I love a good tomato and I love eggs and cheese.....so...... here it is, the perfect marriage :)
Easy Peasy Ooey Gooey Cheesy Egg Stuffed Roasted Tomato!

Ingredients
1 medium tomato
1 large egg
1/2 cup shredded cheddar cheese
Directions
1- Preheat your oven to 400 degrees
2- Core the tomato and drop in an egg
3- Roast the tomato until the egg starts to firm up
4- Cover the tomato with the cheese and continue baking till melted
