Ingredients:
2 cups cooked quinoa
3 medium-sized sweet Italian turkey sausage links, sliced.
1 yellow onion, sliced
¼ cup freshly minced basil leaves
1 tbs oregano
1 tsp virgin olive oil
1 yellow bell pepper, sliced
1 red bell pepper, sliced
¼ cup capers
1tsp balsamic vinegar
Directions:
Heat up the virgin olive oil in a large skillet. Sautee the onion, sausage slices and bell peppers for 5 minutes.
Add the oregano and cook for another 6 minutes.
In separate bowl, combine the quinoa, balsamic vinegar, capers and basil leaves.
Serve the items in two separate bowls, but combine them on your plate. Serves 4.
