Well, maybe this evening I will attempt one last time (or so I say...this could go on to infinite) to make a low carb pizzelle.  Is this how a creative chef feels - frustrated and them many attempts.  I'll keep you all posted and once I create the recipe I will share with you all.

Another thing about planting Collard is that they taste better once they have been through a few frosts, which then brings the sugars up into the leaf.  Hmmmm sugars...is that a deterent?  Tony, what do you think?

Vegetarian Recipes / Collard Greens
« on: November 27, 2012, 02:16:53 PM »
I planted Collard Greens in my back yard and just found out that you can use these enormous leaves as a wrap for sandwiches.   Just have to take out the thich stem up the middle of the leaf.   I also found out that one cup of the greens (I use raw) are 2 grams of carbs and 1 gram dietary fiber - not bad.  If anyone comes up with a different gram count, please advise.  So, I smothered cooked squash smashed in the leaf along with brocolli from the garden cooked and other greens of choice.  I have to admit, I am not a vegetarian, but have pondered the thought of becoming one, except I love my vennison too much!  Oh well, so much for that!

Ask Umpa / Miracle Noodles

Hi Umpa,

Please tell me that the Miracle Noodles taste good!  I saw them at one of our health food stores in the area and picked up the little floaty package and saw what looked like little white worms floating around in a wet base.  I couldn't get past how weird they looked.  Once you place in a spagetti sauce, do they immediately transform into great tasting pasta noodles or rice, whichever you have bought?  They had angel hair and I think a linguini.  Signed:  freaking out!  I know Doug wouldn't vouche for them if they didn't taste good, but please help me out here.  My brain is worried!

I actually went home and read the label and this one that I bought was a low carb protein powder ... WHEW!  So, Again I tried to make the pizzelle doegh and again it came out too thick.  So, I decided to make the recipe as it called for in the recipe book - regular flour although I used Xylitol and I bought JUMBO eggs.  And, now I see how the dough is supposed to look - very beautiful and a great deal thinner than the one I was making.  So, my last attempt to make low carb pizzelles is coming to an end I feel.  As I now know how the dough is supposed to look, I can adjust my recipe - I was using farm fresh medium eggs and will now use jumbo eggs. Will also use Soy Flour and Soy Protein Powder.   Forget just using the egg whites, cause I feel the natural egg state lends to the taste (although I could be wrong here - but please don't burst my bubble).  My goal is to make two dozen pizzelles for each person at work (small office) for Christmas.  Wish me a great deal of luck, as this will be my fourth attempt and I am getting tired of this....lol!!!  BUT, in the end if it all works out it will be worth the effort.

I just bought some soy protein powder.  IS there a low carb soy protein powder.  I didn't realize that - Went to Health Hut today and just bought it and didn't read the label - Dumb!!!  BUT, On my behalf, when I see the product labeled Protein, I don't even think twice that there are carbs in it.  For example, meat is protein and hence, no carbs!!!  Where am I lacking in intelligence at this point and don't say EVERYWHERE!  LOL !

General Discussion / Mind to Body Catch Up
« on: November 15, 2012, 12:18:59 PM »
Doug, in listening to your CD I remember you saying it took you a year to acknowledging that you had really lost the weight and it was off for good.  I was 157 and now 129 and I still see myself in the mirror as that 157 pound woman.  It is so true that it does take time to have it become a reality.  I think the problem is is no faith in yourself and still believing that one can't keep it off, so your mind keeps tricking you to think you are at this larger weight, so that when you gain it all back you aren't too disappointed.  Does that make sense.  The reality is, is that the weight is OFF and it is going to stay OFF and your mind has to do a bit of catch up with your body.  Giving it time they will meet up again and all will be fine.  The nice thing is is that people are noticing and lavishing commenting and wanting to know how I did it.  My husband and I are big fantastic advocates of the book.  Thank you very much my dear man.
