I made the "strawberry fool" over the weekend, and it was really good.  I used the food processor instead of a hand chopper, and I got the strawberries a little too thin.....If I had left them in bigger pieces, it wouldn't have been so juicy.  Either way....it was still a nice treat!  :)

If you haven't already...GOT to try Doug's recipe for the pumpkin pie!!  It's even better if you wait till it's been in the fridge a day.  Oh....and top it with redi-whip!  SOOO good.

That is so neat Alex!  ha ha   Yeah....we got married in 1986 and our daughter was born in 1991.  As for the movie, when Darryl Hannah climbed up on the street sign for "Madison Avenue".....I was hooked!  I thought...."Hmmm If I ever have a little girl...."  ha ha

I haven't tried this, but a Navy Mom friend to me & Owensmath gave us this recipe:

Sugar Free/Low carb Strawberry Fool

2 cups of strawberries (can use frozen, thawed)
1 cup heavy cream
1 tsp vanilla extract
Sugar substitute to taste

Preparation:
1) put 2 cups of strawberries in the blender or food processor to chop.  Add sweetener to taste. Use 2 Tbsp - if you want it fairly sweet.  (You can use a hand chopper to keep the fruit rough chopped..not pureed.)

2) whip cream with vanilla and 2 Tbsp sweetener

3)For a nice presentation, put a Tbsp of strawberry mixture in the bottom of a wine glass or clear dessert dish.

4) Fold the rest of the fruit mixture in with the whipped cream, but don't mix it too well:  You want to have wide streaks of red and pink throughout.

5) Spoon into dessert dishes and garnish with strawberries.

Makes about 4 servings.   Each serving has 5 carbs and 4 grams of fiber so net 1 carb per serving.

Hi Alex!
I've lived in Georgia all my life, and I love it here.  We are in Gainesville which is about 50 miles NE of Atlanta.  Savannah is a beautiful place!  I love that name too!
Our daughter's name is Madison.  There's also a little town called Madison in our state. (We first thought about that as a name when we heard it in the movie, "Splash" ....about the mermaid that showed up in New York City! ha ha)

Hi Keke,
I had a coconut craving a couple weeks ago and made SEVERAL things from the recipe exchange.  They were all GREAT!  I can say that I have made these:
coconut macaroons
creamy coconut cheesecake bars
coconut cheesecake
Oh, I made Doug's pumpkin pie too!...amazing!
I tried the almond brownies that Owensmath made,  and they were FANTASTIC!

I am sure you will find something that you will love!

Oh and let ME say....those almond brownies that Owensmath made were SO moist and delicious! .....totally "lip smacking" good too!!  It's fun to check out the recipe exchange....but the actualy FOOD exchange is WAY better!  ha ha

Oh my goodness!!  I got to try Donna's almond brownies on Saturday, and they were absolutely delicious!!   I ate that thing SO fast like somebody was going to try and take it from me!!  ha ha  Thank you Donna!  It's so much easier doing this with a friend.  You are the BEST!!!

I am still amazed at how FTS works.  I thought I had tried EVERY diet in the world.....HOW did I miss this information?  No doctor EVER told me to just cut out the sugar.   I just can't figure out why???

Still trying new recipes....so I baked this coconut cream cheesecake Friday night...OMG!!!!!  This was REALLY good!  I am still amazed that we can make desserts, eat them, and still lose weight!  Thanks everyone for posting these fantastic recipes!!!
