Title: How about Low Carb Banana Bread Yep!!!

Low Carb Banana Bread------------  right from the FAT TO SKINNY Sugar Free Bakery Book :)

Ingredients

   ¾ cup chopped walnuts (optional)
   ½ cup softened butter
   36 drops FAT TO SKINNY Zero Sweetener
   2 beaten eggs
   1½  cups almond flour
   2 teaspoons baking powder
   1 teaspoon cream of tartar
   4 tablespoons flaxseed flour
   2 teaspoons vanilla
   2 teaspoons banana extract

Directions

1.   Preheat oven to 350 degrees.
2.   Grease loaf pan.
3.   Cream butter and Zero Sweetener.
4.   Add 2 beaten eggs.
5.   In a separate bowl mix cream of tartar, baking powder, almond flour, and flaxseed flour.
6.   Add to butter, Sweetener and egg mixture.
7.   Add extracts and (optional chopped walnuts if desired) and mix for 2-3 minutes.
8.   Bake at 350 for 40 minutes until firm.
9.   Cool in baking pan on counter for ten minutes before removing bread.
10.   Remove the bread from the pan and cool on rack completely before slicing.
11.   Store in fridge to preserve freshness.

I'll have to get banana extract some time. This sounds delicious!

I made the banana bread. It was delicious,  but I had to eat it with a fork. It took an extra long time to bake, and then it fell apart. Any ideas of what I may have done to mess it up?   :(

Reduce baking time ;)
