Welcome Halfmoon and Kumaswed.  This truly is a GREAT forum with loads of recipes and wonderful people guiding you along the way and VERY supportive.  There are times I am not on the forum for quite a while due to busy schedule and no internet at home.  So, I just recently saw that you both were new and wanted to greet you with a hearty hello! 

Also, Kim, the chicken patties sound wonderful and have downloaded your recipe along with Doug's dill mayo recipe.  Will be trying these out shortly.

Oh, just another note with the 'gluten free' products on the market now.  This new book also mentions that the gluten free products are just that, gluten free....BUT, they list in their ingredients using either corn starch, potato starch, brown rice starch or tapioca starch.  No wonder there are many obese celiac people out there now-a-days, with all of the extra sugar they are pumping into their bodies.

You are too funny, Doug!  I do understand the 'carb creep' though - and it is important to not over indulge.  Maybe this is more of a snack or if you do one or two - I'm rethinking it.  They are delish, though!  

Doug, I absolutely love your idea of the cucumber sandwich, which I am having right now.  Such a great idea.

I also am on to my next book my Dr. prescribed for my husband, who is diabetic in tandem with your book.  It is called Wheat Belly by Dr. William Davis.  We are now cutting out all wheat products and you would be surprised (maybe not) how wheat gets into our gum coatings, medicines, cheese coatings (like I think I read somewhere in the forum that you published stating to just use the cheese you shred yourself.  I was really enlightened and so was Ken, my husband.  Reading labels is fine, but now reading ingredients is especially important.

yes, as I was thinking about this, I didn't count zuccini carbs - I am going to look on the web shortly.  if you only have a normal size and not over indulge, it should be okay.  It was very good and

Here is what I am having for lunch today.  New idea form me.  Cook a whole chicken in water cause I love freezing the broth for my husband's jumbalaya.  Then shred chicken and mix mayo; crushed flax seed; blanched almonds; plain sunflower seeds and sea salt to taste and mix. (add as little or as much of the above as you like).    Slice up tomatoes; raw zucinni (I used yellow); raw mushrooms.  now layer.  Lay down the sliced tomatoe.  Ontop of the tomatoe place the zucinni slice, then the sliced mushroom; then on top of that the chicken concoction and then I add a black olive on top of it all.  Sprinkle a little sea salt on top, if you like.  So cool and refreshing for lunch.  Don't know the net carb count, but as you can see, all good stuff.  ENJOY!

Thanks for the tumeric tip.  I am now going to go out and buy the capsules.  I didn't realize until just recently that they were sold as a supplement.  I just buy the spice and put it on my food.

I have to say, not too many people I know, including my husband, have a flair for the weird concoctions as I do.  LOL!  On the other hand, maybe I haven't met the right crowd of folks.  I just KNOW they are out there!

I also am a newbie with eating collards.  BUT, I used them raw as a wrap.  I had them today and was breezing through fts and saw this recipe and how appropo.  My recipe today was the following:

Cut up:
Celery
Brocolli
Black Olives
Green Olives
Incorporate sardines
Top with mayo
I also use Tumeric Root (India Powdered)

Turmeric has been used in Indian Ayurvedic and Chinese medicine for almost 4,000 years. More recent scientific studies have shown that curcumin, the active ingredient in turmeric, may help treat a number of illnesses, such as digestive and liver problems, cancer, skin diseases and inflammation. Curcumin is also an antioxidant and may help the body get rid of free radicals and to repair cells and cell membranes.


Mix all together and cut the thicker section of the collard green and then add this concotion and roll it up as a wrap and ENJOY!  Really tasty, (or is it just me????  ;)
