It was good.  The next time I make it, I plan on using spaghetti squash, instead of eggplant and using 1/2 pound ground sausage and 1/2 pound ground beef.

1/2 large eggplant, peeled and sliced  (6 carbs for 1 and 1/2 cups)
1 pound fried ground beef (0)
1/2 jar Walden Farm Marinara sauce (0)
1 teaspoon Italian seasoning (0)
onion powder to taste (0)
garlic salt to taste (0)
shredded mozzarella cheese (0)

Mix the ground beef, seasonings, and marinara sauce together.  In a small casserole dish, layer the eggplant, the beef mixture, then the cheese.  Add a second layer, ending with the cheese.  I added one slice of pepper jack in the middle between the two layers for extra zest.  I did not measure the cheese, just loosely covered the layer.  Bake at 350 degrees for 30 minutes.

Hi Steve, I have been reading about your non yogurt recipe.  I have searched through recipes in this section, but do not see the recipe.  Would you please help me find it?  I also saw a mention of your soup recipe.  I  cannot find it either.  I am making so much of my food from recipes found in this section.  I would love to add these two recipes to my collection.  Thanks, Steve.

Thank you for the encouragement.  My husband is not even trying this way of eating, but he has lost over 5 pounds just because I am doing it.  Life simply is not fair!  He eats desserts, bread, etc., but because I am not eating those things with him, he doesn't eat it as much.

Now, to what I am eating.  This is a typical day:

breakfast:  2 cups coffee with cream and 1/2 pkg. stevia, 2 boiled eggs with a pat of butter, 1 sausage pattie (0 carbs--no fillers)

lunch:  chicken salad made with 0 carb mayo, olives, 1 slice dill pickle, 1 stalk celery, a little bell pepper, 1 cup sugar free jello

if I have an afternoon snack, I have had a 1 oz. wedge of cheese or a palm full of walnuts

Dinner:  a piece of meat--8 oz. or less, maybe with a slice of cheese on it, a tossed salad with low carb dressing, usually ranch, and sometimes spiniach or grilled eggplant.  I have discovered jicama, thanks to Doug's book and sometimes have it.

I have been having an  Asher no sugar added candy bar at night after dinner. 

I have tried not to snack, otherwise. 

I drink at least 5 glasses of water daily, plus the 2 cups of coffee and 2 glasses of diet soda daily. 

Is there anything I need to do differently?

I have bsen stuck, too.  I lost 6 pounds in the first real week I went on low carb.  I even cut drinking 4 cups of coffee down to 2, bought Stevia, instead of splenda, make my own lunches, bought all low carb dressings--2 carbs or lower, and have read and counted everything.  I rarely go to 20 carbs per day (usually under 15)

I went to Disney World the last week of August.  I ate out almost every meal, but stayed the course the best I could.  When I got home and weighed, I dropped another pound.  Then I have stopped.  I started this the first week of August and now it is the 2nd week in September.  The good news is that I do like this way of eating.  I also notice my clothes are more loose and I like getting curves back. 

I have tried many recipes in this forum.  They have all been great.  I worry some that I am not eating enough vegetables, and I almost never eat fruit.  If I do, it is blueberries.  On the vegetable side, I eat a salad daily==about 1 to 2 cups of lettuce, plus  a few vegetables in that--celery and  pepper.  I have tried to add one more low carb vegetable at night.  I hear if I stay the course, I will lose.  Is that really true?

I am just curious, but could you substitute flax meal for the almond flour?  It would be much less carbs, but it may not taste as good.

I have made chicken salad with olives, no carb mayo, celery, no sugar pickles and a few walnuts.  I do not need a tortilla to eat it and it is easy to carry with me. Kathy

As soon as I read your recipe, I got up and made it.  I used only 2 and 1/2 Apriva (a Kroger brand sweetner).  It was great!

Hi, everyone!  I read Doug's book about 2 weeks ago.  I started on the plan about a week and a half ago.  After 5 days of eating 20 carbs a day, I had not lost one pound.  I wrote Doug and he suggested I try eating 0 carbs for a week.  That was one week and one day ago.  I stuck to it--although I did eat salads and spinach daily with meat, cheese and eggs.  I am 6 pounds lighter--however, it fills more like 10-15 pounds lighter.  My question is when do I add a few more carbs, such as peanut butter, or low carb totillas?  I love this quick [url=http://www.fattoskinny.com/]weight loss[/url] and do not want to stop it, however, I know I will need a little more variety in food choices.  Thanks for your help.  Kathy
