 tbsp= 1 net carb)

I sauteed the veggies in the oil until bell pepper started to brown. scrambled eggs. Added to veggies, stirring constantly. Removed from heat, added cheese. Covered pan. After couple minutes, uncovered pan, slid eggs onto a plate then topped with Salsa. Easy peasy and filling from eggs & oil.

Halloween Peanut Butter Chocolates

I saw fat bomb recipes online. One idea I had was to make molded chocolates easily for Halloween & keep in the fridge. So I adapted a recipe and made these.
12 net carbs for entire recipe

3/4 cup melted refined organic coconut oil
1/4 cup Peanut Butter (8 net carbs for Arrowhead Mills Organic Unsweetened)
48 drops FTS Zero Sweet
4 TBS Unsweetened Cocoa Powder (4 net carbs)
1 stick melted salted sweet cream butter

Put silicone candy mold on a cookie sheet. Mix ingredients with hand mixer, pour in silicone candy mold. Freeze 30 minutes. Store in fridge or freezer, they will start to melt in hot hands though.

SLOW COOKER SAUSAGE RATATOUILLE
Rainy cold day today so I made this. It was so good.

Serves 6
(36 net carbs entire recipe, 6 carbs per serving)

6 sausages (0 net carbs- 1 used Farmer John Hot Louisiana Brand Chicken Smoked Sausage)
1 cup chicken broth
2 cups crushed tomatoes (9 net carbs)
1/2 onion, sliced (8 net carbs)
2 cloves garlic, minced (2 net carbs)
2 cups eggplant, trimmed, peeled, cut into cubes (5 net carbs)
2 cups zucchini, ends trimmed, halved, thinly sliced (6 net carbs)
1 cup crookneck yellow squash, halved, thinly sliced (3 net carbs)
1 cup red bell pepper, cored, diced (4 net carbs)
1 tbsp Juice and zest of a large lemon (3 net carbs)
Salt and freshly ground black pepper to taste
1 teaspoon dried oregano
1/4 cup thinly sliced basil
Extra virgin olive oil

Combine broth, tomatoes, onion, garlic, eggplant, zucchini, yellow squash, bell pepper, lemon juice and zest, salt and pepper, and oregano, stirring to combine. Cook on HIGH for 4 to 6 hours or on low for 6 to 8 hours. Serve garnished with basil, a drizzle of olive oil.

ALMOND SNAPS (my own recipe but based on umpadoodles)

1/2 cup xylitol (0)
1/2 cup soft butter (0)
1 egg (0.7)
58g (approx 1/4 cup) golden flaxmeal (0)
72g (approx 3/4 cup) almond meal (3.0)
1/2 tspn cream of tartar (1.2)
1/2 tspn baking powder (1.0)
pinch salt (0)
30g flaked almonds (can be toasted) (1.1)
tspn almond essence (can be more) (0.5)
xylitol for sprinkling
Equals 7.5 c/16 = 0.46 c each biscuit

Cream xylitol and butter.
Add beaten egg.
Add everything else except flaked almonds.
Fold in flaked almonds.

Place spoonfuls on tray lined with baking paper (makes about 16-20).
Sprinkle with xylitol and flatten.  Sprinkle a bit more. 
They do spread - a lot. (Finish up approx 2-3" x 2-3".)
Bake approx 20 minutes at 175oC. 
Watch carefully from about 15 minutes because they can turn quickly.
They need to be dark golden brown to be crispy.
Take out and leave to cool on tray.  When cold they will still be soft.
Place in tin with baking paper between layers and biscuits not touching as they will stick.
(I reuse the paper they were baked on - just cut to fit tin.)
Leave in fridge.  Perfect next day.
Last in fridge for ages ..... providing you don't eat them.   hehe

Really really easy.

Made tacos again, but changed it up again too. This tasted just like we had at a restaurant once.

Restaurant Tacos
Serves 2

6 oz Leftover roast (mine was chuck roast in crock pot), shredded
1/4 cup diced fresh onion (3 net carbs)
2 tsp La Tapatia or other Hot Sauce (0.2 net carbs)
1/4 cup of La Victoria Salsa (4 net carbs)
Juice of half small lime (2.5 net carbs)
1 tbsp chopped cilantro (0.3 net carbs)
1 tbsp Mexican Seasoning
2 tbsp olive oil
2 low carb tortillas or lettuce leaves (I use Mission Carb balance 6 net carbs each, I'd only recommend this tortilla for those on maintenance)

Saute beef & onion in the oil until onion is translucent. Add hot sauce, mexican seasoning & salsa until well blended. Divide mix between 2 tortillas, top with cilantro.
Add carb count if adding cheese or more salsa or other ingredients. This would great on a taco salad too!

STUFFED STRAWBERRIES

Always a fun finger food for me to take to Pokeeno night with the ladies

Strawberries
8 oz softened cream cheese
A squirt of good vanilla
A few drops of Fat to Skinny Sweetner - sweeten to taste (I don't like things super sweet)
Chopped and Toasted Walnuts (or any nut ~ I sauté in a frying pan with a touch of butter and touch of salt ~ let cool

Mix together the cream cheese, vanilla and sweetener.  Add more sweetener to taste.  Cut the green top off the strawberries and a tiny bit off the bottom so that they will sit flat on a platter.   Whip together the cream cheese, vanilla and sweetener.  Carefully scoop out the very center of the berry and fill with cream cheese mixture (I use piping tool so it's pretty on the top).  Sprinkle with the toasted nuts ~ YUM and PRETTY!

CURRY CHICKEN

This is one of my favorites!  I make it all the time and in bulk so that I can portion it out and freeze it for quick dinners.  Really good with Cauli Rice or by itself with veggies.  Please note that I don't measure but you really can't mess this up.  Make as much or as little as you want at a time.   

