I found this recipe and was wondering what you thought?  It looks to me it would be low carb and yummy.

Creamy Marbled Cashew Chocolate Fudge (Sugar-Free)

Makes 12 squares

Ingredients:

    - 1.5 c pastured heavy cream or full fat coconut milk
    - 4.5 oz 100% baking chocolate (I use Dagoba), cut into small pieces
    - 3 Tbsp unsalted pastured butter
    - 1 droppers NuNaturals Alcohol-Free Vanilla Stevia or 1/4 c honey divided
    - 9 oz roasted unsalted cashews
    - 1 lb pastured lightly salted butter (I use Kerrygold), chopped into large cubes
    - coconut oil for greasing pan

Method:

    1. In a small saucepan, heat heavy cream, chocolate, and 3 tbsp butter on medium until it comes to a low boil whisking often. Once it comes to a low boil, turn off the heat and whisk until the chocolate and butter are fully melted and a thick chocolate sauce forms. Whisk in 1 dropper of stevia and set aside to cool.
    2. In a food processor or high speed blender, process the cashews on high until a crumbly paste begins to form. Slowly add pastured butter one cube at a time until it is all added and a smooth, fluffy frosting mixture forms. Add the other dropper of vanilla stevia and process to combine. Taste and adjust to your sweetness quotient needs.
    3. Pour the cashew batter into a greased 5×7 glass pyrex baking dish that is 3″ or more high. Smooth the batter to distribute evenly. Then pour the chocolate fudge evenly over the cashew batter. Using the handle of a fork, make swirling motions throughout the chocolate mixture to create the marbled effect for the fudge.
    4. Place the dish into the refrigerator and let cool until set, approximately 3 hours. If you are really impatient, throw it into the freezer for 30-45 minutes.
    5. Once it is set, portion the fudge into 12 equal pieces then serve and watch people swoon whilst unwittenly consuming a sugar-free dessert!

General Discussion / week 2

Week 2 I'm down 2 pounds.  I think I would have done better if I had not gone to Carrabba's last Friday.  I had the chicken Marsala with steam broccoli water to drink.  No bread no pasta, however when I woke up Saturday my knees were hurting so i'm thinking there had to be some kind of wheat in my dish.   I was unprepared for the weekend so I end up eating salad and chili from Wendy's Saturday and Sunday for my lunch breaks.  All in all I'm happy with my 2 lb loss this week.

What does it taste like, does it have an after taste?  Have you used both granular and confectioners?

Yes, I'm sure Dr. Atkins would not approve of the changes.

General Discussion / I'm back....

It's taken me a few years to get back and realize where I made mistakes last time.  My first mistake with FTS way of life is I did not read the book.  That was a really huge mistake, everyone should read this book before starting FTS.  So I now have the book and I was really surprised at some of the foods you can eat on the FTS plan.  I'm slowly moving into the FTS way of eating.  I've been searching the net for recipes and low carb ideas and I gone food shopping the last three days.  I am finally realizing that the FTS plan is all about clean eating.  Something that we have gotten away from with all of our modern day ready to eat foods/fast foods.  Also I'm from the south and just about everything we eat is loaded with sugar in one form or another once it get into our bodies.  I was amazed reading the bacon package and seeing sugar listed on the contents.  People wonder why they can't lose weight if they only realized how much sugar they eat everyday without knowing it.  So now that I'm back....  I really need to lose this other person.  I started the FTS back in 2011 and some how I fell off the wagon.  I went back to Atkins and much to my dismay I gained weight.  I know it was there pre packaged food loaded with carbs.  Wow, what a wake up call when I gain weight on Atkins.  Sooooo then I started back on Weight Watchers and really enjoyed that I could eat anything as long as I counted points.  Well I have lost  between 10 and 15 pounds and that's it.  I'm up one week and down the next so I'm back to the yo-yo dieting. This has been going on for a little more than a year.  I am so done with Weight Watcher and Atkins.  As I have started moving back to FTS and clean eating I'm starting to feel better. Today when I got off work my hands were not swollen so that tells me this is working for me.  It's really hard not to jump on the scales to see if I lost anything the last couple of days.  I told myself that I will only get on the scales once a week, I do not want to get discourage. I will take my cues on how I feel and how my clothes are fitting and one day at a time.  I have my dr's appointment in just over a month and I'm curious to see how my blood work will look as apposed to my last check up.

Thanks everyone for the Welcome.  Doug it's OK I love snowmen and snowflakes, I live in the south so I don't really see snow all that much, other wise I'm sure I wouldn't like them so much. LOL
