Ask Umpa / zucchini lasagna

Any suggestions how to make this more carb friendly - less sugar and still have red sauce instead of white




Ingredients:

Servings:

Units: US | Metric
2 ½ cups zucchini , sliced 1/4 inch thick (about 2 medium)
½ lb lean ground beef (I use 1 lb.)
¼ cup onion , chopped
2 small tomatoes , cut up
1 (6 ounce) can tomato paste
1 garlic clove , minced
½ teaspoon dried oregano
½ teaspoon dried basil
¼ teaspoon dried thyme
¼ cup water
1⁄8; teaspoon pepper
1 egg
¾ cup low fat cottage cheese (or low fat or fat free ricotta)
½ cup mozzarella cheese , shredded (I use 8 oz. divided)
1 teaspoon flour
Directions:

Cook zucchini until tender, drain and set aside. Fry meat and onions until meat is brown and onions are tender; drain fat. Add next 8 ingredients and bring to a boil.

Reduce heat; simmer, uncovered 10 minutes or until reduced to 2 cups.

In small bowl slightly beat egg.

Add cottage cheese, half of shredded cheese and flour.

In (1 1/2-qt.) baking-roasting pan arrange half of the meat mixture. Top with half of the zucchini and all the cottage cheese mixture. Top with remaining meat and zucchini.

Bake uncovered at 375 degrees F for 30 minutes.

Sprinkle with remaining cheese. Bake 10 minutes longer.

OMG Day 14 I lost 3 lbs! I know its not much but its sure better than nothing! Thanks for everyones support and all who've listened to me despair the last two weeks!

I too am having trouble. Today is my 10th day and I am up 1/10 of a pound from where i started. My blood sugars are down somewhat which is a good thing but I really want to see the scale go down. I know from many of your comments that should not be the main factor but I've been weighing myself daily since a teenager - not really able to avoid it. I have cut out nuts and olives and I am writing down what I eat - I know I am not getting hidden carbs because I personally make everything I am eating. I've even cut down vegies thinking maybe i'm eating too much carbs that way. One day last week i was actually down 7/10th of a pound but today I am up 8/10th for a net 1/10th gain. I have taken all the suggestions given me on these forums and really appreciate the support -  I am not having any sweet cravings and daily turn down goodie offerings by my fellow nurses (coworkers) and have had no problem doing so. My daily diet looks like, 2 or 3 boiled eggs for breakfast, a piece of chicken or meat for lunch with whatever leftover veggie from the night before (though i bring snacks to work such as meat roll ups cheese and avocado, i rarely eat them as i usually am not that hungry at this point but in case i get hungry don't want to have to go to the dreaded vending machine which holds no low carb options) Dinner is a piece of meat - usually something from Doug's recipe and a veggie.....any thoughts?

Mixed almond and cashew...didn't realize olives were so high...i've been adding them to everything - going through about a can a day :o Today only 5 total, no nuts I had 3 boiled eggs for breakfast, 3 romaine lettuce leaves for lunch with a slice of ham and cheese on each and 1/2 cup blackberries with a sprinkle of sugar free raspberry Torani syrup. I felt pretty full until 4:00 and I was starving. I tried the Omm with golden flax meal and coconut meal and sweetened with chocolate sugar free torani (tastes too wonderful to be okay to eat) Going to try Doug's southern fried pork chop for dinner to wrap up the day.  Does that sound okay?

I have not been writing down what i eat so maybe portion control is the problem. When I have dinner, i have one piece of meat but I do eat green veggies and olives throughout the day when i'm hungry. I have not had any bread, pasta, starchy vegetable or table sugar. I do have 2 to 3 pieces of sugarfree candy at night with tea and when i feel hungry, I often grab a handful of nuts.  I do often feel like I'm "craving" sweets and when that happens I will have a diet root beer with whipped cream. Hmmm....this is a typical day and does look like a lot of food. Today, I will write down everything I eat. Thanks for all the suggestions and words of encouragement.  :)

This is my 5th day of eating Fat to Skinny and though my blood sugars are better, I haven't lost an ounce. I just turned 54 and maybe my body just wants to hang onto the weight. I am discouraged.

Thanks to all of you for your support and understanding. After two days of this (diet?) my fasting blood sugar was 128. It has been running 180 to 220 for the past month and i have been taking lots of medicine which really isn't helping. Blood pressure is also high. I want to lose about 50 lbs (i am currently 188 and go to the gym 3 times a week - although I ate 1000 calorie diet for two weeks - i  gained 2 lbs. This is the most motivated i have been in a while. I think i will try the squash in place of pasta and maybe tofu cut into strips. I think i already have a mental thing going about the shirataki noodles if they smell the same as the miracle noodles. Thanks again.

I just read the Fat to Skinny book and started yesterday because my diabetes is severly out of control. I watched the video of Doug making pasta primavera. Can anyone tell me more about the shirataki noodles? Years ago I bought something online called miracle noodles and they were so gross i had to throw them away. They had this horrible fishy smell and even after being rinsed i could smell it. Does anyone know if these are the same thing? Thanks for your input.