12 Chicken Breasts
Water
Salt & Pepper
Butter ~ about 1/2 stick
1 Small Can of Sliced Mushrooms
Sliced Almonds ~ about 1/2 cup (I like them toasted but you don't have to do that)
Curry Powder ~ about 1 teaspoon if you want it mild
Grated Sharp Cheddar Cheese ~ 1 1/2 - 2 cups
Lemon Juice ~ fresh or bottled and about 1 tablespoon
Mayonnaise ~ the real thing ~ about a cup
Broth from the Chicken after it finishes baking ~ About 1/2 cup - 1 cup

Place the chicken in a large baking dish, sprinkle with salt & pepper, dot generously with butter and add water up to almost the top of the chicken.  Cover with foil ~ Bake in 350 degree oven for about 1 1/2 hours.  Check it to make sure it is very tender ~ if not bake a little longer until it is.  Pour off the broth (you can save for another use if you want ~ keep out 1 cup for the sauce)
Make your sauce by mixing and heating ALL the rest of the ingredients EXCEPT the almonds and the mushrooms. When you add the chicken broth start with 1/2 cup and keep adding until it looks like a nice consistency (not too thick and not too thin). Place chicken in baking dish and sprinkle the mushrooms and almonds over top of it.  Pour the sauce on top.  Bake for about 30 mins @ 350. 

It might look hard or time consuming but it truly is VERY quick and easy.  Except for the long baking time for the chicken  :)

Hot Bruschetta Dip

I just made this to take to a party tonight ~ Eat with your favorite low carb cracker.  I am baking some now made with almond flour and sesame seeds.  Double or triple recipe as needed.......

1 pkg cream cheese
2 Tablespoons Dried Basil
A dash of garlic powder - to taste
2 cups of a mild cheese - like mozzarella/provolone/Monterey jack
splash of heavy cream
fresh chopped tomatoes

Melt and mix everything together stovetop and pour into a pretty greased baking dish.  Top with some more shredded cheese if you want to.  Bake 20-30 mins, top with fresh chopped tomatoes and serve immediately.

Swiss Basil Soup

My mother used to make a version that had macaroni noodles and potatoes in it.  This is my low carb version that I love!  The swiss cheese melts and sticks to the veggies in the soup.  YOU WILL LOVE this!!!!!

1/4 cup Olive Oil
3 1/2 oz dried basil
4 pieces of garlic  ~ grated

4 cups fresh cauliflower  florets (can use frozen)
1 small can green beans
1 large can tomatoes ~ cut up
1 medium onion ~ chopped
3/4 pound swiss cheese ~ shredded

THE NIGHT BEFORE YOU MAKE THE SOUP:  Combine the olive oil, basil and garlic and let it set.  To make the soup.  Put everything except the basil mixture and the cheese into a soup pot.  Cover with water (I like mine with a lot of liquid).  Cook until the cauliflower and onion is tender.  Add the basil mixture and the cheese and heat until the cheese melts. OH MY GOODNESS GOOD!!!!! :)

Wilted Salad

My family has been making this for as long as I can remember.  Naturally low in carbs so I didn't even have to tweak the recipe!  Wonderful with any meat entrée! 

LARGE head of Bib Lettuce ~ torn into pieces
LARGE head of Red Leaf Lettuce ~ torn into pieces
1 bunch of green onions (chopped) or red onion (slivered) - (use green to keep carbs lowest but my favorite is the red)
8 or more slices of bacon - cooked crisp and chopped
Fresh sliced mushrooms
Vinegar ~ I like red wine vinegar or apple cider vinegar in this
Water

Put all the veggies and chopped bacon into a bowl.  Take the drippings of the bacon and put in skillet.  Add 1/2 cup vinegar and 2/3 cup water.  Heat and then add salt, pepper and garlic powder (to taste). When it comes to a boil pour it over the lettuce mixture and toss.  YUM!!

Cranberry Spritzers

1 oz PURE Cranberry Juice ~ the only ingredient should be cranberries ~ I use Trader Joes brand......2 carbs
12-20 oz flavored Sparkling Water ~ My favorite is lime or lemon sparkling water ~ Trader Joes Brand
2 drops Fat to Skinny Zero Sweetener ~ or more to taste but 2 is plenty for me

Mix it all together and enjoy instead of soda.  Refreshing and Healthy and I'm Addicted  :)

Spinach Artichoke Shrimp Dip or Spread

I thought of this when I was making up some Spinach Artichoke Dip for a Wedding ~ So good!  You can use it as a dip for low carb crackers or MY FAVORITE use is to put it on top of grilled steak.  Oh My!!   :)

1 block of cream cheese
1/2 cup of mayonnaise (the real thing)
1 cup sour cream
2 cups of Parmesan Cheese
1 box of chopped frozen spinach ~ thaw and press out the extra liquid
1 bag of frozen artichoke hearts ~ I get the Private Selection brand at Kroger and I think it's about 12 oz - thawed &
             roughly chopped
Frozen Salad Shrimp - thawed ~ Use how ever much you want but I like mine LOADED with shrimp so I use 3 - 4 bags
             I get the bags from Kroger because they don't have food coloring, etc.  and are on sale $1.00 per bag often
Garlic Powder to taste ~ I am fairly heavy handed with this  :)
A dash of nutmeg

Bake til bubbly @ 350.  Approximately 30 mins.  
Mix everything together in pot and heat to meld all ingredients together.

PESTO CHICKEN AND ZUCCHINI

We LOVE this and it's an easy one pot meal.  I get the jar of pesto from Sam's Club refrigerated section.  It's as good as homemade and trust me ~ I AM PICKY!!!

Chicken Breasts
Salt & Pepper
Pesto
Fresh Zucchini ~ Sliced into discs
Olive Oil
Butter

Melt the butter & oil in a large skillet.  Add the chicken and brown on both sides.  Cook for about 15 minutes with the lid on.  Add the sliced zucchini around the chicken.  Sprinkle a bit of salt and pepper over everything.  Cover and simmer until the zucchini is tender.  Dollop the pesto on top of the chicken only.  Put the lid back on and let the pesto heat.  EAT!   :)

Fall Ranch burgers
A great recipe to warm my home when using oven broiler. It's nice to have a burger in cool weather sometimes.

