For those that like potato soup but don't want the carbs, substitute cauliflower! It taste just like potato soup! Boil your cauliflower in chicken broth. You can use the lower sodium chicken broth of need be. Add heavy whipping cream and butter! I like to use Kerrygold butter that has the herbs already in the butter for extra flavor. You buy it in single sticks. You can then add cheese or bacon or whatever you normally like in Potato soup. It's a great low carb alternative!

I ran a 5k last night and have been doing the low carb eating plan since Tuesday. I was pleasantly surprised at how good I felt running! I had ran a good time for me, considering I haven't ran one since January. They always tell runners they need to "carb "load before long races. I am going to start training for my 10th half marathon soon and I am anxious to see the positive outcomes of this new life style of eating.

I am new to this forum and saw your question. Heavy whipping cream has no carbs.:)
