General Discussion / Soluble Fiber and Insoluble Fiber

What is Soluble Fiber and Insoluble Fiber ...can it be subtracted from the Carb count like Dietary Fiber and Fiber are?
I seen them listed on a cereal label indented a bit right under the Dietary Fiber count...

Dinner Recipes / 1/3 lb Steak Taco and Spicy Shredded Jicama
« on: May 27, 2010, 07:58:28 PM »
Tonight we made Steak Taco served with Spicy Shredded Jicama~

Brown 1 1b top sirloin steak sliced in small thin strips in about 3 Tbsp. Peanut oil
use whatever 0 carb spices you want to your taste
I used black pepper, a pinch of salt, a dash each of Mrs. Dash minced onion and table blend , 3 Tbsp. of a product called;
Tuscany Sandwich and Pizza Topping listed as 0 carbs
(it is like a relish of olives, 100% pure soy bean oil, hot peppers, celery, carrots, cauliflower and seasonings)

Scoop some hot steak onto warmed Lo Carb La Tortilla Tortilla ( http://fattoskinny.net/index.php?topic=269.0 )
Sprinkle Sharp Cheddar Cheese
Shredded Lettuce
Hot Sauce (0 carbs)(optional)
A drizzle of Hidden Valley Ranch
We split the meat three ways making it 1/3 lb steak each~~

I shredded the Jicama on a cheese grater (got about 2 1/2 cups from a large sized one)
fried it in the left over oil from the meat
and added same spices above to taste but not the relish~ maybe another time~~
kept on top of it on high heat flipping and mixing it until started to brown

Spooned the Jicama hot on the plate next to the Steak Taco and added a drizzle of Ranch to that also...tasted just like rice to us!
Very delicious!

Sides and Snacks / Yellow Squash and Chicken Casserole
« on: May 25, 2010, 08:49:55 PM »
The kids and I used to always love to eat our Chicken Cass.
made with shell pasta noodles, diced fresh chicken breast and cream of chicken, onions, mushrooms
and then on top we would put a bunch of cheese and top that with....watch out now... crushed potato chips!

so tonight we took the basic recipe of Doug's Macafoney and cheese( http://fattoskinny.net/index.php?topic=54.0 )
using a softer tofu- 2pks, a little more amount of cheese and two different kinds... 1 1/4 cup mozz. cheese and
1 1/4 cup sharp cheddar, a bit more Bertolli Alfredo Sauce- 1/2 cup, and the same 2 eggs, beaten...
plus one medium size yellow squash and 2 nice size chic. breasts(i would guess about 1 lb.) and black pepper
(we did not use salt but you could)...there were a bit of mushrooms in the Alfredo sauce and we decided not to put onions
and of course absolutely no chips on top...just some of the cheddar and you could put Parmesan and/or Ricotta like Doug
suggests for His mac and cheese recipe.

Cut the Yellow Squash in small cubes, set aside..
Cut the chicken into pieces and cook in a pan with a little peanut oil until just starting to brown...
meanwhile cut the tofu into cubes, put them in a big bowl, add the cheese, beaten eggs, Alfredo,(salt) pepper...

Put the squash in the pan with the simmering chicken just before the chicken is going to brown so the squash gets just slightly tender
then drain any excess oil and add the chicken and squash to the bowl of ingredients. Mix lightly together, pour into the baking dish.
We used a glass 9x13 sprayed with Pam cooking spray. Baked 375 degrees for 40-45 mins, until browned and bubbling on top~
yum!

My copy of your wonderful book came the other day and i am soaking in every word!..I join you now in the cleansing for our life as we continue down the narrow path! I am truly blessed for the leading of the Lord in this as I had prayed for Him to show me the way and here you are. I am just started but feel so brand new and alive already...Hosea 6:2....knowledge=life in my Book! Praise my Lord and bless you for following this life assignment to helping others find out the truth of what we are putting in our bodies and how to change it! I am so excited as everything lines up wonderful in the work my Savior has been doing in me through this transition time in my life for the past few years and continuing.... I say open the eyes of my heart Lord and here it is right in front of me now...this is my desire...to be skinny again and feel attractive even just for Jesus...How I delight in our Lord for He cares deeply for each one of us individually and Loves all of us so very much! It is time to come alive and live again! Glory~  gotta get back to reading! Peace until again...have a wonderful day! Cyndi