1 oz dry Ranch Salad Dressing & Seasoning Mix (Good Seasons 1 net carb)
1 cup pork rinds
1 small yellow onion peeled,finely chopped (6 net carbs)
1 teaspoon black pepper
1½ pound lean ground beef
1 teaspoon salt

Preheat indoor grill or oven broiler.
In large bowl, combine beef, salad dressing, bread crumbs, onions, salt and pepper and mix with clean hands until well

incorporated. Shape the meat mixture into six ¼ pound patties about 1-inch thick. Grill the burgers for about 5 minutes on

each side for medium doness.
Serve the burgers on lettuce bun. Add carbs for condiments & other veggies added like tomatoes etc.

Chili Lime Chicken
Yummy this is and with a nice bowl of spicy tomato soup! That recipe coming next!
I just love this in our cool crisp autumn weather my FTS friends!
(5 net carbs entire recipe)

1 pound boneless, skinless chicken breasts (4 breast cutlets)
4 limes, zested and juiced
3-4 Tbsp. chili powder (I use 4)
2 Tbsp. garlic powder
2 tsp. pepper
1 Tbsp. salt
Cooking spray

Instructions

Preheat oven to 350
Prepare baking dish with foil and cooking spray
In a small bowl combine lime juice, zest, chili powder, garlic powder, pepper & salt
Rub spice mixture evenly over each chicken breast and place in baking dish
Roast for 20-25 minutes or until chicken is cooked through, flipping chicken once during roasting
When cooked remove from baking dish and let sit for 10 minutes before serving
ENJOY low carbers!

Spicy Tomato Soup
The pasta sauce makes it thick. Great for cool weather. My daughter Mary acactually liked this!
Serves 4

3 tablespoons olive oil
1 small onion, chopped (5 net carbs)
1 clove garlic, minced ( 1 net carb)
1 cup low carb marinara or pomodora sauce (12 net carbs}
2 (14-ounce) cans chicken broth
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Saute onion & garlic in olive oil until tender. Add all other indredients, simmer on medium low until bubbly & a nice thick tomatao soup.

Walnut Brownies
40 net carbs for entire recipe

1 c almond butter (24 net carbs Trader Joe's)
1/2 c unsweetebed canned coconut milk (3 net carbs)
2 eggs (2 net carbs)
2 t vanilla extract
1/4 t salt
1/3 c cocoa powder (9 net carbs)
12 drops FTS Zero Sweet
1 bar sugar free chocolate, broken into small pieces( I Simple Lite from Trader Joe's 4 net carbs for bar )
1/3 c chopped walnuts (2 net carbs)

Preheat the oven to 350°F. Grease an 8 x 8 baking dish.
In a bowl whisk together the almond butter, coconut milk, eggs, vanilla extract and salt. Then add the cocoa powder, sugar,  and chocolate chips.
Pour into the prepared baking dish and top with chopped nuts.
Bake for approx. 18 minutes.

Mary & I love hot chocolate so we are so happy to be able to have it now in cooler weather. Made it this morning.

Old Fashioned Hot Cocoa
Serves 2

1/4 cup cream
2 cups vanilla unsweetened almond milk (2 net crbs)
3 tbsp baking cocoa (3 net carbs)
1/2 tsp vanilla
36 drops FTS Zero Sweet

I cook this in a pot on the stove, just like my mother used to. I stir constantly until it's in a rolling boil, the stir vigously for a few seconds & turn off heat. Pour into cups.

Made no cook sugar free chocolates again, this time added mint. Used alomd butter instead of peanut butter.

3 TBS almond Butter (I used Trader Joe's, unsalted 4.5 net carbs)
48 drops FTS Zero Sweet
5 TBS Unsweetened Cocoa Powder (5 net carbs)
1/2 tsp peppermint extract
1/2 stick sweet cream butter (melted)
1/4 cup cream

1969 Italian Meatballs Recipe (Adapted)

Combine pork rinds, eggs, parmesan, parsley, salt oregano and a dash of pepper; mix well. Add beef and mix thoroughly. Form meat mixture into 24 small balls. Brown in hot oil. Add meatballs to spaghetti sauce. Simmer, covered for 30 minutes.


1969 Pasta Sauce recipe (Adapted)
(55 net carbs for entire recipe, 7.6 net carbs per serving)
Serves 8

3/4 cup chopped onion (9 et carbs)
1 clove minced garlic (1 carb)
3 tbsp oil
1 16 oz can of diced tomatoes (12 net carbs)
1 6 oz can tomato paste (25 net carbs)
1 15 oz can beef broth
1 tsp dried oregano leaves, crushed
1 drop FTS zero sweet
1/2 tsp pepper
1 bay leaf

Cook onion & garlic in oil until tender, not brown.

(8 net carbs per serving for meatballs & sauce)

Serve over Shirataki noodles.

Hamburger Soup
Perfect for lunch on a cold day.
Serves 8
33 net carbs for entire recipe, 4.1 net carbs per serving

1 lb ground beef
1/2 cup chopped onion (6 net carbs)
1/2 cup chopped green onion (4.4 net carbs)
1 cup tomato juice (no sugar added) (10 carbs)
1 cup diced red bell pepper (4.5 net carbs)
1 beef bouillon cube
1 tsp salt
1 cup diced jicama (5 net carbs)
2 tbsp snipped parsley
1/2 cup soy flour, pork rinds or konjac powder
3 cups unsweetened soy, coconut or almond milk (3 net carbs)
1 cup cream

Brown meat in dutch oven. Add onion and green & red pepper. Cook until crisp tender. Stir in tomato juice, beef bouillon cube, seasonings and an 1/8 tsp pepper. Cover, simmer 10 minutes. Add jicama & parsley. Cover & cook 15 minutes or until vegetables are tender. In a bowl mix milk & cream. Blend the flour with 1 cup of the milk/cream. Stir into the soup. Cook until thickened & bubbly. Add remaining milk; heat. Season to taste with salt & pepper.

