Title: Cherry Bombs n' Lemon Slaw

Hi gang, in planning for a dinner party yesterday I went to the market for ingredients. While there I spied a tub of bright red pimento peppers in the markets well stocked olive bar. The peppers were already topped and seeded. I immediately knew what kind of recipe I wanted to make with them! I bought a couple dozen and headed home with my bags. Last night this recipe was served and disappeared faster than I made it! If you've never had a pimento pepper its a wonderful experience, they start off sweet then comes this wonderful heat. If you can't find pimento peppers you can substitute sweet or hot cherry peppers which most markets carry in a jar.


Cherry Bombs n' Lemon Slaw

Ingredients

Pimento peppers topped and seeded
Cream Cheese
Almonds
Shredded cabbage
Olive oil
Lemon juice
Salt and pepper
Fresh parsley for garnish

Directions

1- Stuff the peppers with cream cheese then stuff in an almond
2- Mix equal amounts of olive oil and lemon juice and add to the cabbage, toss then season with salt and pepper
3- Arrange the peppers on your bed of lemon slaw, garnish with parsley
4- Watch how fast they disappear!

Did they grab the lemon slaw too?

These  are wonderful! :) I dont know about the slaw doug cleaned up.
