What other cheeses do you guys think would work beside provolone?  I love cheddar, swiss, gouda, and mozzarella but I don't imagine they would get hard like that when melted.

Hi Mark  :)  I've used a couple of different cheeses.  Typically any that you like would work, just know that the harder cheeses work the best though.  The softer ones like Mozzarella turn out a little chewy.  I've used shredded Cheddar, Parmesan, Parmigiano-Reggiano, Havarti, Pepper Jack, Provolone and Mozzarella in various ways.  They make great chips for dipping too.  ;)   I have to say my favorate go to cheeses are the Provolone (very mild flavor so goes well with most things), Parmesan (comes out crispy every time) and Cheddar (just because I always have it on hand and who doesn't like Cheddar  Haha)   So many cheeses and so little time   ;D ;D ;D

While shopping last night I ran across a great deal, a six pound roll of Land O' Lakes Provolone cheese for $1.95 per pound! Twelve bucks later and it was mine  8) Time for taco's!