Easy Chia Tapioca

1/4 cup heavy whipping cream
1/2 cup water
1tsp vanilla extract
sweetener equal to 3T sugar
1/2 tsp cinnamon (If you like cinnamon in yours)
3T chia seeds

Mix everything in a container with a lid. Give a shake. Refrigerate and shake after 10 minutes to keep the seeds from clumping.
After about an hour the seeds are soft and it's thick like tapioca.

Very rich tasting - special dessert

Original recipe says 2-3 servings.

I sometimes use less sweetener & water. I shake or stir several times during that 1st 10 minutes.

Found another delicious recipe from my mother's 1969 Better Homes & Gardens cookbook

Oven Swiss Steak
I'm so fond of oven recipes. Cooking in my oven when it's cold, just warms my kitchen nicely. I can get Mary out of her "Snuggie" blanket to eat, lol.
Serves 6
17 net carbs for entire recipe,  2.83 carbs per serving

1 1/2 lbs 3/4" thick Round Steak
1/4 cup of almond flour, Konjac powder or pork rinds (2 net carbs for my almond flour- Trader Joe's)
1 tsp salt
2 tbs oil
1 15 oz can cut up tomatoes, undrained (9.6 net carbs)
1/2 cup finely chopped celery (0.7 net carbs)
1/2 cup finely chopped carrot (4.2 net carbs)
1/2 tsp worcestershire sauce (0.5 net carbs)
Shirataki alfredo noodles (optional)
Trim excess fat from meat (I don't do this, lol), cut into 6 serving size pieces. Combine flour & salt.
With a meat mallet, pound 2 tbs of flour into the meat. In a 10" skillet, brown the meat on both sides in hot oil. Transfer the meat into a 12x 71/2x- 2 inch baking dish or a 2-quart shallow casserole. Drain off excess fat in skillet (I don't do this either, lol). Stir in the remaining flour into the crusty pan drippings in skillet. Stir in undrained tomatoes, celery, carrot & worcestershire sauce. Cook & stir until thickened and bubbly. Pour over meat in baking dish. Bak, uncovered, in a 350f oven about 2 hour & 20 minutes or until meat is tender. Serve meat and tomato mixture over hot noodles, if desired.

Stuffed Cornish Game Hens
Mary loves cornish game hens! She felt like she was eating at a restaurant.
Serves 6
21.3 total net carbs, 3.55 net carbs per serving

1/2 small orange (4.3 net carbs)
3/4 cup cauli-rice (2.2 net carbs)
1/2 cup crumbled almonds (4.5 net carbs)
1/2 small apple, peeled, cored, & chopped (8.7 net carbs)
1/4 tsp salt
1/8 tsp cinnamon
1/4 cup chopped celery (0.7 net carbs)
2 tbsp diced onion (1.4 net carbs)
1 tbsp butter
3 1- 1/2-pound Cornish game hens
Cooking oil

Pre-heat oven to 375f.
For stuffing peel orange, cut in half, and chop over a bowl to catch juice; set juice aside. In a large bowl combine the chopped orange, cauli-rice, almonds, chopped apple, salt & cinnamon. Set aside. In a small saucepan, cook celery in onion in butter, till tender but not brown. Stir into rice mixture. Drizzle cauli-rice mixture with reserved orange juice, tossing lightly.
Season cavities of Cornish game hens with salt. Lightly stuff hens with cauli-rice stuffing. Fasten neck securely with a skewer. Tie legs to tail. Twist wing tips under back. Place hens breast side up, on a rack, in a shallow roasting pan. Brush with cooking oil; cover loosely with foil. Roast in oven for 30 minutes; uncover and roast about 1 hour more or until drumstick moves easily in socket.

Tuna-Noodle Bake
Had to make this because it used to be Mary's high carb favorite, so made it low carb just for her.
36.8 net carbs for entire recipe, 6.13 net carbs per serving

1 8-ounce package Shirataki Alfredo noodles (2 net carbs)
4 tbsp butter
2 tbsp almond flour, Konjac powder or pork rinds (2 net carbs for my almond flour- Trader Joe's)
1 cup unsweetened almond milk (1 net carb)
1/3 cup cream
1 10 3/4-ounce can condensed cream of mushroom soup (28 net carbs)
4 ounces canned green soy beans (3 net carbs)
2 6-ounce cans tuna, drained
2 tbsp chopped pimiento (0.8 net carbs)
1/2 cup minced almonds optional (Add 1.5 net carbs per serving)

Melt butter in saucepan, stir in flour. Add milk & condensed soup all at once. Cook and stir until thick and bubbly. Cook And stir 1 minute more. Remove from heat. Stir in tuna, green soy beans, carrots, pimento and noodles; turn the mixture into 2-quart casserole. Sprinkle with 1/2 cup chopped almonds, if desired. Bake uncovered in 350f oven for 30-35 minutes or until heated through.

Low Carb Minestrone
Mary's favorite soup has always been Minestrone, so I had to get it out of my 1969 Country Cooking cookbook. Got out my rose soup bowls for this dish.

Approximately 27 net carbs for entire recipe, Serves 8 1-cup portions at 3.37 net carbs

4 slices bacon, cut up
6 cups chicken broth (6 net carbs, Swanson)
2 cloves garlic (3.6 net carbs)
1/2 onions chopped (4 net carbs)
1 cup chopped celery (1.4 net carbs)
1/2 cup broccoli, peeled stem (1.82 net carbs)
1 cup green beans (4 net carbs)
1 cup quartered and chopped zucchini (8 net carbs)
small handful of finely chopped fresh basil & fresh sage
1/2 cup fresh parmesan cheese (2 net carbs)

Fry bacon in 5- quart Dutch oven until crisp. Remove bacon; stir in onions, garlic and celery until soft, not brown. Add broth, broccoli, green beans, zucchini & herbs  and bring to a boil; simmering covered for 25 minutes or until vegetables are done. Season to taste with salt. Serve in bowls; top with crumbled  bacon and shredded fresh parmesan.

Parmesan melted when took pic, oh well.

My mother used to make cabbage soups all the time. She was a lifetime weight watchers member. Here is one out of my 1969 Country Cooking cookbook.

