I'm only on my second day, but just tried something I loved. Such a satisfying lunch!

I cut a cucumber into thick round slices, spread scallion cream cheese on each, and then topped each one with slices of smoked salmon. OMG it was good. The colors were really pretty against the white plate too. I'm going to take a picture next time I make this, so I can share how appetizing it looks.

Also, it was easy to take to work with me.
