Hey everyone, I have never posted a recipe before, but this is a favorite at my house. It was actually an experiment, and now we eat it all the time:)
1lb chicken breasts, cut into short, thin strips
1 head broccoli, washed and cut into bite size pieces ( we like the stems to)
1 head cauliflower, washed, and cut into bite size pieces
1/4 cup sliced mushrooms (if desired)
Oregano to taste, I use about three or four good shakes out of my jar..quite a bit.
Tarragon, about two shakes
1/8 tsp Garlic powder,
a few dashes of white pepper
Sea Salt to taste.
1/2 cup water
1/2 cup sharp cheddar or asiago cheese (we mixed the two once, and it was great!)
First, I saute the chicken on high heat, until it is thoroughly cooked, but not brown. (I use a bit of water, but I am sure you could use cooking spray)
turn down the heat and add the water, veggies and spices. Mix thoroughly, then, cover and simmer about 10 minutes or until the veggies are tender but not mushy. Turn off heat, sprinkle cheese on top, then recover pan. Wait a few minutes for the cheese to melt, and serve.
My kids love this dish, and it gives them their protein AND veggies in one quick, easy dish, and I don't get all the carbs! I really hope you guys like it :) Thanks! Renae

Umpa: My son is actually DETERMINED to teach himself to cook! LOL I get quite the interesting things happening here.. that's what happens with a creative, food-loving, hyperactive kid ~giggles~
Beebs: I was actually thinking that same question to myself...methinks we will make it tonight, and see what we come up with as far as serving sizes, and read all of our labels to see the carbs, thanks for asking:)

Well, I gave you 5 stars! I enjoyed the dinner very much, it was served with cauli mashed potatoes. Here's a pictue, I called it Zombie Girls Chick n' Cheese :) keep the recipes coming.

Im not sure what happened I talked to Doug and he hadnt heard anything either I dont think. MAybe she got bored and quit or lost all her weight.....

Toddy do you have the carb counter book?If you don't ask doug when it comes time for your free book.This is a great recipe i have made it.It makes about 8 servings .brocolli is 2 carbs per half cup and cauliflower is 1.5 per half cup.

Hi everybody, I dunno if you will all get this ... I had a crazy lifechanging event (s) Mainly, I moved and lost internet service for quite awhile, My sincerest apologies! I will work on the calorie and serving chart on this recipe, we still make it, and we still love it as well:) I am not done losing weight yet!! lost 50, and have 47 to go for my goal. Okay, so basically, we split the whole thing into four servings once all ingredients are combined and it is cooked. I looked up all the nutritional info on everything used in this recipe, and figured it all out per serving, it is as follows:
Total Calories: 303.5
Fat: 9.6g
Carbs: 16.1g
Protein: 47.1g
Fiber: 8.8g

Your carb counts seemed low given the amount of cauliflower and broccoli at about 1.8 net grams each.
You might want to recheck your carb counts.
I often use the USDA's website at: http://www.nal.usda.gov/fnic/foodcomp/search/ (http://www.nal.usda.gov/fnic/foodcomp/search/)
Let's take a look at the veggies:
1 medium head cauliflower (raw) is 29.2 carbs with 11.8 fiber (17.4 net carbs).
1 cup chopped broccoli (raw) is 6.0 carbs with 2.4 fiber (3.6 net carbs).
Figure 3 cups per medium head is 18.0 carbs with 7.2 fiber (10.8 net carbs)
Together, assuming your other ingredients have 0 carbs, they total 28.2 net carb grams, divided by 4 servings is about 7 net carbs in each serving.

Thank you for that Mouseissue, I looked up all my stuff on Livestrong.com, it's where I track all my carbs and stuff...I had a hard time with the broccoli and kinda guesstimated it...and the cauliflower I split into fourths they only had info for one head, I spent a long time trying to find my info for sure...never was great at research in school hehehe I put that site into my favorites it seems to be a bit more reliable ;D
