I posted the recipe.  Thanks for the cheering section.  I've gone back to basics in my meal plans and only use sweetner in my coffee.  I have no sweet tooth anymore.  I know the last pounds can be the hardest so I've hunkered down.

A Brancrisp a day though, whether I want it or not.

Ask Umpa / Three-in-one Seafood Casserole

Ingredients:
1 cup dry white wine
1 small onion
1 T minced parsley
1 t salt
1 lb uncooked scallops (thaw if frozen)
1/4 c butter
2 t lemon juice
1 - 3 oz can sliced mushrooms (reserve liquid)
4 T FLOUR
1 c half and half (I'll use diluted heavy cream)
1/3 cup grated cheddar cheese
1/2 lb small cooked, peeled, deveined shrimp
1/2 lb cooked shelled crab, flaked

Directions:
Combine wine, onion, parsley, salt and scallops in a large saucepan.  Bring to a gentle bubbling point (just short of boiling).  Reduce heat and simmer, covered, just until scallops are done.  Remove scallops from pan; cut in halves.

To the liquid in the pan, add 2 T of the butter, lemon juice and liquid drained from the mushrooms.  Heat until butter melts.  Add enough water to make this 2 cups.

In another saucepan, melt remaining butter.  Add FLOUR. Stir a few minutes over moderate heat.  Gradually add wine mixture and half-and-half.  Cook, stirring, over moderate heat until thickened.  Add cheese, stirring until cheese melts.  Add scallops, mushrooms, shrimp and crab.  Heat through before serving.

Except for the flour, it looks great.  Thanks, in advance, for the help.

Thanks.  I'll post the recipe.  It's a casserole with a lot of fish which is fairly expensive in our land-locked state so I'm not wanting to risk it.

Umpa,
I have several old recipes that would be great for FTS except for the use of flour as a thickener.  I have xanthum gum in my pantry but wonder if there is a calculation for the amount to substitute.  If there is something better to use, I'd love to hear about that, too.

I'll have to wait to find out.  I remember when the only time watermelon was available was Memorial Day to Labor Day.  I'm not a fan of the winter variety.  I think I have a hankerin', not a cravin'.

Watermelon has always been one of my favorite summer treats.  Since, God willing, I'll be at goal by summer, I'm wondering if the sugar content will be too high for my sugar-free system.  It's funny that last year, the thought of a watermelon-free summer was really hard to take.  Now, a few melon balls in with my berries sounds great.

I almost don't know myself.

It's likely that your body is adjusting to the changes it has made and the weight you have already lost.  Take your measurements because it's likely you are shrinking without a change in your weight.  Write down everything you eat.  It's also likely that you've had "carb creep," eating more carbs than you realize.  All of us need to check that occasionally.

My personal favorite piece of advice:  make sure you are drinking enough water.

How about taking "disappointing" results on the scale as a challenge?  Once you know that FTS is the way to better health and a slimmer body, what the scale says is merely information.  Yippee if it goes down.  It definitely feels good but, if it stays the same or goes up a bit, that is a reminder that this is not a sprint, it's a lifetime.  Enjoy the ride!

If you refrigerate the low salt jerky you are going to use soon and freeze the rest, the preservative value of the salt won't matter.  If the goal is portablilty, this doesn't help.
