Sometimes I miss candy bars with the soft filling and the kinda crunchy chocolate coating. These aren't exactly candy bars because the chocolate coating is only on top, but this 2-layer candy is yummy.
Candy Crunch (16 servings)
Bottom Layer
8 oz. cream cheese, room temp
1 teaspoon vanilla
2 teaspoons cocoa
FTS ZERO to taste
1/2 cup chopped nuts of choice
Use a fork to cream together all but the nuts. Stir in the nuts and freeze 5 minutes. Shape into a 6 inch square on parchment paper.
Top Layer
2 squares (2 oz.) Baker's unsweetened chocolate, melted
FTS ZERO to taste
Stir the Zero into the chocolate and spread over the bottom layer. Use a sharp knife to cut into 16 squares. Freeze 10 minutes, then use a kitchen knife to scrape each square up, and place on a plate. Cover and keep refrigerated.

Are you a member here? The reason I ask is that I like to click on a member and check their posts - but cannot do that with your posts.
I also recall you were on another forum and had been writing a recipe book.
Did you ever complete that project?