Cabbage Beef Soup
This has a long cooking time. Perfect to make on a day off from work and activities. It's such delicious fall comfort food. I just went about cleaning my house while this cooked.
Serves 6
40.74 net carbs for entire recipe, 6.79 net carbs per serving

1 2-pound beef chuck pot roast
2 pounds meaty soup bones
2 cloves garlic, minced (1.8 net carbs)
1 bay leaves (0.2 net carbs)
1 small carrot, coursely cut (will be discarded so counting as 1 net carb)
1/2 medium onion, coursely cut (will be discarded so counting as 1 net carb)
1/2 stalk celery, coursely cut (will be discarded so counting as 0 net carb)
1/2 tsp dried thyme, crushed (0.1 net carbs)
1/8 tsp pepper
6 cups water

4 cups coursely chopped cabbage (11.2 net carbs)
2 cups tomatoes, undrained, chopped up ( 15.2 net carbs)
1 8-oz can sauerkraut, rinsed, drained and snipped (1 net carb)
1 cup chopped celery (1.4 net carbs)
1/2 carrot thinly sliced (3 net carbs)
1/2 small chopped onion (2.9 net carbs)
2 tbsp snipped parsley (0.2 net carbs)
2 tsps instant bouillion granules
2 drops FTS Zero Sweet
2 tbsp lemon juice (1.74 net carbs)
1 tsp salt
1/2 tsp paprika
1/4 tsp hot pepper sauce

In a 3-quart dutch oven place pot roast, soup bones, the  coursely cut 1 small carrot, 1/2 medium onion, and 1/2 stalk celery, garlic, bay leaf, thyme and pepper. Stir in water, bring to a boiling. reduce heat and simmer, uncovered, about 2 1/2 hours or until meat is tender. Remove roast & soup bones. Discard the vegetables and bay leaf (bones got to my dogs, veggies go to my chickens... no waste). Stir in cabbage in stock left in dutch oven. Add undrained tomatoes, sauerkraut, 1 chopped celery, the carrot thinly sliced, the 1 chopped onion, parsley, instant bouillion granules, FTS Zero Sweet, lemon juice, salt, paprika and hot pepper sauce. Simmer, uncovered for 1-2 hours, or until cabbage & carrots are tender.
Meanwhile, while potroast is cool enough to handle, cut pot roast into bite-size pieces. Return meat to the dutch oven, heat through. Season to taste with additional salt, if desired.

Quickie Chili Verde

1 pound ground beef
1 cup roasted sales Verde (Benita) about 12 net carbs
1/4 -1/2 cup water

Brown beef, add salsa and water. Cook down to desired thickness adding any spices to taste.

4 servings @ 3 carbs each

Low Carb Chicken BBQ Pizza

Easy pizza & so tasty!!!! Mary doesn't like low carb crusts I make because they have too much cheese in them, so I got these pitas instead
Serves 1
Approximately 5 net carbs

 1 Joseph's Middle East Bakery Reduced Carb/Flax, Oat Bran & Whole Wheat Pita Bread 4 net carbs
 1/2 cup Spinach 0.2 net carbs
 2 tbsp Walden Farms Calorie Free Original Barbeque Sauce 0 net carbs
 1 oz Mozzarella Cheese 0.9 net carbs
3 oz Foster Farms Chicken Breast Tenders 0 net carbs

Place the pita on a baking sheet and bake in the oven at 375F for 8 minutes. Then, top the pita with the spinach, BBQ sauce, cheese, and thawed chicken. Place the pita back in the oven for 4-5 more minutes, or until the cheese is melted. Enjoy!

Kim chi (Korean Cabbage Relish)

A nice little salad I can take with us when we go somewhere. Mary doesn't like mayo salads but likes this thankfully. I love the flavors together. To add protein and keep carbs down I cook Foster Farms Chicken pieces in Sesame oil & olive oil and add to this.

17.42 net carbs for entire recipe, 4.455 per serving
Serves 4

1 Head Chinese cabbage, cut in 1/2″ strips (10 net carbs)
3 tablespoon Salt
6 Green onions, chopped (4.2 net carbs)
3 cloves Garlic,  minced ( 2.7 net carbs)
1/2 teaspoon Crushed dried hot red chile ( 0.12 net carbs)
1 teaspoon ginger root, chopped ( I keep this in my freezer) ( 0.4 net carbs)

Soak cabbage in salted water to cover 5 to 10 hours. Drain. Combine cabbage
with salt, green onions, garlic, chile and ginger root. Mix well and spoon
into large jar. Cover and refrigerate 1 to 2 days before using. Keeps well
several weeks. Use as relish or salad.

Mediterranean Tilapia
It tasted good, but next time, I'm going to cook the salsa in oil and add some parmesan.

11 net carbs in all of this recipe, 2.75 net carbs for each serving, 4 servings

4 6-ounce Tilapia Fillets
1 tbsp extra virgin olive oil
1/2 tsp chili powder (0.2 net carbs)
1 large fresh tomato or 3/4 cup canned (5.4 net carbs)
1 2 1/2-ounce can black sliced olives (2.625 net carbs)
2 tbsp chopped fresh parsley (0.2 net carbs)
2 tbsp lemon juice (2.5 net carbs)
2 tsp olive oil
2 tbsp fresh basil leaves (0 net carbs)

1. Preheat to 350f. Coat 12X8-inch baking dish with oil or spray (I use extra virgin olive oil spray or I brush on oil);

arrang fillets in single layer. Spread olive oil over fillets and sprinkle with chili powder. Cover lightly with heavy-duty foil;

bake 15 minutes or until fish is opaque in the middle.

2. Meanwhile, combine tomato, olives, parsley,lemon juice, 2 tsp olive oil and basil in a small bowl; mix well.

Remove fish from baking dish with slotted spatula and place on individual plates. Spoon 1/3 cup salsa over each serving.

