Title: What's for dinner? How about venison!
Post by: Doug Varrieur on October 16, 2013, 09:58:20 AM
I shot 150 pound doe from 50 yards a few days ago in Kentucky with my bow. Venison is a wonderful meat, it's lean and very flavorful. Umpa and I enjoyed venison kabobs on the grill along with roasted veggies.....Yummy!

I've only had deer once, a long time ago when I was 18.  My mom brought some home from a person at her job that gave her ground deer meat.  When we cooked it, the meat was a bit dry.  I don't remember the taste of it.   ???

Looks great, Doug! ;D ;D ;D

But.... it's VERY lean.
So care must be taken not to overcook it on the grill.

And Noell, ground venison requires oil for pan frying.
And if used in a recipe to replace ground beef or pork, some fat should be added.

When I butchered the deer it offered many different cuts...roasts, chops, loin, back strap, shanks, kabob chunks and various pieces in the ground meat bowl. The trick to the ground meat is to add a chunk of Boston But Pork to every 3 chunks of Venison. That adds the required fat to the blend for a nice moist burger.  Here's a pic of 50 pounds of meat prior to total process.... carnivores we are  8)