Simple Impressive Fettucine

Unexpected guests come over & you need to cook low carb? Well that's what Mary & I do with these ingredients. My 34 yr old daughter was amazed!
9.75 net carbs for entire recipe, Serves 2

6-ounces Foster Farms Chicken Strips (0 net carbs)
1 cup of cauliflower pieces (3 net carbs)
2 tbsp extra virgin olive oil (0 net carbs)
1/4 cup Great Value (Walmart) Alfredo Sauce (2 net carbs)
1 package of Wildwood Pasta Slim Spinach Fettucine (tofu noodles) (4 net carbs)
1/4 cup heavy whipping cream (0.75 net carbs)

Sautee, chicken strips in oil in pan until they are soft, then cut them up into bite-size pieces with your spatula.
Add cauliflower and cook until tender. Add Alfredo sauce & heavy whipping cream. Cook until sauce is thickened.
Serve.

Bourbon Street Chicken

What a treat this was for us. Sweetness with ginger & garlic.... was amazing!

6 frozen chicken thighs
1 large clove garlic, chopped (1 net carb)
1/4 tsp. ground ginger (0.25 net carb)
1/4 c. sugar free maple syrup (Walden's 0 carbs)
12 drops FTS Zero Sweet
2 tbsp. Heinz Reduced Sugar Ketchup (2 carbs)
1 tbsp. cider vinegar
1/2 c. water
1/8 c. soy sauce (1 carb)

Place frozen chicken thighs on bottom of crock pot. Combine remaining ingredients and pour over chicken. Cook 8 hours on low, then shred chicken in the slow cooker to a "pulled pork" consistency. Serve with vegetables, over cauli-rice, etc.

Was busy in my kitchen this morning, getting ready for grandson to come over & carve pumpkins & do crafts. Made this:


Goulish Pumpkin Cake with a Cream Cheese Swirl

I made filled cupcakes instead of a cake. I used Stevia & Zero Sweet. Also I had to make in my microwave because my oven went out. I put them in my silicone cupcake molds that i got from dollar store. Microwaved 6 cupcakes on a plate for 2 1/2 minutes. They turned out moist & taste really good! I love the cream cheese filling in the middle. I'm calling my cupcakes "Goulish Pumpkin Muffins" to look tasty for my grandson.

I got 12 muffins and a small 6X6-inch cake out of this mix, which equaled to 16 servings at 2.28 net carbs a serving.


For the pumpkin cake layer:
1 ½ cups Trader Joes almond flour (8 net carbs)
½ tsp. ground cinnamon (0.35 net carbs)
½ tsp. ground nutmeg (0.3 net carbs)
½ tsp. ground cloves (0.35 net carbs)
2 tsp. pumpkin pie spice (.9 net carbs)
½ tsp. salt
½ tsp. baking soda
2 large eggs (1.2 net carbs)
48 drops zero carb sweetener
1 cup pure pumpkin (8 net carbs)
½ cup coconut oil

For the cheesecake layer:
8 oz softened cream cheese (9.3 net carbs)
24 drops zero carb sweetener
1 egg (.6 net carbs)
½ tsp vanilla extract

DIRECTIONS

Preheat the oven to 350° F.  Grease an 8x8” baking pan. (I used 9 x 9)

In a medium bowl, combine the almond flour, cinnamon, nutmeg, cloves, pumpkin pie spice, salt and baking soda; whisk to blend. In the bowl of an electric mixer combine the eggs, sweetener,pumpkin puree and coconut oil. Mix on medium-low speed until blended. With the mixer on low speed, add in the dry ingredients, mixing just until incorporated.

In a small bowl, combine the cream cheese and sweetener in a medium bowl and mix well until blended and smooth. Add the egg and vanilla and mix until incorporated.

Spread ¾ of the pumpkin mixture in the baking pan, creating the base layer.  Then, spread the entire cream cheese mixture on top.  Scoop the remaining pumpkin mixture on top and swirl around.

Bake for 40 minutes.  Let cool and store in the refrigerator.


 Since these are really moist, you might want to use a 9x13 baking pan and cook for 30-35 minutes (or until toothpick comes clean). Let them cool before serving.

I take a high powered blender and fill it with ice. I put a Tbs or two of heavy whipping cream in the blender with the ice. I take two packs of sf jello powder and add to 1 or two cups of boiling water and stir for a minute or two until jello powder has disappeared. I add to ice in blender and blend until ice is crushed.

I love this because it is filling and it takes care of my cravings for sweets.

Had a yummy lunch, and so simple too!

Tilapia with Garlic
Was so easy to make, was good with broccoli on the side and a slice of homemade bread with butter. I've had Tilapia w/ parmesan, but Mary wanted it without cheese.


1 1/2 lbs tilapia fillets
4 garlic cloves, thinly sliced
3 tablespoons olive oil
salt and pepper
lemon, for serving
chopped parsley ( to garnish)

Season tilapia fillets with salt and pepper.
Heat oil in a skillet over medium heat.
Put fillets in first, and when they start to turn color a bit (after 1-2 minutes) add garlic slices.
Continue cooking about 4 minutes or so, then flip fillets.
Fry until cooked through, and fish flakes easily with a fork, this will depend entirely on the thickness of your fillets, so you will need to watch them carefully.
The garlic should turn a dark golden brown, but not be burned. I noticed that the garlic was starting to burn faster than i thought, so I spooned it over the fish, then it wass no longer in contact with the pan.
Serve with freshly squeezed lemon juice and garnish with parsley.

Here is what's for dinner at my house tonight  ;D

Low-carb Deep Dish Pizza
1 Joseph’s pita (you can make it with low carb tortilla or none at all) = 4 net carbs
sprinkle of Italian seasoning =0 net carb
1 Tbs. sauce of your choice (I used a low carb marinara) = 1 net carb
Peperoni = 0 net carb
Bacon = 0 net carb
Ground sausage = 0 net carb
1 strip each of green and red pepper = 1 net carb
Mushrooms = .5 net carbs 
Mozzarella cheese = 0 net carbs
Red pepper flakes for spiciness
These small cast iron dishes are wonderful for single serve pizzas.  You can really pile the yummy stuff on.  This meal is very filling. 
Preheat you oven for 425 and spray your dish with some cooking spray.  Lay your pita in the bottom, spray it as well and sprinkle with italian seasoning.  From there start stacking your favorite ingredients on.  Toss in the oven for 10-15 minutes until cheese is melted and bubbly.  Your toppings are endless…just watch the carb counts  ;)  Really I think the cast iron dish makes this so good.  The crust becomes so crispy....yummmy

The same way Sussie  ;)   Tortillas work wonderfully.  I have also just laid them out on a pizza pan but you can stuff it with more goodness in a dish like this.  I have a friend that has used a muffin tin too....they were cute little party favors  :D

Okay TooSweet, you inspired me!
Here is what I came up with:

Chicken Garlic Pizzas

This is not super low in carbs, I'm sure you can lower carbs another way. This recipe might be best for maintenance.

21.5 net carbs for entire recipe, 10.75 net carbs per serving
Serves 2

2 low carb tortillas or pitas (I used Mission Carb Smart 6 net carbs each)
1/2 cup cream (3 net carbs)
4 cloves garlic, minced (3 net carbs)
1/4 cup fresh parmesan (1 net carb)
1/2 tsp xanthan or guar gum
6 oz chicken pieces
1/2 cup Mozzarella cheese (1.25 net carbs)
1/2 cup diced zucchini (1.25 net carbs)

Pre-heat your oven or cooking appliance. In a small saucepan, heat cream, garlic, and 2 tbsp of the fresh parmesan. Bring to a rolling boil, add xanthan gum, stir a couple minutes until thick. Place your tortilla or pita on pizza pan or in cooking appliance. Spread oil on tortilla, sprinkle a little mozzarella on it. Add 1/4 cup of garlic sauce, spread and top with 3 oz chicken pieces and 1/4 cup zucchini. Top it off with 1/4 cup mozzarella and 1 tbsp fresh parmesan. Bake 10 to 15 minutes. Will be hot, let it cool. It may be bubbly when it's out of oven or cooker. It will solidify as it cools.

This is just a lazy version of Jalapeno poppers I started making. I used to cut the tops off the peppers, core the seeds out with  a spoon handle, put a drop of sf maple syrup in the bottom and stuff with a mixture of cream cheese,cheddar cheese and breakfast sausage. Then wrap with bacon and grill.  Now, I grill whole peppers, bacon and sausage, when they're done, throw in a pan with the rest of the stuff and put them back on the grill until the cheddar melts. Tastes just as good, and takes half the time.

This morning I made a filling Mocha Latte for myself....yummy!


Hot Mocha Latte
Was so filling and delicious!
Serves 1- 3 net carbs

1 cup unsweetened vanilla almond milk
1 Tbsp unsweetened cocoa powder (I used Hershey's 2 net carbs)
12 drops Zero Sweet or to taste
2 tsp instant espresso
2 Tbsp heavy cream (1 net carb)
1/2 Tbsp unsalted butter
1/2 Tbsp coconut oil

Blend the ingredients with a wisk or drink blender. Heat in microwave. Blend again until frothy on top. Drink & enjoy!

Hmmm, looking in fridge & what do I see? Fresh chopped tomatoes, salsa, diced onion, diced cilantro and sliced olives. Ohhh I want it for my breakfast. Let's see, grabbed those items, 2 eggs, shredded sharp cheddar & some salsa. Here is what I made.

Morning Mexican Eggs
Unlike my eggs before, Made eggs separated to keep them fluffy. This time added fresh tomatoes too.
Approximately 6 net carbs for entire recipe. Serves 1

1/2 cup diced tomatoes 2.4 net carbs
2 tbsp medium salsa 1 net carb
2 tbsp sliced olives 0.4 net carbs
2 tsp minced cilantro
1 tbsp minced onion 0.7 carbs
2 eggs 1.2 net carbs
1 tbsp cream 0.4 net carbs
3 tbsp olive oil
1/4 cup shredded sharp cheddar cheese 0.35 net carbs

I sauteed the first 4 ingredients in 2 tbsp oil. While that simmered, whisked eggs & cream. In another pan cooked eggs until fluffy. When done I put them on a plate & covered with a bowl.  When tomatoes & mixture fully cooked, scooped it up onto the eggs & then topped with cheese. place in microwave 25 seconds & voila. a tasty breakfast!

LOW CARB BEEF BOLOGNESE IN CROCK POT
Serves 6
Serve this hearty, meaty sauce over low-carb pasta of your choice. Browning a few of the ingredients before hand adds a rich depth of flavor. For even more flavor, stir in Parmesan cheese before serving. 2.67 net carbs per serving. 16 net carbs for entire recipe. Add net carbs to type of pasta you use this with.

1 tablespoon olive oil
1 onion, thinly sliced (10 net carbs)
2 ounces prosciutto, chopped
1 pound ground beef
8 ounces sliced mushrooms (2 net carbs)
2 cups beef broth
½ cup Trader Joes Rustico Pomodoro Pasta Sauce (4 net carbs)
Sea salt and freshly ground black pepper to taste
1 tablespoons dried Italian seasoning
 
Directions:
Heat olive oil in a skillet over medium heat. Cook onions and prosciutto, stirring frequently, for 5 minutes. Add beef and mushrooms and cook, stirring often, until beef is browned. Add beef mixture and remaining ingredients to a slow cooker and cook on HIGH for 4 hours or LOW for 8 hours.

I love Mexican eggs :)

Here's my recipe for a Mexican Omelet from page 110 in the FAT TO SKINNY Low Carb Cookbook

Mexican Omelet
Servings- 1




Ingredients   

   1½ cups ground beef
   1 tablespoon olive oil
   ½ teaspoon ground cumin
   ½ teaspoon cayenne pepper
   Salt and pepper
   1 teaspoon butter
   2 large eggs (2 net carbs)
   ½ cup shredded white cheddar cheese
   2 tablespoon low-sugar salsa (1 net carb)
   1 tablespoon sour cream (optional) (.5 net carb)


Directions

1.   Pan-fry the ground beef in the olive oil and season with cumin, cayenne and salt and pepper. Taste for personal preference and add additional seasoning as required.
2.   Strain the excess fat and set aside.
3.   Melt the butter in a nonstick skillet over medium heat.
4.   Pour 2 well beaten eggs into the pan and cover.
5.   When the eggs start to set, spoon in the meat and cover with the cheese, then fold the omelet, cover the pan, and remove from the heat. Leave covered 2 to 3 minutes to melt the cheese.
6.   Slide the omelet onto a plate, spoon the salsa on top of the omelet, and sprinkle additional cheese on top. If desired, place a dollop of sour cream on top, then serve.



  TIP- To make a wonderful light dinner or lunch serve with avocado.

Tried this recipe someone gave me. I've made several cake & muffins in a mug. Now wanted to try making one with my golden flax seeds that I ground up.

Cinnamon-Flax Mug Muffin

My verdict- mine was very tasty, but too dry. Two mistakes I made. I put the small mix in a soup mug, which was too large. Also I used too small of an egg. Will make another muffin for Mary & correct these. I might make some Chia gel & add to it too.
This tasted great sliced & with butter.


1/4 cup golden Flax meal
1/2 tsp baking powder
6 drops FTS Zero Sweet
1 tsp Cinnamon
1 large egg
1 tsp butter

Melt butter in coffee mug, add rest of ingredient. Mix until well blended.
Microwave 1 minute. Take out, Slice, butter and enjoy!

Your Cinnamon-Flax Mug Muffin is a variation on the One Minute Muffin (an FTS staple).

Next time, try 1 TBSP (melted) Butter (instead of 1 TSP).
That's one reason why it came out dry for you.

Here's how I do it...

Mix the dry ingredients in one bowl.
And in another, melt the butter. Then, mix in the egg and Zero.
Add the egg-Zero mixture into the dry with a fork and whisk until well mixed.
Then, nuke the combination for 45 seconds at 1000W (longer for lower wattage).

The best way to nuke them is in a small Pyrex bowl.
Comes out perfect for me EVERY time! ;)

I will top with a little more Cinnamon and some heavy whipping cream!... YUM!!! ;D ;D ;D
50-50 SF toppings are great, too!

Skillet Chicken Pomodoro
Serves 2 
14 net carbs for entire recipe
Made this up tonight after looking in my pantry & seeing what can I throw together. Looked in freezer, grabbed what veggies I had diced.  It tasted pretty good.

1 cup diced celery 1 net carb
1 cup zuchinni, diced 4 net carbs
2-3 tbsp oil
2 cloves of garlic, minced 2 net carbs
2 tbsp Kraft Parmesan Seasoning Blends "Rosemary & Glarlic"  3 net carbs
6 oz cooked chicken breast, diced
1/2 cup Trader Joes Rustico Pomodora sauce 4 net carbs



Saute vegetables in oil until tender, add garlic & saute a couple minutes more. Add rest of ingredients.  Cook until sauce thickens. Salt & pepper. Enjoy!

Spicy Good Barbecue Meatballs
Serves 4

I cooked this in the BBQ sauce a large pot & they were done in 15 minutes, stirring every 5 minutes. Had to bake mine my convection toaster oven.
14.2 net carbs for entire recipe,   3.55 net carbs per serving
For the meatballs:
1 lb ground beef
1 large egg (0.6 net carbs)
1/4 cup flax seed meal
1 tsp salt
1 tsp parsley
2 tsp minced garlic (1.6 net carbs)
1/2 tsp pepper
For the sauce:
1/2 cup Heinz reduced sugar ketchup 8 net carbs
2 tbsp Xylitol
1/2 cup Walden Farms Thick & Spicy BBQ Sauce
1/2 cup chopped sweet yellow onion (4 net carbs)

Preheat oven to 350 degrees Fahrenheit.
Form meat mixture into walnut-sized balls and place in a baking pan with sides.
Bake for 20 minutes. Move meatballs to a shallow frying large enough to accommodate the meatballs or crock pot. Combine sauce ingredients in bowl.
Pour over meatballs. Simmer over medium low heat on the stove for 30 minutes stirring every 10 minutes; or if using a crock pot, set to low for an hour, and then low until serving, at least 2 hour ahead of time.
Keep meatballs covered to retain sauce. Serve warm with toothpicks for easy serving.
Makes 4 servings, each are 1 to 1 ½ tbsp size meatballs. 6 meatballs per serving

Microwave Peanut Butter Cookie
Serves 1
Mary really likes this cookie. She want to live off these until payday, LOL

1 tbsp Peanut butter (mine was Arrow Mill Organic 2 net carbs)
1 tbsp Almond milk, unsweetened vanilla
1/2 small-med whisked egg
6 drops Zero Sweet
1 tbsp flax meal

1. Organic natural peanut butter is kept in the fridge, so I melt it microwave for 30 seconds, then add all liquid ingredients, until well incorporated. Then add flax meal until mixed in.

2. Pour onto a small microwave safe plate. Flatten out a bit.

3. Microwave 1 minute

4. Eat warm for soft cookie, let cool completely for crunchier cookie

Low Carb Donut Holes

Made these today in my pancake puff pan instead of frying. I like to use less oil to save money. These were a great sweet treat for Mary today. Mmmm delicious!
1.7 net carbs per serving
Makes 8 donut holes (1 serving)


1/3 cup ground pork rinds
1 tablespoon almond meal
1/4 teaspoon baking powder
3 teaspoons xylitol or equivalent carb-free sweetener
1 egg
1/2 teaspoon vanilla

Oil for frying

1. Heat oil to 360F
2. Mix the xylitol and baking powder well
3. Blend egg and flavorings, mix with the Xylitol.
4. Drop by tablespoons into hot oil until puffed & golden
5. Drain on paper towels
6. Shake some xylitol & cinnamon mixture over top
7. Eat immediately, they do not store well.

Made more of my BBQ meatballs this morning. I used lean ground beef this time & added 3 tbsps of chia gel to add moisture & make them super healthy.
